FLAN DE QUESO (CREAM CHEESE FLAN)
This is my favorite recipe, learned from my mother. People love it and ask me for the recipe every time they try it, so here it is. I find it tastes better cold.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Fill a large oven-safe pot with water to 1 inch; bring to a boil.
- Place sweetened condensed milk, evaporated milk, eggs, cream cheese, milk, and vanilla extract in a blender; blend until smooth.
- Place sugar in an even layer in a saucepan over medium heat. Cook until edges start to brown, about 1 minute; drag sugar into the center with a spatula once the edges start to brown. Continue cooking, stirring from time to time, until caramel is an even golden brown, 4 to 5 minutes.
- Pour caramel into a 9-inch flan mold or baking pan; swirl so that caramel reaches 1 inch up the sides. Pour condensed milk mixture on top. Place mold in the pot of boiling water.
- Bake flan in the preheated oven until a damp table knife inserted into the center comes out clean, 45 minutes to 1 hour. Remove from oven and let stand for 5 minutes.
- Chill flan in the refrigerator until firm, 2 to 3 hours. Invert onto a serving plate so that caramel is on top.

- Mezcla bien la leche evaporada y la condensada en un taz�n grande. Incorpora los mangos. Refrigera la preparaci�n para m�s tarde.
- Reserva el caramelo del paquete para m�s tarde. Incorpora la leche baja en grasa (2%) al polvo del flan en una cacerola peque�a. Hi�rvela a fuego medio mientras la revuelves constantemente. (La mezcla quedar� poco espesa.) Vi�rtela en un molde para pan de 9x5 pulgs. que hayas rociado con aceite en aerosol. Refrig�rala 1 hora o hasta que se endurezca.
- Hierve 1 taza de agua mientras tanto. Agr�gala a los polvos de las gelatinas en un taz�n mediano; revu�lvelas 2 min. o hasta que se terminen de disolver. Incorpora el resto del agua. Vierte la mezcla de gelatina en un molde cuadrado de 13x9 pulgs. que hayas rociado con aceite en aerosol. Refrig�rala 1 hora o hasta que se endurezca.
- Corta el flan y la gelatina en cubos de 1 pulg. Agr�galos a la preparaci�n de mango justo antes de servir; revu�lvelos para recubrirlos bien.

MANGO DOS LECHES

- Preheat oven to 350 degrees F.
- Whip the eggs, sugar, and salt until tripled in volume. Fold in the flour. Pour the mixture into a parchment lined 9 by 11-inch baking pan and bake for 25 to 30 minutes. Set aside to cool.
- Remove the parchment paper and return the cake to the pan. With a fork, poke holes all over the top of the cake. Combine the condensed milk with the scalded milk, mango puree, almond and vanilla extracts, and pour over the cake. Allow the cake to soak in the liquid for 2 hours. Serve with diced mango marinated in dark rum and brown sugar.

Steps:
- PREHEAT oven to 350°F.
- COMBINE sugar and water over medium-low heat until sugar dissolves in a heavy, small pan. Boil but do not stir, hold the pan's handle and slowly swirl pan to incorporate sugar and water to resemble amber syrup. Do not burn. Approximately 8 minutes.
- IMMEDIATELY pour syrup into 9-inch cake pan. Carefully swirl the cake pan around to cover the entire bottom in syrup. Set aside.
- WHISK eggs, cream cheese, evaporated milk, condensed milk, cinnamon and vanilla in a large mixing bowl.
- POUR into prepared cake pan and cover lightly with aluminum foil. Place covered cake pan in a large roasting pan. Fill roasting pan half way up with boiling water as a bain-marie.
- BAKE for one 1 hour and 25 minutes or until toothpick inserted comes out clean.
- REMOVE baking pan from oven and let cool in the baking pan with water. Remove from water and refrigerate overnight.
- RUN a small knife around flan to loosen. To unmold, place a plate atop the cake pan, hold plate firmly and invert. Shake gently and allow flan to settle onto plate.

- To prepare the caramel, put 1 cup of sugar in a small pot with ¼ cup of water. Bring to a boil over high heat. Stir once and reduce the heat to medium and cook about 5 minutes or until the syrup turns a caramel color.
- Immediately pour an equal amount of the caramel into each ramekin or any oven proof mold you want to use. Swirl each dish to coat the base with the caramel, work fast as the caramel will harden quickly as it cools. Place all the ramekins in a large roasting pan and set aside.
- In a blender mix the mango chunks, heavy cream, eggs and egg yolks for 2 to 3 minutes or until smooth. Add the condensed milk, sugar and vanilla extract and mix for 1 more minute.
