I remember enjoying a salad similar to this when I was a girl. I never got the recipe, but I think I was able to duplicate it pretty well. We enjoy it alongside rice and beans. -Esther Horst, Monterey, Tennessee

6 cups frozen corn, thawed
3 cups chopped seeded tomatoes
1 cup cubed avocado
2/3 cup julienned sweet red pepper
2/3 cup julienned green pepper
1/2 cup chopped onion
DRESSING:
1 cup mayonnaise
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large bowl, combine the corn, tomatoes, avocado, peppers and onion. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Cover and refrigerate for 30 minutes or until chilled.

5 cups corn (cooked and cooled)
1/4 cup thinly sliced celery
1/4 cup finely diced green pepper
1/2 cup chopped tomato (seeds removed)
1 cup mayonnaise
2 tablespoon buttermilk
1 tablespoon granulated sugar
1 tablespoon vinegar
1/4 teaspoon ground black pepper

Steps:

  • Combine corn, celery, green pepper, and tomatoes in a large bowl.
  • In a separate small bowl combine remaining ingredients. Taste and add additional vinegar or sugar as desired.
  • Pour dressing mix over the vegetables and stir to combine.
  • Cover salad and refrigerate at least 2 hours.

2 cups fresh corn off the cob
3 Roma tomatoes
1/2 English cucumber
1/4 cup chopped red onion
dressing:
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon Italian seasoning
2 tablespoons chopped fresh parsley

Steps:

  • Cutting the corn off the cobs: place the cleaned cob in a bowl, standing upright on it's top and sliding the knife down, cut off the kernels.
  • Chop cucumber, tomatoes and onion and place in a big bowl with corn.
  • Mix vinegar, oil and seasoning in a small jar. Shake to mix.
  • Pour over veggies and toss together.
  • Serve right away or refrigerate until ready to serve.

1 shallot, (finely chopped, divided usage)
3 ears of fresh, raw corn, (kernels removed)
2 pickling cucumbers, (diced)
1 small red bell pepper, (diced)
1 handful fresh dill (about 4 smallish sprigs), ( minced)
1/4 cup fresh flat-leaf parsley leaves, (minced)
crumbled Feta cheese, (for garnish)
1/3 cup buttermilk ((low fat is fine))
2/3 cups greek yogurt
1 tablespoon white balsamic vinegar
1 tablespoons chopped shallots
1 small clove garlic, (minced and mashed with a pinch of salt)
2 teaspoons minced fresh dill
2 teaspoons minced fresh cilantro
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt

Steps:

  • In a large bowl toss the corn kernels lightly to separate them, add the shallot and the remaining salad ingredients, tossing again to combine.
  • Add the dressing ingredients to a blender, and blend until smooth. Refrigerate until ready to use.
  • Just before serving, toss the salad with dressing, adding a little bit at a time, until all ingredients are lightly coated with dressing. Garnish with feta cheese. Serve the remaining dressing on the side.

1/2 cup yellow corn
1/2 of small red onion (sliced)
1/4 cup greek yogurt
1/4 cup sour cream
1 large garlic (pressed)
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh dill
1/2 teaspoon ranch salad dressing and seasoning mix (optional)
salt (to taste)
black pepper (to taste)
juice of 1/2 lemon
1 tablespoon fresh dill

Steps:

  • Slice cucumber into thin rounds. Slice the onions. Place the cut cucumbers, sliced onions and corn in a bowl.
  • Make the dressing by whisking in all ingredients listed under "dressing".
  • Pour the dressing over the cut veggies and mix till everything is well combined. Wrap and refrigerate for 1-2 hours.
  • Garnish with some more fresh dill and enjoy the creamy cucumber salad!

  • Shuck the corn and remove as much of the cornsilk as you can. Steam the corn for 5 minutes in a large pot with a steamer basket insert. You can also simply boil the corn in a large pot of salted water. Don't over cook the corn, it only needs 5 minutes.
  • Drain and immediately plunge the corn into ice water. This will stop it from cooking further, and will keep it bright yellow. Let the corn fully cool in the ice water, then let dry on a clean kitchen towel. Remove kernels from the cob and add to a large bowl.
  • Meanwhile whisk together the dressing ingredients, and add salt and pepper to taste. Add the paprika of you like.
  • Add the onion to the bowl with the corn and toss with enough dressing to generously coat everything. Note: you may not use all the dressing. Chill the salad until you are ready to serve. Just before serving, roll and slice the basil leaves into thin ribbons, and add them to the salad. Toss with more dressing if needed.
