ONION SOUP WITH SHERRY
Another recipe that I have had sitting in my files for over 25 years. This could be made into a French Onion soup quite easily by adding the baguette and cheese floating on top of the soup.

Steps:
- In a large stock pot, saute the onion and garlic in the butter for 10 minutes or until lighly carmelized.
- Add the consumme soup, chicken broth, parsley, bay leaf, worcestershire sauce, sherry, thyme and pepper. Simmer for 30 minutes.

ONION CREAM SOUP

Steps:
- In a large skillet, cook onions in 3 tablespoons butter over medium-low heat until tender. Add the broth, bouillon and pepper; bring to a boil. Remove from the heat., In a large saucepan, melt the remaining butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; add process cheese and onion mixture. Cook and stir until heated through and cheese is melted. Sprinkle with cheddar cheese and parsley.

CARAMELIZED ONION CREAM SOUP
Onion soup with a difference! A wonderful recipe taken from Inn On The Twenty Cookbook by Michael and Anna Olson. Great to serve at a dinner party.

Steps:
- In large saucepan, melt butter over medium-low heat and add onions.
- Using a wooden spoon, stir onions until they soften and begin to carmelize, this will take 20-30 minutes.
- Add garlic and 1/3 of the wine, continue stirring until wine is absorbed, this will deglaze the pan and onions will brown.
- Add remaining wine 1/3 at a time following above procedure until it is absorbed.
- Add sherry, stock, potato and fresh herbs.
- Bring to a simmer and cook until potato is tender.
- Remove from heat, carefully puree using hand blender.
- If you prefer a very smooth soup, strain mixture.
- Return soup to heat, add cream and season to taste.
- Bring to simmer before serving, do NOT allow soup to boil.
- Serve and enjoy!

When you're feeling blue or out of sorts, a nice bowl of soup may be just what you need. This recipe fits the bill!

- Melt butter in heavy large pot over medium heat.
- Add 9onions and saute until very tender and pale golden, about 25 minutes.
- Add garlic, and stir 1 minute.
- Add broth and potato and bring to boil.
- Reduce heat; cover and simmer until potato is very tender, about 25 minutes.
- Cool slightly.
- Working in batches, puree soup in blender.
- Return to pot.
- Stir in cream, sherry and thyme.
- Simmer about 10 minutes.
- Season with salt and pepper.
- Sprinkle with chives.

CREAM OF MUSHROOM SOUP WITH SHERRY

Steps:
- Heat oil in a Dutch oven over medium high heat.
- Add onion, carrot, and celery; saute 6 minutes or until tender.
- Reduce heat to medium; add mushrooms and garlic.
- Cook 7 minutes or until mushrooms are tender, stirring frequently.
- Add water, sage, salt, pepper, and broth; bring to a simmer.
- Cover and simmer for 25 minutes.
- Remove from heat, cool for 5 minutes.
- Place half of mushroom mixture in a blender or food processor; process until smooth.
- Pour pureed soup into a large bowl.
- Repeat procedure with remaining mushroom mixture.
- (NOTE: You can also use a stick blender and puree the soup in the pot.) Return soup to pan.
- Stir in half-and-half and sherry; cook over low heat 5 minutes or until throughly heated, stirring frequently.
- Sprinkle each serving with minced fresh parsley and/or parmesan cheese.

- In a Dutch Oven or large soup pot, melt butter and olive oil over medium heat, add garlic and onions. Stir until they are translucent (about 10 minutes). Add salt, sugar, and 1/4 tsp black pepper, stir and continue to cook until the onions are a golden brown or darker caramelization, if you prefer (35 minutes). You might need to simmer them longer than 35 minutes if you want them darker.
- Add the wine and the sherry and turn the heat up to high. Stir and reduce the liquid until there's almost none (about 10 mins).
- Add the beef broth add the bundled thyme and bay leaves. Bring to a boil and reduce to a simmer for 20-30 minutes. Taste and adjust seasoning, if you want. At this point, you can continue to finish the soup or chill overnight, I find the flavor best the 2nd day.
- Place your rack so that the top of the bowls will be several inches from the heat source so that the cheese doesn't burn (I do the 3rd rack down in my oven). Heat your broiler, on a rimmed baking sheet, place 4-6 heat-safe bowls, ladle the soup into the bowls, place 1 slice of 1 variety of cheese over the soup, place 2 1-inch thick baguette slices on top of the cheese. Place 2 more slices of the other 2 varieties of cheese on top. Cook the soup bowls under the broiler for about 1 minute. Make sure to stay and watch it cook so that you can get the desired amount of crispiness for the cheese and so that it doesn't burn. When the bowls are done, top with more fresh ground black pepper and a thyme sprig for garnish, and enjoy!
