1 package (9 oz) refrigerated linguine
1 lb uncooked large shrimp, peeled (tail shells removed), deveined
1/4 cup dry white wine or Progresso™ reduced-sodium chicken broth
1/3 cup reduced-fat garlic-and-herbs spreadable cheese (from 4-oz container)
1/2 cup fat-free (skim) milk
3 cloves garlic, finely chopped
1/2 teaspoon salt
4 1/2 teaspoons chopped fresh or 1 1/2 teaspoons dried oregano leaves
Fresh oregano sprigs, if desired

Steps:

  • In 5- to 6-quart Dutch oven, heat 3 quarts water to boiling; add linguine and shrimp. Cook 3 to 4 minutes or until linguine is tender and shrimp are pink. Drain and return to Dutch oven; cover to keep warm.
  • Meanwhile, in large nonstick skillet, heat wine, cheese, milk, garlic and salt to boiling over medium-high heat. Reduce heat; simmer 2 minutes, stirring constantly, or until slightly thickened.
  • Add linguine and shrimp to sauce in skillet; toss to coat. Stir in chopped oregano just before serving. Garnish with oregano sprigs.

4 garlic cloves, minced
2 tablespoons butter
3 cups chicken broth, or more as needed
½ teaspoon ground black pepper
¼ teaspoon salt
½ pound spaghetti
1 cup grated Parmesan cheese
¾ cup heavy cream
1 ½ tablespoons dried parsley

Steps:

  • Heat olive in a medium pan over medium heat. Add garlic and stir until fragrant, 1 to 2 minutes. Add butter and stir constantly until melted. Pour in chicken broth; add pepper and salt. Bring to a boil. Add spaghetti and cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Add more chicken broth if pasta starts to stick to the pan.

750 g (1½lbs) shrimp/prawns (peeled and deveined)
1 tbsp olive oil
1 tbsp butter
½ onion (finely chopped )
4 garlic cloves (crushed )
200 g (7oz) asparagus (cut into 2cm/1in pieces )
1½ cups frozen peas
1 tsp fresh thyme
1 cup cream
1 tsp lemon zest
1-2 tsp lemon juice
salt and pepper (to taste )
500 g (1lb) pasta (+ 1 cup reserved cooking water )

Steps:

  • Pat the peeled shrimp dry with paper towels then place in a bowl.
  • Add a little oil and season with salt.
  • Heat a large, deep frying pan or skillet over medium-high heat.
  • Once hot, add the shrimp and cook for 1-2 minutes, until they are golden brown and almost cooked through.
  • Remove the shrimp from the pan then add a knob of butter or splash of oil.
  • Add the onion and garlic and cook for a few minutes until soft and fragrant.
  • Add the asparagus and cook for 2 minutes then add the peas and thyme.
  • Cook for another minute then pour in the cream, lemon zest and lemon juice.
  • Season with salt and pepper and bring up to simmer.
  • Cook for 5-6 minutes until the sauce easily coats the back of a spoon.
  • Add cooked pasta and a splash of cooking water along with the cooked shrimp and any of its resting juices.
  • Allow the shrimp to heat through for a minute and serve.

1/4 cup extra virgin olive oil
12 raw jumbo shrimp (peeled & deveined)
4 cloves garlic
1/2 onion
1 red bell pepper
1/2 zucchini
15 oz can diced tomatoes
1 1/2 cups water
1/2 tsp saffron threads
2 cups penne pasta
1 cup Greek yogurt
sea salt
freshly cracked black pepper
handful freshly chopped parsley

Steps:

  • Thinly slice 4 cloves of garlic, roughly chop 1/2 of an onion, cut 1 red bell pepper into 1/2 inch by 1/2 inch squares and cut 1/2 a zucchini into half shapped moons that are a 1/4 inch thick, also reserve 12 jumbo shrimp (peeled & deveined) that have been patted dry with paper towels and seasoned with sea salt & black pepper
  • Heat a large fry pan with a medium-high heat and add in a 1/4 cup of extra virgin olive oil, after 2 minutes add in the shrimps and cook for 45 seconds per side, then remove the shrimps from the pan and transfer to a bowl, cover with foil paper
  • Using the same pan with the same heat, add in the chopped onions and sliced garlics, mix with the olive oil, 1 minute later add in the cut bell pepper and cut zucchini, continue to mix everything with the olive oil, 3 minutes later add in one 15 oz can of diced tomatoes, pinch in 1/2 tsp saffron threads and season with sea salt & black pepper, mix everything together until well combined, then add in a generous 1 1/2 cups of cold water and season the water with a little sea salt, once it comes to a boil add in 2 cups of penne pasta and give it a quick mix so everything is evenly divided
  • About 8 minutes after adding the pasta and most of the water has incorporated into the pasta, add the cooked shrimps back into the pan, place a lid on the pan and lower the fire to a low-medium heat, after simmering for about 4 minutes turn off the heat, remove the lid, add in 1 cup of Greek yogurt at room temperature and season the yogurt with black pepper, gently mix together until everything is well combined, sprinkle with some freshly chopped parsley and serve at once, enjoy!

8 oz (225g) linguine pasta
1 tablespoon olive oil
1 pound (450g) raw shrimp (buy frozen, peeled, and deveined shrimp)
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon Old bay seasoning (optional - or smoked paprika or cajun)
1 tablespoon butter
1 clove garlic (minced)
½ cup heavy cream ((double cream in the UK))
½ cup parmesan (grated)
¼ cup fresh parsley (chopped)

Steps:

  • In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.
  • In a skillet over medium heat, melt the butter, and add olive oil. Cook the shrimp for a minute, then season with salt, pepper, and Old Bay Seasoning or paprika if using.
  • Continue to cook the shrimp until it's pink. Do this in batches if you're worried that you may overcook the shrimp. Remove the shrimp onto a plate and set aside.
  • In the same pan, melt butter and add garlic, cook for 30 seconds or until it's fragrant. Add the heavy cream, and with the spatula deglaze the pan.
  • Add parmesan, let it melt then loosen the sauce with reserved pasta water and allow to simmer for a minute. Taste the sauce and see if more salt and pepper is needed.
  • Toss the pasta with the sauce until it's well coated. Add the shrimp back in to reheat it gently, garnish with freshly chopped parsley and serve.

1 yellow squash (cut crosswise)
1 zucchini (halved lengthwise and then sliced crosswise)
1 cup green beans (trimmed and cut into 1 1/2" lengths)
3/4 lb shrimp (deveiled and peeled)
4 T butter
4 cloves garlic
1/3 cup cream
1/4 cup fat-free half-and-half

Steps:

  • In a pot of boiling, salted water, cook the pasta to al dente, but do not drain.
  • In a large wide skillet., heat 1 T olive oil over medium heat until shimmering. Add vegetables and sauté until browned and slightly softened. 4-5 minutes.
  • Add butter, garlic and shrimp to skillet. Cook for 1-2 minutes, or until garlic is fragrant and lightly golden.
  • Add cream and half-and-half to skillet; simmer until reduced by half.
  • Using kitchen tongs, transfer pasta to skillet, while still coated with cooking water. Toss together until sauce has thinned to a silky texture and coated the pasta and vegetables evenly. [Conversely, you can drain the pasta in a colander, but reserve a cup of the pasta water.] If pasta seems too dry, ladle in the pasta water, 1/4 cup at a time, and toss again.
  • Serve immediately.
