- In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F (190 degrees C).
- To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

LASAGNA CASSEROLE - EASY (BUT DELICIOUS!)

Steps:
- Bring a large pot of lightly salted water to a boil on the stovetop.
- Add in your pasta and allow it to cook until it's al dente (cook the pasta for one or two minutes less than it says to on the back of the packet). Once you finish cooking the pasta, drain the water, and keep the pasta ready on your counter.
- Place a large skillet onto a medium heat on the stovetop and throw in your ground beef, chopped onions, and minced garlic. Allow the ingredients to cook on medium heat until the ground beef is browned all over, and the onions have softened up.
- Add in your Italian herbs and seasoning alongside salt and pepper to taste. Stir before pouring over your marinara sauce. Pour in a little water (no more than 2 tbsps) to lighten the sauce.
- Allow the ingredients to simmer in the sauce until it's warmed up (no need to boil), then add your drained pasta to the mix and stir everything together.
- Now you need to prepare a 13 x 9-inch casserole dish and preheat your oven to 350 °F.
- While the oven is preheating, pour your ricotta cheese into a large mixing bowl. Crack your large egg into the bowl and whisk it into the cheese.
- Shred your mozzarella cheese and grate your parmesan. Add half of both kinds of cheese to the mixing bowl. Stir everything together with a light seasoning of pepper.
- Now it's time to layer your lasagna casserole. First, pour half of the sauce, beef, and pasta into the baking dish. Add a smooth layer of your cheese mixture, then add a second layer of sauce, beef, and pasta.
- Add any leftover cheese mixture to the top, cover the pan with tin foil, and then place the lasagna casserole into the oven.
- After 30 min of baking, take the easy lasagna casserole out of the oven, remove the tin foil, and cover the top with the rest of your grated parmesan and shredded mozzarella.
- Place the lasagna back into the oven, this time uncovered. Bake for a further 10 min to give the lasagna a cheesy, yet golden brown finish.
- Leave to cool, sprinkle with fresh basil, and serve up to a hungry dinner table!

MACSAGNA

- Preheat the oven to 375 degrees F.
- Mix the ricotta, Parmesan, sun-dried tomatoes and parsley in a bowl and season with salt and pepper.
- Grease the bottom of a 9-by-14-inch glass baking dish with cooking spray and place one of the Mac and Cheese sheets on the bottom. Smear the ricotta mixture evenly over the top, then evenly scatter the Italian sausage over top of the ricotta. Place the remaining Mac and Cheese sheet on top of that. Cover the top in mozzarella.
- Bake on a lower rack until bubbly and golden brown, about 20 minutes. Let cool for at least 20 minutes.
- Slice into pieces and place on individual serving plates. Ladle some warm marinara over each slice and garnish with fresh parsley and basil.
- Bring a large pot of salted water to a boil. Add the macaroni and cook until VERY al dente. Drain.
- Melt the butter in a medium saucepot over medium heat. Whisk in the flour and stir for a couple of minutes, making sure it's free of lumps and the flour taste is cooked out. Stir in the milk, bring to a simmer and cook over medium low until thickened, about 5 minutes. Stir in the processed cheese and provolone until melted, add the hot sauce and fold in the macaroni. Serve immediately, or follow the instructions below to prep in sheets for MacSagna.
- To prep in sheets for MacSagna: Evenly spread the warm macaroni and cheese in a parchment-lined baking sheet, making sure the parchment is overlapping to make it easier to lift once cooled. Cover with another sheet of parchment and refrigerate until firm, about 1 hour or overnight. Cut the macaroni and cheese sheet into 2 equal-size rectangles.

Prepare this easy lasagne ahead of time and save in the freezer, uncooked, for when you need it during a busy week. Then just bake for an extra 45 mins.

- To make the meat sauce, heat 2 tbsp olive oil in a frying pan and cook 750g lean beef mince in two batches for about 10 mins until browned all over.
- Finely chop 4 slices of prosciutto from a 90g pack, then stir through the meat mixture.
- Pour over 800g passata or half our basic tomato sauce recipe and 200ml hot beef stock. Add a little grated nutmeg, then season.
- Bring up to the boil, then simmer for 30 mins until the sauce looks rich.
- Heat oven to 180C/fan/160C/gas 4 and lightly oil an ovenproof dish (about 30 x 20cm).
- Spoon one third of the meat sauce into the dish, then cover with some fresh lasagne sheets from a 300g pack. Drizzle over roughly 130g ready-made or homemade white sauce.
- Repeat until you have 3 layers of pasta. Cover with the remaining 390g white sauce, making sure you can't see any pasta poking through.
- Scatter 125g torn mozzarella over the top.
- Arrange the rest of the prosciutto on top. Bake for 45 mins until the top is bubbling and lightly browned.
