Creamy Alfredo with Ham and Peas image

This easy weeknight dinner comes together in a pinch. It's a great way to use up leftover ham from a holiday meal. Just add a bag of frozen peas and a quick-and-easy homemade alfredo sauce you can make in minutes.

1 pound short pasta (farfalle, penne, etc.)
1 bag of frozen peas
2 cups diced cooked ham
1 batch of homemade Alfredo sauce (or a jar of prepared sauce from the store)
Parmesan cheese for garnish

Steps:

  • Place a large pot of water on the stovetop to boil. Add a hefty pinch of salt. Boil the pasta according to the directions on the package. Open the bag of frozen peas and place them in the bottom of a mesh strainer. Drain the pasta over the peas. The heat from the water and pasta will thaw them perfectly. Meanwhile, dice the cooked ham. Prepare the homemade Alfredo sauce if using. You can get our favorite Alfredo recipe here. Once the sauce is ready, stir in the cooked ham and let it warm through for 1 - 2 minutes. Toss the sauce with the pasta and peas. Serve with parmesan cheese as desired.

2 tablespoons olive oil
4 fresh sage leaves
Kosher salt and ground black pepper
1 pound mixed wild mushrooms, sliced
1 pound fresh fettuccine
1 cup frozen peas (no need to defrost)
1 cup chicken stock
1 clove garlic, grated on a rasp
3 cups grated Pecorino Romano cheese
2 cups heavy cream

Steps:

  • For the pasta: In a large pan with sides and a lid, add the olive oil over medium heat. Add the sage and fry until just crisp, 2 to 3 minutes. Remove to a paper towel-lined plate and season with a tiny pinch of salt.
  • Add the mushrooms to the pan and cook, stirring, until wilted and darkened, 5 to 8 minutes; season with salt and pepper. Add the pasta, peas and chicken stock. Cook, stirring and tossing, until all the liquid is absorbed, 1 to 2 minutes.
  • For the 1-2-3 alfredo sauce: Add the garlic to the pan and toss, then add the cheese and heavy cream. Stir to coat everything, then cover and reduce the heat to low. Cook, covered, until the sauce has combined and thickened slightly, about 8 minutes.
  • Top each portion with a fried sage leaf.

1 pound fusilli con buco or other long pasta
3 tablespoons unsalted butter
1 garlic clove, minced
2 1/2 cups freshly grated parmigiano-reggiano, plus more (optional) for serving
1 cup mascarpone cheese, at room temperature
2 teaspoons grated lemon zest
1 1/2 cups frozen peas, thawed
1 tablespoon freshly squeezed lemon juice
1 teaspoon pink peppercorns, ground

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just under al dente, 10 to 11 minutes. Meanwhile, once you?ve added the pasta to the boiling water, heat a large straight-sided skillet over medium heat. Add the butter to the hot pan. When the butter is melted, add the garlic and cook, stirring often, until soft and fragrant, about 1 minute. Add 1/2 cup of water from the pasta pot and reduce the heat to low.
  • When the pasta is ready, transfer it to the pan with the sauce using tongs; reserve the pot of cooking water. Raise the heat to medium and sprinkle 1 1/2 cups of the parmigiano-reggiano onto the plain pasta. Stir with 2 wooden spoons to combine. Add the mascarpone, lemon zest and 3/4 teaspoon salt. Toss well to coat, adding additional hot pasta water as needed to thin the sauce and to finish cooking the pasta. Add the peas, lemon juice and the remaining 1 cup of parmigiano-reggiano. Toss well to combine, adding pasta water as needed to thin the sauce to your desired consistency; you will probably use close to 1 1/2 cups pasta water total. Sprinkle with the ground pink peppercorns and additional parmigiano-reggiano, if desired.

1 pound large dry sea scallops
¼ teaspoon salt
1 tablespoon extra-virgin olive oil
1 (8 ounce) bottle clam juice
1 cup low-fat milk
3 tablespoons all-purpose flour
¼ teaspoon ground white pepper
⅛ teaspoon salt
3 cups frozen green peas, thawed
¾ cup shredded Romano cheese, divided
⅓ cup chopped fresh chives
½ teaspoon lemon zest
1 teaspoon lemon juice

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the fettuccini at a boil until cooked through yet slightly firm, about 6 minutes; drain.
  • Season the scallops salt.
  • Heat olive oil in a large non-stick skillet over medium-high heat and cook the scallops until golden brown, 2 to 3 minutes per side. Transfer scallops to a plate.
  • Pour the clam juice into the skillet.
  • Whisk together the low-fat milk, flour, white pepper, and 1/8 teaspoon salt until the mixture is smooth; whisk into the clam juice. Reduce heat to low and bring the sauce to a simmer, whisking constantly. Cook until thickened, 2 to 3 minutes.
  • Return the scallops and any accumulated juices to the skillet and stir in the peas until thoroughly combined. Return to a simmer.
  • Gently mix the cooked fettuccine, 1/2 cup of Romano cheese, chives, lemon zest, and lemon juice into the scallops and sauce. Sprinkle with remaining 1/4 cup of Romano cheese to serve.

1 (10 ounce) package fresh mushrooms, sliced

Steps:

  • Cook fettuccine as label directs.

1 cup chicken broth
1 1/2 pounds cauliflower, cored and broken into florets, divided
1/4 cup grated Parmesan (1 ounce), divided

1 tablespoon heavy cream
3/4 pounds fettuccine
1 tablespoon unsalted butter
1 cup frozen peas, thawed

Steps:

  • In a medium pot, bring milk and broth to a rapid simmer. Add cauliflower and cook, covered, until just tender, 7 minutes. Using a slotted spoon, transfer 3 cups cauliflower to a bowl. Cook remaining cauliflower (4 cups), covered, until soft, 6 to 8 minutes longer. Transfer soft cauliflower to a blender with 1 1/2 cups cooking liquid, 2 tablespoons Parmesan, and 1 teaspoon salt. Blend until smooth; pulse in heavy cream.
  • In a large pot of salted boiling water, cook pasta according to package instructions. Reserve 1 cup pasta water. Drain and return pasta to pot.
