Fruit and Cream Pie II image

A large pie with 2 types of fruit and a sour cream topping. Any combination of fruit fillings may be used in this pie. Apple, blueberry, peach or cherries all work well.

2 cups all-purpose flour
1 teaspoon salt
3 tablespoons milk
1 tablespoon white sugar
⅔ cup vegetable oil
1 (15.25 ounce) can apple pie filling
1 (16 ounce) can blueberry pie filling
1 teaspoon ground cinnamon
2 eggs
1 pint sour cream
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour and salt together. Pour milk, sugar and oil into one measuring cup, and add all at once to flour. Stir until mixed. Pat dough onto the bottom and sides of a 2 quart casserole dish.
  • Spread fruit filling over dough and sprinkle with cinnamon. In a medium bowl, combine eggs, sour cream and vanilla. Mix until smooth and pour over fruit filling. Sprinkle top with cinnamon.
  • Bake in the preheated oven for 45 to 60 minutes, or until topping is set. Allow to cool and store in the refrigerator.

3 cups all-purpose flour
2 teaspoons sugar
1 cup shortening
5 tablespoons fruit juice, from pineapple or oranges in filling
1 (15-ounce) can pineapple tidbits, juice reserved
1 (15-ounce) can mandarin oranges, juice reserved
1 (20-ounce) can cherry pie filling
1 (14-ounce) can whole cranberry sauce
1/2 cup sugar
4 tablespoons cooking tapioca
1/2 teaspoon cinnamon
1 teaspoon lemon juice
2 teaspoons margarine
1/2 cup powdered sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 400 degrees F.
  • For the crust: Place flour and sugar in bowl, cut in shortening. Add fruit juice. Mix until dough forms a ball. Add more juice if necessary. Divide ball into 2 pieces and roll out.
  • For the filling: Combine pineapple, oranges, cherry pie filling, cranberry sauce, sugar, tapioca, cinnamon and lemon juice. Line a 9-inch deep-dish pie plate with half of the rolled out pastry. Add filling, dot with margarine and top with other half of pastry. Make several slits in top crust. Bake 50 to 60 minutes or until crust is golden brown. Remove from oven. Mix together the powdered sugar and lemon and brush glaze on the pie.

1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
or 1 (14 oz.) can Eagle Brand® Low Fat Sweetened Condensed Milk
1/3 cup lemon juice
1 tsp. vanilla extract
1 (9-inch) frozen deep-dish pie crust, baked
Fresh fruit (blueberries, strawberries, bananas*)
Smucker's® Seedless Red Raspberry Jam, or Strawberry Jelly (optional)

Steps:

  • BEAT cream cheese in large bowl with an electric mixer until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Pour into baked pie crust.
  • REFRIGERATE 3 hours or until set. Arrange fruit on top of pie. If coating berries, stir jam or jelly until smooth. Brush berries with jam and serve.
  • *If using bananas, dip in lemon juice before placing on pie to keep them from turning brown. Do not coat with jam.

8 oz cream cheese, softened
2 pie crusts
1 egg
1 tablespoon water, plus extra for crimping

Steps:

  • Preheat oven to 400°F (200°C).
  • Place the pie crust on a cutting board, and cut out circle shapes using the top of a coffee cup. Collect scrap pieces, and roll out again to stamp out more shapes, making 12-14 circles total.
  • Fill half the circles with a tablespoon of the cream cheese, followed by a heaping teaspoon of jam.
  • Using your finger, lightly wet the edges of the cut rounds with water.
  • Cover the tops with the remaining circles, pressing the two dough halves together. Crimp edges with a fork to seal.
  • In a bowl, beat the egg with water. Brush the tops of the pies with the egg wash.
  • Use a small, sharp knife to cut a ventilation hole, or slit into the top of the pies.
  • Arrange the pies on a parchment paper-lined baking sheet.
  • Bake for 15-20 minutes until golden brown. Allow to cool completely before serving.
  • Enjoy!

1 cup sugar
3 tablespoons plus 2 teaspoons cornstarch
1/4 teaspoon salt
2 3/4 cups whole milk
4 large egg yolks
1/8 teaspoon ground cinnamon
2 ounces (4 tablespoons) unsalted butter, softened
2 1/2 ounces (1/2 cup) blueberries
2 1/2 ounces (1/2 cup) raspberries
2 1/2 ounces (1/2 cup) blackberries
Graham Cracker Crust
1 cup Peaches in Syrup

Steps:

  • Whisk sugar, cornstarch, and salt in a medium saucepan; whisk in milk. Cook over medium-high heat, stirring constantly, until bubbling and thick, about 7 minutes total (about 2 minutes after it comes to a boil).
  • Whisk yolks in a medium bowl until combined. Pour in milk mixture in a slow, steady stream, whisking until completely incorporated. Return mixture to the saucepan, and cook over medium heat, stirring constantly, until it returns to a boil, 1 to 2 minutes.
  • Immediately remove from heat, and stir in cinnamon. Add butter, 1 tablespoon at a time, whisking until butter melts before adding another piece. Let custard cool in saucepan on a wire rack, whisking occasionally, for about 10 minutes. Gently fold in berries until evenly distributed.
  • Pour custard into graham cracker crust. Press plastic wrap directly on surface of custard. Refrigerate until custard filling is chilled and firm, at least 4 hours (or overnight).
  • Spoon peaches with syrup onto center of pie, and serve immediately.

1/4 teaspoon salt
3 tablespoons sugar
1 teaspoon cinnamon
1/4 cup margarine or butter, softened
2 tablespoons water
FILLING
1 envelope unflavored gelatin
1/4 cup cold water
1 (16-ounce) container low-fat cottage cheese
1/4 cup sugar
1 cup sliced ripe banana, about 1 medium
1 1/2 cups sliced fresh strawberries
1/2 cup fresh blueberries

Steps:

  • 1. Combine KELLOGG'S ALL-BRAN cereal, flours, salt, the 3 tablespoons sugar and cinnamon. Using pastry blender, cut in margarine until mixture resembles coarse crumbs. Add the 2 tablespoons water, mixing with fork. Mixture will be crumbly. With back of spoon, press mixture evenly and firmly in bottom and on side of 9-inch pie pan to form crust.2. Bake at 400°F about 10 minutes or until lightly browned. Remove from oven. Cool completely.3. In small saucepan, soften gelatin in the 1/4 cup water, about 5 minutes.
