Sweetened coffee flavored gelatin is best eaten with a dollop of whipped cream on top. This is a fabulous dessert I once enjoyed at a Japanese restaurant, of all places!

¾ cup white sugar
3 (.25 ounce) envelopes unflavored gelatin powder
3 cups hot brewed coffee
1 ⅓ cups water
1 tablespoon lemon juice
1 cup sweetened whipped cream for garnish

Steps:

  • In a saucepan, stir together the sugar and gelatin. Mix in hot coffee and water. Cook over low heat, stirring frequently until the gelatin and sugar have completely dissolved. Remove from heat, and stir in lemon juice. Pour into a 4 1/2 cup mold. Refrigerate until set, at least 6 hours or overnight. Serve with whipped cream.

2 (1/4 ounce) envelopes unflavored gelatin
1/2 cup sugar
1/2 cup half-and-half

Steps:

  • Place the 1 cup cold coffee in a medium bowl; sprinkle the gelatin over the coffee and let stand for 1 minute.
  • Add the hot coffee, sugar, and half-and-half; stir until well combined.
  • Pour into a 1 quart gelatin mold, large serving bowl, or individual parfait glasses or glass coffee cups.
  • Cover, and chill until firm.
  • Top with whipped cream and a sprinkle of ground cinnamon or shaved chocolate.

Steps:

  • Dissolve gelatin in hot coffee.

  • Add half of the sugar in dissolved gelatin and milk.
  • Beat egg whites.
  • Add the remaining sugar and continue beating until stiff.
  • Set aside.
  • Cook egg yolk mixture over low heat.

1 package (6 ounces) lemon gelatin
2 cups boiling water
2 cups miniature marshmallows
4 large ripe bananas, cut into 1/4-inch slices
1 can (20 ounces) crushed pineapple
2 cups cold water
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup heavy whipping cream
1/2 cup chopped walnuts

Steps:

  • Sprinkle gelatin over boiling water. Remove from the heat; stir until gelatin is completely dissolved, about 5 minutes. Stir in marshmallows until melted. Stir in bananas. Drain pineapple, reserving juice. Add pineapple and cold water to gelatin mixture. , Pour into a 13-in. x 9-in. pan; chill until set. In a small saucepan, combine the sugar and flour. Gradually stir in reserved pineapple juice. Add butter; bring to a boil. Cook and stir for 2 minutes. For the coffee jelly:
1 (1/4-ounce) envelope powdered unflavored gelatin (about 1 tablespoon)
2 cups freshly brewed hot coffee
3 tablespoons sugar
For the whipped cream:
3/4 cup heavy cream
1 teaspoon sugar
1 teaspoon vanilla extract
For the frozen iced coffee:
1 1/2 cups cooled coffee
1/4 cup chocolate syrup
1/4 cup heavy cream
3 tablespoons sugar
1 tablespoon vanilla extract
Special Equipment:
Bubble tea or other wide straws

Steps:

  • Make the coffee jelly:
  • Dissolve gelatin in 3 Tbsp. cool water in a small bowl. Let stand until bloomed, about 2 minutes.
  • Meanwhile, combine hot coffee and sugar in a loaf pan or large resealable container. Gently stir gelatin mixture into coffee until combined (do not stir too vigorously or air bubbles will appear). Chill until firm, about 2 hours.
  • Make the whipped cream:
  • Using an electric mixer on medium-high speed or a whisk, whip cream in a large bowl until soft peaks form. Add sugar and vanilla and whip to medium peaks.
  • Make the frozen iced coffee:
  • Blend coffee, syrup, cream, sugar, vanilla, and 3 cups ice in a blender until smooth.
  • Assemble the drink:
  • Cut coffee jelly into 3/4" cubes. Fill 4 tall glasses with 1/2 cup cubed coffee jelly each. Spoon 3 Tbsp. whipped cream over each and spread to create a solid layer of cream. Divide frozen iced coffee (about 1 cup each) among glasses on top of cream layer. Top with more whipped cream and serve immediately with bubble tea straws.
