These creole chicken wings are perfect for a quick snack or even a meal. Dip them in the creamy smokey chipotle sauce. Taste the spiciness! BEST EVER!

Number Of Ingredients 13

Preheat oven to 425
16-20 chicken drumettes
4 Tbl. butter
1 Tbl. Creole seasoning mix (I used Tony Chachere's Originial Creole Seasoning. You could substitute Cajun seasoning.)
1/2 tsp. sea salt
1/2 tsp. paprika
2 tsp. dried mixed herbs (your choice~~I used parsley, basil and oregano.)
SAUCE
1/2 cup sour cream
4 Tbl. mayonnaise
1 Tbl. Smoky Chipotle sauce, store bought
1/2 tsp. sea salt
1/2 lime juice

Steps:

  • Put the butter in a small microwavable bowl; heat on high for 15 seconds. Add the creole seasoning, salt and paprika and mix. Wash and dry the drumettes. Spread on a parchment paper lined cookie sheet. Drizzle on the seasoned butter and toss and coat the drumettes well. Bake in a preheated 425 oven for about 20-25 minutes or until golden brown and some crisping forms on the drumettes. Remove, sprinkle on the dried herbs and let rest a few minutes then serve. Sauce: Combine the sour cream mayonnaise, smoky chipotle sauce, salt and lime juice and blend. Refrigerate until ready to serve with the drumettes.

oil (for deep frying)
1 (4 lb) package chicken wings, cut at joints and tips discarded
1 (8 ounce) can tomato sauce
1/2 cup butter or 1/2 cup margarine, melted
1/4 cup hot pepper sauce
1 (12 ounce) jar refrigerated blue cheese dressing
1 (4 1/2 ounce) can baby shrimp, rinsed and chopped
4 green onions, thinly sliced
1 -2 garlic clove, minced
1/4 teaspoon celery seed
1/4 teaspoon dried thyme
1/8-1/4 teaspoon cayenne pepper
1/4 teaspoon ground mustard
1/4 teaspoon pepper
1/4 teaspoon hot pepper sauce

Steps:

  • For dip, combine all dip ingredients. Mix well, cover and chill for 2 hours.
  • For wings, heat oil to 350°F in a skillet or deep fryer. Fry chicken wings, a few at a time, 10 to 12 minutes or until juices run clear. Drain on paper towels.
  • Combine tomato sauce, butter and hot pepper sauce in a large bowl. Add wings; toss to coat and let sit for 15 minutes. Remove wings from sauce; cover and refrigerate for 8 hours or overnight. Place wings in a 13 x 9-inch pan and cover.
  • Bake in a 350°F oven 25 to 30 minutes or until heated through. Uncover and bake 5 minutes longer. Baste wings with pan drippings and serve immediately.

4 tbsp butter
5 tbsp hot sauce such as Tabasco sauce or Crystal
1 tbsp white wine vinegar
900g/2lb - 1kg/2lb 4oz chicken wings
¼ tsp celery salt (optional)
flour , for dusting
sunflower oil , for frying
celery sticks, to serve
150ml buttermilk
150ml soured cream
85g blue cheese , crumbled
1 garlic clove , crushed
¼ tsp sweet paprika

Steps:

  • Slowly melt the butter, hot sauce and vinegar in a medium saucepan, then pour into a large bowl. Mix all the ingredients for the blue cheese dip together with a pinch of salt. Cover and chill until needed.
  • Trim the end off each chicken wing, then cut each in half through the joint. Tip the wings into a bowl. Add the celery salt (if using), seasoning and enough flour so they're all evenly coated.
  • Heat 4 tbsp oil in a large, deep frying pan and add the wings (do this in 2 batches if your pan isn't big enough). Fry them, stirring frequently, until they are cooked through and browned all over, about 10 mins for each batch. As soon as they are cooked, transfer them to the bowl of butter sauce and stir well. Repeat with the second batch. Serve the wings on a platter with any extra buttery sauce poured over and the blue cheese dip and celery sticks on the side

1 package (4 pounds) frozen chicken wingettes, thawed
1 can (8 ounces) tomato sauce
1/2 cup butter, melted
1/4 cup hot pepper sauce

  • In an electric skillet or deep-fat fryer, heat oil to 350°. Fry chicken wings, a few at a time, for 10-12 minutes or until the juices run clear. Drain on paper towels. Combine tomato sauce, butter and hot pepper sauce in a large bowl; add wings and toss to coat. Let stand for 15 minutes. Remove wings from sauce. Cover and refrigerate for 8 hours or overnight. , Place wings in a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 25-30 minutes or until heated through.
