Yield Makes about 1 1/4 cups

Number Of Ingredients 6

5-6 jalapeños (depending on heat and personal preference), stemmed, seeded, coarsely chopped
4 garlic cloves, peeled
5 tablespoons fresh lime juice
1 teaspoon kosher salt
1/2 cup neutral vegetable oil (such as grapeseed)
3/4 cup (packed) fresh cilantro leaves with tender stems

Steps:

  • Pulse jalapeños, garlic, lime juice, and salt in a blender or food processor until puréed. With motor running, slowly drizzle in oil until a thick sauce forms. Add cilantro and pulse a few times until chopped and incorporated. Taste and add more jalapeño, if necessary.
  • Do Ahead
  • Sauce can be made up to 3 days in advance and refrigerated.

3/4 cup Sour Cream
3/4 cup Mayonnaise ((if you prefer less mayonnaise, you may use 1 cup of sour cream and 1/2 cup mayonnaise))
1 packet (1 oz Dry Ranch Dip)
1/4 teaspoon Garlic Salt
1/2 cup Cilantro ((tightly packed, may add more for fresh flavor))
3/4 cup Pickled Jalapenos ((plus juice from a jar (may add up to 1 cup depending on heat preference))
1/2 cup Buttermilk ((if you want it to be thinner, add more buttermilk))
2 Tomatillos (optional)
2 teaspoons Fresh Lime Juice (optional)

Steps:

  • In a medium mixing bowl, stir together sour cream, mayonnaise, ranch dip packet, and garlic salt.
  • In blender or food processor, puree cilantro and pickled jalapenos with a little juice. (If using tomatillos, blend with jalapenos and cilantro).
  • Add cilantro jalapeno puree to mayo mixture.
  • Stir in buttermilk until you reach desired consistency. Add fresh lime juice, if using.
  • Refrigerate until ready to serve.

2 cups cilantro leaves and stems (about 1 small bunch )
1/2 cup plain Greek yogurt
1/2 cup sour cream (can sub with Greek Yogurt)
3-4 cloves garlic
1/4 cup lime or lemon juice
1/4 cup olive oil
1/2 teaspoon cumin (optional)
Salt and freshly ground black pepper
1 jalapeno, deseeded (optional )

Steps:

  • Add all the ingredients to the food processor, season with salt and pepper. Blend until smooth and creamy. Taste and adjust salt and pepper to taste.
  • Transfer to a dressing bottle or air-tight container and store in the fridge for up to 1 week.
  • Use on salads, tacos, burrito bowls, as a dipping sauce or on rice and grilled meats.
