CREAMY LEEK GRATIN WITH BREADCRUMBS AND BACON



Creamy Leek Gratin with Breadcrumbs and Bacon image

This recipe easily doubles. Simply cook leeks in a heavy roasting pan over 2 burners (or in 2 batches in the large skillet) and use a large skillet to cook breadcrumbs and bacon. Bake in a 13- by 9-inch pan.

Yield Serves 6 as a side dish

Number Of Ingredients 8

2 generous pounds leeks
3 tablespoons extra-virgin olive oil
Salt and ground black pepper
½ cup each: heavy cream and grated Gruyere cheese
1 tablespoon each: chopped fresh dill and parsley
4 slices thick-cut bacon, cut into small dice
1 cup fresh bread crumbs from a dense French-style loaf
1 garlic clove, crushed

Steps:

  • Using scissors, clip the leeks' dark outer leaves. Remove root ends, quarter leeks lengthwise, then cut crosswise into 2-inch pieces. Soak leeks in 2 changes of water to remove grit; drain well.
  • Heat 2 tablespoons of the oil in large skillet over medium-high heat. Add leeks; saute, seasoning with salt and pepper, until tender, about 10 minutes. Transfer to medium bowl and mix in cream, cheese, dill, and parsley. Wipe out skillet and return to burner over medium-low heat. Add bacon and fry until crisp, 5 to 7 minutes; transfer to paper towels with a slotted spoon to drain and then stir into leeks. Turn leek mixture into a 9-inch pie plate or similar size pan.
  • Adjust oven rack to lower-middle position and heat oven to 450 degrees. Meanwhile, heat a medium skillet over medium-low heat. Toss remaining oil with breadcrumbs, garlic, and a light sprinkling of salt and pepper. Add to skillet and toast until crisp and golden brown, about 5 minutes. Sprinkle breadcrumbs over leeks. Bake until bubbly and golden, 12 to15 minutes. Serve.

Everyone loves creamy leeks mixed with a strong cheddar and streaky bacon, this is the ultimate indulgent side dish

½ tbsp vegetable oil
6 streaky bacon rashers, cut into strips
75ml white wine
150ml double cream
4 leeks , thinly sliced
½ tsp thyme leaves
40g strong cheddar , diced

Steps:

  • Heat the vegetable oil in a frying pan over a medium-high heat. Fry the bacon for 5 mins, then turn down the heat, add the white wine and simmer to a glaze. Add the double cream and reduce by half. Add the leeks and simmer for 10 mins, then stir in the thyme leaves, cheddar and season.

6 leeks , trimmed and cut into 5cm chunks
½ a 500g tub four-cheese sauce
large handful breadcrumbs
2 tbsp grated parmesan
zest ½ lemon
1 tbsp thyme leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6. Steam the leeks for 10 mins or until just tender, then drain and pat dry. Arrange in an ovenproof dish and spoon over the cheese sauce.
  • Mix the breadcrumbs, cheese, lemon zest and thyme together. Scatter over the leeks and bake for 15-20 mins, until the leeks are cooked and the crumbs have turned golden and crisped up.

1 1/2 ounces unsalted butter
4 leeks, finely sliced
8 shallots, chopped
5 sprigs thyme
2/3 cup white wine
10 tablespoons heavy cream
8 1/2 ounces cheddar cheese, grated
salt and pepper

Steps:

  • Melt the butter in a pan and gently fry the leeks, shallots and thyme for 5-10 minutes until softened. Pour in the white wine and leave to bubble away for 5 minutes.
  • Add the cream, season and simmer gently for 5-6 minutes. Transfer to an ovenproof dish and leave to cool.
  • Preheat the oven to 350°F
  • Cover the dish with the grated cheese and bake in the oven for 20-30 minutes. Serve hot.
