CLASSIC VICHYSSOISE SOUP

1 large sweet onion, chopped
2 tablespoons butter
1 tablespoon olive oil
3 large potatoes, peeled and diced
6 large leeks, thoroughly rinsed and sliced (white and light green parts only)
1 quart chicken broth
Salt and pepper to taste
A pinch of nutmeg
1/2 cup heavy cream
Chives to garnish

Steps:

  • In a heavy bottomed pot, or dutch oven, heat the olive oil and the butter, over medium high heat.
  • Sauté the onion until translucent (about 2 minutes).
  • Add the leeks and sauté until soft (about 4-5 min).
  • Add the potatoes and sauté with the onions and leeks for a couple of minutes. Season with salt and pepper.
  • Add the chicken broth and bring to a boil.
  • Lower the heat and simmer for 30 minutes, or until the potatoes are tender.
  • Using an immersion hand blender, puree the soup until smooth. Alternatively, you can work in batches using a regular blender.
  • Add the heavy cream and turn the heat back up to medium. Cook for about 5 minutes so it thickens a little.
  • Taste for seasoning and add more salt and pepper if necessary. Add a pinch of freshly grated nutmeg. Remove from heat.
  • Wait for the soup to cool down to room temperature and chill for at least one hour before serving (overnight is better).
  • Garnish with some chopped chives and serve.

1 tablespoon butter
3 leeks, bulb only, sliced into rings
1 onion, sliced
5 potatoes, peeled and thinly sliced
salt and pepper to taste
¼ teaspoon dried thyme
½ teaspoon dried marjoram
1 bay leaf
5 cups chicken broth
¼ cup heavy whipping cream

Steps:

  • In a large stock pot melt butter over low heat. Add leeks and onion, cover, and cook for 10 minutes.
  • Add potatoes and season with salt and pepper. Add thyme, marjoram, bay leaf and stir well. Cover pot and continue to cook for 12 minutes.
  • Add chicken stock and bring to a boil, reduce heat and cook, partially covered for 30 minutes.
  • Puree soup in blender or food processor and cool.
  • Prior to serving add cream. If you are serving this soup warm you need to reheat the soup slowly so that the cream does not change consistency.

This is a simple take on a classic cold soup that is as delicious to eat as it is to say: Vishi-swazz! It is dead easy to make as well. Just sauté potatoes with some chopped leeks, then simmer them all with stock until tender. Send the mixture through a food processor or blender, let cool, then chill in the refrigerator until ready to serve. Garnish with chopped chives.

4 cups stock
Chopped chives
1/2 cup or more cream

Steps:

  • Melt 2 tablespoons butter in a large pot.
  • Add 3 peeled and cubed potatoes and 3 trimmed and chopped leeks.
  • Cook for about 3 minutes, stirring, until softened.
  • Add 4 cups stock. Boil, cover, lower the heat and simmer until vegetables are tender, about 20 minutes.
  • Purée, then let cool. Stir in 1/2 cup or more cream before serving.

1 1/2 pounds waxy potatoes, peeled, cut into 1-inch cubes
4 medium leeks (about 3 pounds), washed, sliced very thin, use white part only
2 tablespoons unsalted butter
4 cups chicken broth
1 cup heavy cream
Salt, to taste
Freshly ground black pepper, to taste
1 tablespoon finely chopped fresh chives, for garnish

Steps:

  • Gather the ingredients.
  • In a large pot over medium-low heat add the butter.
  • When melted, add the leeks and gently sweat (you don't want them to brown) until they are soft (about 5 minutes).
  • Add the potatoes and chicken broth. Bring to a boil, then lower to a simmer.
  • Simmer until potatoes are soft and easily pierced with a fork (about 20 minutes). Remove from heat and allow to cool for a couple of minutes.
  • Add the mixture to a food processor or blender and puree until smooth. Do this in small batches (no more than half full) as the hot soup creates pressure and can spray out.
  • Return the soup to the pot and whisk in the cream. Stirring all the time, bring the soup to a boil and immediately turn down to a simmer. Simmer for about 5 minutes and remove from heat. If the soup is too thick, add a little water or broth.
  • Taste the soup and season with salt and pepper.
  • Cool quickly to room temperature, cover with plastic, then refrigerate until chilled (preferably overnight).
  • Just before serving, sprinkle chives over the top.

This was created by a French Chef and it is traditionally served cold can be served hot for those in their winter months. I have had this soup (cold) and loved it, but this one is untried by me at this time. Posting for the French leg of ZWT with minor changes for my taste and texture.

2 potatoes
3 large leeks, washed well
3 tablespoons butter
3 cups chicken stock
1 cup milk
1 cup heavy cream (whipping cream)
1 teaspoon salt
1/4 teaspoon freshly-ground white pepper
fresh chives, to garnish

Steps:

  • Peel and thinly slice the potatoes. Remove the tops from the leek and finely chop the white bulbs only.
  • Heat the butter in a large saucepan. Add the potatoes and leek and cook gently, without browning. Add the chicken stock, bring to a boil and then reduce to a simmer. Once the vegetables are tender(about 30 mins) puree them in 2 batches in a blender. Stir in the cream and pureed veggies into a bowl, cover the bowl with plastic wrap and cool the mixture in the refrigerator. If soup is too thick, prior to serving, stir in a bit of water to thin it out.
  • Serve the mixture in chilled dishes and garnish with the chives.

4 tablespoons unsalted butter
1 ½ pounds trimmed leeks, cleaned and thinly cut
2 teaspoons kosher salt, plus more to taste
1 ¼ pounds Yukon Gold potatoes, peeled, cut into eighths
3 cups chicken or vegetable broth, or more as needed to adjust thickness
1 cup heavy cream
½ cup creme fraiche
1 pinch cayenne pepper
Chopped fresh chives for garnish

Steps:

  • Melt butter in soup pot over medium-high heat. Add leeks and salt; cook until leeks begin to wilt. Reduce heat to medium or medium-low and cook until soft and almost pastelike, 30 to 40 minutes.
  • Place potatoes in the pot; add chicken broth. Adjust heat so mixture simmers slowly. Cook until potatoes are soft, about 30 minutes. Puree mixture with an immersion blender or in batches in a blender. Whisk in heavy cream and creme fraiche. Heat over medium heat. Add more salt, if needed, and cayenne pepper. Do not boil.
  • Serve with a drizzle of creme fraiche and a sprinkle of chopped chives.

1 onion, cut into small pieces
1/4-1/2 cup butter
2 quarts low sodium vegetable broth
1/2 cup heavy cream
2 teaspoons chopped chives

Steps:

  • Heat butter in dutch oven or heavy deep pan.
  • Saute the leeks and onion-cook gently, stirring frequently until golden.
  • Add broth and potatoes.
  • Boil gently, uncovered for 30-45 minutes.
  • Let cool and run through a processor until smooth.
  • You may need to do this in two batches.
  • Put mixture in large bowl and refrigerate.
  • Chill for about 20 minutes.
  • When cold stir in cream, chives salt and pepper.
  • If too thick add some milk.
  • Consistency should be somewhat thinner than pan cake batter.
  • Serve cold.

3 small (2 1/2 cups) potatoes, (peeled and sliced)
2 cups chicken stock (or vegetable stock (homemade or good-quality store bought)*)
Salt (to taste)
1 1/2 cups whole milk
1 cup heavy cream
Chives, (snipped (for garnish))

Steps:

  • Trim and clean leeks (see below); thinly slice the white portion.
  • Cut and clean leeks - You need to thoroughly clean a leek because dirt can become trapped in its many layers. Trim the root portion right above the base (cutting too far up the stalk will remove the part that holds the layers together). Slice off the fibrous green tops, leaving only the white-to-light green stalk; discard greens. Cut the leek in half lengthwise, then cut according to your recipe (slice, chop or dice).
  • In a large soup pot over medium heat, saute the leeks, onions, and butter until tender. Stir in potatoes, vegetable or chicken broth, and salt. Increase heat and bring just to a boil. Reduce heat to low, cover, and simmer for 35 to 40 minutes or until potatoes are tender. Remove from heat and let cool 10 to 15 minutes.
  • In a food processor or blender, puree cooled mixture until smooth. The soup can be made 1 to 2 days in advance up until this stage. Refrigerate until ready to finish.
  • When ready to serve, return mixture to soup pot. Stir in milk and cream; cook over low heat, another 10 minutes. Season to taste with salt. NOTE: Thin to desired consistency with the milk. Remove from heat and serve in soup bowls; garnish with chives.
  • This soup can be served either hot or cold.
  • Makes 6 to 8 servings.
