Steps:

  • Cook potatoes in large pot of boiling salted water until just tender, about 25 minutes. Drain. Return potatoes to pot. Add crème fraîche and butter; mash until smooth. Season with salt and pepper. (Potatoes can be made 2 hours ahead. Let stand at room temperature. Rewarm over low heat, stirring frequently.)

5 pounds Yukon gold potatoes, peeled and quartered, or halved if small
2 cloves garlic
Coarse salt and freshly ground pepper
1 1/2 cups whole milk
1/4 cup heavy cream
6 tablespoons unsalted butter
7 ounces creme fraiche
Freshly ground pepper

Steps:

  • Put potatoes and garlic into a large stockpot; cover with cold water. Add 1 tablespoon salt. Bring to a boil; cook until tender, about 10 minutes. Drain. Press through a potato ricer or a food mill into a large bowl, and cover.
  • Meanwhile, stir milk, cream, butter, and 1 tablespoon salt in a small saucepan. Heat over medium heat until steaming but not boiling. Stir in creme fraiche. Stir into potatoes until just combined; season with pepper. Using a large whisk, whip potatoes until fluffy, 3 to 5 minutes; season with salt.

3 pounds Yukon Gold or russet potatoes, peeled and cut into 2-inch dice
Kosher salt
2 cups whole milk
1 stick unsalted butter, cut into pieces
Freshly ground black pepper
1/2 cup creme fraiche, mascarpone or cilantro or basil pesto, optional

Steps:

  • Put the potatoes in a large saucepan and cover with water by 2 inches. Add 2 tablespoons of kosher salt, bring to a boil and cook until fork tender, about 25 minutes.
  • While the potatoes are cooking, heat the milk in a small saucepan over high heat, bring to a boil, cover and remove from the heat. Keep warm until the potatoes finish cooking.
  • Drain the potatoes in a colander and return them to the saucepan over low heat. Stir the potatoes for about a minute in the saucepan to evaporate any additional water.
  • Put the potatoes into a ricer or food mill set over a large bowl. Stir in the butter then 1 1/2 cups to all of the warm milk until creamy. Stir in creme fraiche, mascarpone or pesto, if desired. Season with salt and pepper.

125ml semi-skimmed milk
1 tbsp butter
4 tbsp crème fraîche

Steps:

  • Bring a large saucepan of water to the boil. Add the potatoes and boil for about 15 mins or until tender. Transfer to a colander and drain well, then return to the pan and set over a very low heat for 2 mins to dry completely.
  • Heat the milk and butter in a small pan, then pour over the potatoes. Remove from the heat, then mash potatoes using an electric hand whisk or potato masher. Tip in the créme fraîche and beat with a wooden spoon until smooth and creamy. Season with pepper and a pinch of salt.

2021-11-03 Instructions. Fill a large pot about ¾ full with water. Stir in about 1 tablespoon of salt (not on ingredients list). Peel the potatoes and slice into even pieces. Add to pot of water. Cover and bring to a boil over medium-high heat. Remove cover and reduce heat to a low simmer.
