CREAMY TOMATO AND BASIL PASTA
This creamy pasta dinner can be made in less than 20 minutes and tastes like it is straight out of your favorite Italian restaurant. Popular with the kids and adults, this dish seems too tasty to be so easy!

- Prepare the pasta per package directions.
- Over medium high heat, melt the butter. Add the garlic and Italian seasoning. Flash cook the garlic, about 1 minute, and then add crushed tomatoes. Add heavy cream and bring to a simmer.
- Add shredded Parmesan cheese, salt, pepper, and garlic powder, then immediately reduce to low heat and stir continuously, until the cheese melts and the sauce is smooth. Then stir in the basil giving it 2-3 minutes to wilt.
- Remove from heat and toss pasta with the sauce. Garnish with additional parmesan and/or fresh basil. Enjoy!

CREAMY TOMATO BASIL PASTA

- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Reserve a cup of pasta water before draining. While the pasta cooks, make the sauce.
- Add the butter, onion and red pepper flakes (if using) to a large skillet over medium-hight heat and cook for about 5-7 minutes until the onion is translucent. Add the tomatoes and garlic and cook for another 2-3 minutes, or until the tomatoes are soft.
- Reduce heat to medium, and pour in the tomato sauce and heavy cream. Season with salt and pepper. Stir and then simmer for about 5 minutes.
- Mix in the parmesan cheese until melted, then add the cooked pasta. Mix until the sauce coats the pasta. Let the pasta simmer in the sauce for a couple minutes. As it simmers, you may need to add pasta water to thin out the sauce. Start with 1/4 cup of pasta water and add more as needed. Stir in the fresh basil and serve immediately.
- Garnish the pasta with freshly grated parmesan cheese and fresh basil.
CREAMY TOMATO BASIL PASTA

- Boil a salted pot of water for the pasta and cook it al dente according to package directions.
- When the pasta is about 10 minutes away from being done, add the butter to a skillet over medium-high heat. Once it melts, make a quick roux by sprinkling the flour in and cook for about 1 minute, stirring fairly often.
- Add in the garlic, followed by the wine (or broth). Let it bubble until it's reduced by half (approx. 30 seconds to 1 minute).
- Whisk in the cream, Dijon mustard, and Italian seasoning until you've got a smooth sauce.
- Stir in the chopped tomatoes. Cook the sauce for another 5 minutes or until the sauce has thickened up a bit.
- Take the skillet off the heat and stir in the parmesan cheese and basil.
- Add the drained pasta to the skillet and toss until coated (I usually add a tablespoon or so of the pasta water to the sauce prior to draining it, especially if it's become a tad too thick). Serve immediately with more freshly grated parmesan if desired.

One of my favorite midweek pasta bakes - my whole family loves it and there is not much prep. Once the pasta bake is in the oven, you can make a salad or set the table and then it's time to eat.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain, reserving 1 cup of cooking water.
- Heat olive oil in a large skillet over medium heat and cook onion until soft and translucent while penne is cooking, about 5 minutes. Add garlic and cook an additional 30 seconds. Stir in tomato sauce and tomato paste and cook until slightly reduced, about 5 minutes. Add cream and Parmesan cheese and season with salt, pepper, and sugar.
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish.
- Stir some pasta cooking water into the sauce and add cooked penne. Remove from heat and stir in cherry tomatoes, 1/2 the mozzarella cheese, and basil. Pour penne mixture into the prepared baking dish and cover with remaining mozzarella cheese.
- Bake in the preheated oven until cheese is melted, about 20 minutes.
