My husband and I are big fans of Irish cream, so I wanted to incorporate it into a brownie. I started with my mom's brownie recipe, then added frosting and ganache. This decadent recipe is the result, and we really enjoy them! -Sue Gronholz, Beaver Dam, Wisconsin

2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup butter
6 tablespoons baking cocoa
2 tablespoons canola oil
1/2 teaspoon instant coffee granules
1 cup sugar
2 large eggs, room temperature, beaten
1 teaspoon vanilla extract
FROSTING:
2 cups confectioners' sugar
1/4 cup butter, softened
3 tablespoons Irish cream liqueur
GANACHE TOPPING:
1 cup semisweet chocolate chips
3 tablespoons Irish cream liqueur
2 tablespoons heavy whipping cream
1/2 teaspoon instant coffee granules

Steps:

  • Preheat oven to 350°. Sift together flour, baking powder and salt; set aside. In a small saucepan over low heat, melt butter. Remove from heat; stir in cocoa, oil and instant coffee granules. Cool slightly; stir in sugar and beaten eggs. Gradually add flour mixture and vanilla; mix well. Spread batter into a greased 8-in. square pan; bake until center is set (do not overbake), about 25 minutes. Cool in pan on wire rack., For frosting, whisk together confectioners' sugar and butter (mixture will be lumpy). Gradually whisk in Irish cream liqueur; beat until smooth. Spread over slightly warm brownies. Refrigerate until frosting is set, about 1 hour., Meanwhile, prepare ganache: Combine all ingredients and microwave on high for 1 minute; stir. Microwave 30 seconds longer; stir until smooth. Cool slightly until ganache reaches a spreading consistency. Spread over frosting. Refrigerate until set, 45-60 minutes.

2 tablespoons instant coffee granules
1 cup boiling water
1 cup 2% milk
1/4 teaspoon vanilla extract
1-1/2 cups no-sugar-added reduced-fat vanilla ice cream
4 tablespoons whipped topping
1/4 teaspoon ground cinnamon

Steps:

  • In a small bowl, combine the sugar substitute, cocoa and coffee. Add boiling water; stir until coffee and cocoa are dissolved. Stir in milk and vanilla. Cover and refrigerate for at least 1 hour. , Place the coffee mixture in a blender; add ice cream. Cover and process until smooth. This is an easy traditional fudge that is best made using a candy thermometer. It is a creamy coffee flavored fudge with a hint of chocolate and pecans swirled in. If you like fudge without nuts, simply leave them out.

1 tablespoon instant coffee granules
3 cups white sugar
1 pinch salt
1 cup milk
2 tablespoons light corn syrup
3 tablespoons butter
1 teaspoon vanilla extract
½ cup chopped pecans
1 cup semisweet chocolate chips
½ cup pecan halves, for decoration

Steps:

  • In a medium saucepan, stir together the instant coffee, white sugar and salt. Stir in the milk and corn syrup, and add the butter. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat, and stir in vanilla. Let cool to room temperature, or about 110 degrees F (45 degrees C).
  • When the mixture is cool, beat with a wooden spoon until it loses its gloss. Add nuts and chocolate chips and stir slightly to create a marbled effect. Pour into a buttered 8 inch square baking dish. Arrange pecan halves on the top if desired. Cool completely before cutting into pieces.

1 can sweetened condensed milk (not evaporated milk)
4 tsp powdered instant coffee (dissolved in 1 Tbsp of warm water)
1 tsp vanilla extract
1 cup chopped nuts

Steps:

  • 1. Line 8- or 9-inch square pan with foil.
  • 2. In heavy saucepan over low heat, combine semi-sweet chips, milk chocolate chips, milk, sweetened condensed milk, coffee mixture and vanilla.
  • 3. Cook over low heat, stirring constantly, until chips are melted. Remove from heat; stir in nuts.
  • 4. Spread evenly into prepared pan. Refrigerate 3 hours or until firm.

Steps:

  • HEAT oven to 350 degrees F. Spray 8 x 8-inch pan with no-stick cooking spray.

3 eggs
1 ½ cups white sugar
¼ cup coffee flavored liqueur
2 tablespoons Irish cream liqueur

½ teaspoon baking powder
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In the microwave or in a metal bowl over a pan of simmering water, melt butter and chocolate, stirring frequently until smooth. Remove from heat and set aside to cool.
  • In a large bowl, beat eggs and sugar until light and pale, about 5 minutes. Fold in the chocolate mixture, coffee liqueur, Irish cream liqueur and vodka. Combine the flour and baking powder; stir into the chocolate mixture then fold in walnuts. Spread the batter evenly into a 9x13 inch pan.

Steps:

  • Combine cocoa powder, sugar, cornstarch and malted milk powder in medium saucepan.
  • Gradually stir in milk and cream.
  • Cook whisking constantly, over low heat until thickened, 8 minutes.
