1 pound fresh asparagus, trimmed and cut into 2 inch pieces
2 tablespoons butter
1 clove garlic, minced
1 pint light cream
1 pound linguine pasta
1 lemon, juiced

Steps:

  • Bring a pot of water to a boil. Boil asparagus for 3 to 4 minutes; drain.
  • In a large saucepan melt butter over medium heat. Saute garlic and asparagus for 3 to 4 minutes. Stir in the cream and simmer for 10 minutes.
  • Meanwhile, bring a large pot of water to a boil. Add linguine and cook for 8 to 10 minutes or until al dente; drain and transfer to a serving dish.
  • Stir lemon juice into asparagus mixture; pour mixture over pasta.

water for boiling pasta
1 box (14.5 oz.) Barilla® ProteinPLUS® Farfalle Pasta
1 pound asparagus (, cut into two-inch pieces, ends trimmed and discarded)
1 cup green peas ((frozen or fresh))
1 tablespoon extra virgin olive oil
1 small red onion (, finely diced)
4 garlic cloves (, minced)
1 tablespoon all-purpose whole wheat white flour
1/4 cup low sodium chicken broth
1 cup skim milk
2 ounces room temperature cream cheese
3 tablespoons grated parmesan cheese
salt and fresh ground pepper (, to taste)
Fresh chopped parsley (, for garnish)

Steps:

  • Bring a large pot of water to a boil.
  • Add pasta to boiling water and cook for 7 minutes; add prepared vegetables to the pot and continue to cook for 3 more minutes, or until al dente.
  • Drain.
  • In the meantime prepare the sauce.
  • Heat olive oil in a large skillet over medium heat.
  • Add onions and garlic and cook for 3 minutes, or until tender.
  • In a small mixing bowl combine flour and chicken broth; whisk until thoroughly incorporated.
  • Add broth mixture to the onion mixture in the pan.
  • Whisk in milk; continue to whisk constantly and bring to a boil.
  • Reduce heat and cook for 1 more minute, or until thickened.
  • Stir in the cream cheese; stir until melted.
  • Stir in the grated parmesan cheese and remove from heat.
  • Season with salt and pepper.
  • Add pasta and vegetables to the sauce; stir until completely combined.
  • Serve.

This recipe is inspired by both Jaime Oliver's Creamy Shells and Peas recipe and a local restaurant's version. However, I've never been tempted to make Jaime's; I'm sure it tastes awesome but I decided to tweak it to my heart's content. Mine is very fast to make and very fresh tasting.

5 slices bacon, cut into 1/2-inch pieces
1 pound fresh asparagus, trimmed and cut into 1-inch pieces
½ pound fresh peas
1 onion, chopped
½ lemon, juiced
salt and ground black pepper to taste
1 pound fresh fettuccine pasta
3 tablespoons heavy cream
5 ounces shredded Italian three-cheese blend

Steps:

  • Place bacon in a large saucepan and cook over medium-high heat until bacon is evenly browned, about 10 minutes. Stir occasionally while cooking. Drain the bacon grease from the pan, and transfer bacon to a paper towel-lined plate.
  • Bring a large pot of water to a boil and stir in asparagus and peas; stir occasionally and cook until the vegetables are slightly softened but still bright green, about 5 minutes. Drain and set aside.
  • Cook and stir onion until translucent over medium heat in the same pan as bacon, about 5 minutes; stir in asparagus, peas, and bacon pieces.
  • Squeeze lemon juice over the asparagus mixture; season with salt and black pepper.
  • Bring a large pot of salted water to a boil and stir in the fettuccine; cook, stirring often, until fettuccine are tender, about 5 minutes. Drain well.
  • Stir hot fettuccine into the pan with asparagus mixture over medium-low heat and toss gently to combine.
  • Stir in cream and bring mixture to a simmer.
  • Sprinkle cheese blend over the mixture and allow to stand until the cheese melts, about 5 minutes; stir cheese lightly into the fettuccine and vegetables to serve.

1 pound fresh asparagus
1 1/4 cups nonfat yogurt
1/4 cup reduced-fat sour cream
2 teaspoons Dijon mustard
1/8 teaspoon nutmeg
2 teaspoons cornstarch
8 ounces fresh fusilli or other short pasta
1 ounce Parmigiano Reggiano ( 1/3 cup coarsely grated)
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Bring water to boil in covered pot for the pasta.
  • Wash the asparagus, then trim by breaking at the point where the tough, woody part of the stem meets the tender part. Cut into 1-inch pieces, and steam over hot water for 3 to 7 minutes.
  • Whisk the yogurt and sour cream with the mustard and the nutmeg, and blend a little of this mixture with the cornstarch to make a paste. Then, return cornstarch mixture to sour-cream yogurt.
  • Cook pasta according to package directions.
  • Drain pasta and asparagus, and combine with yogurt-sour cream mixture. Cook over medium heat until mixture is just heated through.
  • Coarsely grate cheese, and add to the pasta-asparagus mixture. Season with salt and pepper.

1 tablespoon unsalted butter
3 leeks, sliced, white parts only
1 1/2 lbs asparagus, trimmed and cut into 2-inch pieces
1 large potato, diced
6 cups vegetable broth
2 cups 1% low-fat milk
1/2 cup light cream
bay leaf
1 pinch salt
1 pinch black pepper

Steps:

  • Blanch asparagus for 3 minutes and cool in ice water. Set aside.
  • Sautee leeks in butter until soft. Add potato, bay leaf and stock. Bring to the boil and cook for 10 minutes or until potato is just soft. Add asparagus, cook for another 10-15 minutes. Remove bay leaf, puree in blender in 2 cup batches and force through mesh strainer if desired.
  • Return soup to heat and gradually add in milk and cream. Add salt and pepper to taste.
  • Serves 6-8.

1 bunch asparagus
142ml tub double cream
2 garlic cloves , peeled, but left whole
50g parmesan , half grated, half shaved
250g tagliatelle

Steps:

  • To prepare the asparagus, cut off and discard the woody ends, then neatly cut the tips away from the stalks. Keep the tips and stalks separate. In a small saucepan bring the cream and garlic to the boil. Take off the heat, remove the garlic, then set the pan aside.
  • Cook the stalks in boiling salted water for about 4-5 mins until tender, drain, then tip into the cream with the grated parmesan. Blitz with a hand blender until smooth.
  • Cook the pasta according to pack instructions, then throw in the tips 2 mins before the end of cooking time. Gently reheat the cream, drain pasta, then tip into a bowl with the cream. Toss, divide into pasta bowls, top with parmesan shavings and serve.

It was one of those evenings where it is 5 pm and I don't know what I'm making for dinner. I knew I wanted meatless and lower fat, but I don't have that many fresh veggies right now. I remembered some frozen asparagus and so, using a recipe in a cookbook as a jumping off point, created this meal. After 6 or 8 comments of "this is really good!" I decided to post it.

8 ounces whole wheat penne, uncooked
1 lb frozen asparagus
1 1/2 teaspoons minced garlic (about 3 cloves)
1 tablespoon whole wheat pastry flour
1 1/4 cups skim milk
3 tablespoons fat free cream cheese
1 (15 ounce) can navy beans (drained)
3/4 cup shredded hard goat cheese (or parmesean)

Steps:

  • Start the water for the pasta. When it is boiling add the penne and cook until done. Drain.
  • Cut the frozen asparagus into 1 inch pieces. Place it, along with 1/4 cup water, in a microwave safe container. Microwave on high for 4 minutes and then put aside.
  • Spray a large pan with nonstick spray. Heat the pan. Add the garlic and cook for a minute.
  • Add the flour and stir constantly for 1 minute. Add the milk and stir constantly for 8 minutes or until the mixture gets bubbly and starts to get thick.
  • Stir in the cream cheese and stir constantly for 2 minutes. Add the goat cheese and stir until melted.
  • Take the pan off the heat. Add the asparagus and drained beans and mix well. Add the cooked pasta and mix.
  • Top with a little pepper and salt.
