Creamy Garlic Parmesan Salad Dressing with Kefir image

A simple and delicious keto recipe for creamy low carb salad dressing is just what I wanted when I set out to make this recipe. You can substitute an additional teaspoon of garlic powder if you don't have fresh garlic in the house. This recipe yields servings that are just under 2 Tablespoons and just barely has any carbs. Note that if you buy store-bought kefir your carbs will be a little closer to 1 gram per serving. If you don't have Kefir, simply substitute heavy whipping cream.

1/3 cup Mayonnaise (, chosen foods avocado)
2/3 cup Kefir (whole milk)
1/2 cup Parmesan cheese ( grated )
2-3 cloves Garlic (diced or through garlic press)
1/2 tsp Salt
1/2 tsp Ground Black Pepper
2 drops Young Living Black Pepper Vitality Essential Oil
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
2 tbsp Lemon Juice

Steps:

  • Simply whisk or blend all the ingredients except the Parmesan cheese together.
  • Once combined, add the Parmesan cheese. Abracadabra! You now have a your very own Keto Salad Dressing!
  • Store your salad dressing in a sealed container in the refrigerator. The flavors meld overnight and this is even better used the 2nd day!

This stuff is so good and so easy. It makes a big batch and still doesn't last long in my family. I found that the cheap store brand Italian dressing works the best. If the raw garlic is too much for you, you can substitute garlic powder instead.

¼ cup egg substitute (such as Egg Beaters®)
2 teaspoons Dijon mustard
1 clove garlic, minced
½ teaspoon anchovy paste
¼ teaspoon Worcestershire sauce
⅛ teaspoon ground black pepper
salt to taste
1 head romaine lettuce, torn into bite-size pieces
1 cup croutons

Steps:

  • Blend vegetable oil, Parmesan cheese, egg substitute, Dijon mustard, garlic, anchovy paste, Worcestershire sauce, and pepper in a blender or food processor until smooth; season with salt.
  • Drizzle dressing over lettuce in a large mixing bowl; toss to coat. Top salad with croutons.

I needed to come up with a salad dressing tonight and this is what I came up with! This is close to a Caesar Salad dressing, but without the egg and anchovies. It was perfect with a chopped up head of romaine. Feel free to top this with croutons and shredded parmesan. Enjoy!

1 large garlic clove
1/4 teaspoon salt
1/4 cup low-fat mayonnaise (I prefer Hellmann's)
1/4 cup nonfat sour cream
2 tablespoons olive oil
2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon fresh ground black pepper

Steps:

  • Make a garlic paste. To make the paste, place the clove on a cutting board and chop or mince. Sprinkle the salt on the garlic; it will help break down the garlic. Put your knife on the garlic at a 40 degree angle, almost completely flat. Scrape the garlic with the side of your blade until you end up with a paste.
  • Mix all the ingredients in a bowl and chill in the fridge for about an hour.
