FISH CURRY WITH OKRA



Fish Curry with Okra image

Monkfish, known as "the poor man's lobster" because it has a similar taste and texture to lobster, is known for its inexpensive white, meaty flesh and a slightly sweet, mild taste. Indian essentials like Kashmiri chili, mustard seeds, turmeric and coriander transform this fish into a rich, mouthwatering curry you'll want to make over and over again.

1/4 cup vegetable oil
1/2 teaspoon brown mustard seeds
2 onions, thinly sliced
Kosher salt
1 tablespoon grated fresh ginger
4 cloves garlic, grated
1/4 cup shredded unsweetened coconut
1 teaspoon ground coriander
1 teaspoon Kashmiri chili powder or hot paprika
1/2 teaspoon ground turmeric
3 small plum tomatoes, diced
2 pounds monkfish fillets, cut into 2-inch chunks
Freshly ground pepper
12 pieces okra, halved lengthwise
Cooked basmati rice, for serving
Chopped fresh cilantro, for topping

Steps:

  • Heat the vegetable oil in a large Dutch oven over medium-high heat. Stir in the mustard seeds and toast until they pop, 10 seconds.
  • Add the onions, season with 1/2 teaspoon salt and cook, stirring, until soft and browned, 8 to 10 minutes. Add the ginger and garlic; cook, stirring, until golden, about 2 minutes. Add the coconut, coriander, chili powder and turmeric; cook, stirring and scraping the pan, until toasted, about 30 seconds.
  • Add the tomatoes to the pot. Cook, stirring, until they break down, 4 to 5 minutes. Season the monkfish with salt and pepper. Add the fish and okra to the pot, stir in 1 1/4 cups water and bring to a simmer over medium-low heat. Cover and simmer until the fish is cooked through and the curry has thickened, 13 to 15 minutes; season with salt. Serve with rice and top with cilantro.

1 1/2 pounds skinless mahi mahi fillets, cut into 1 1/2-inch pieces
2 tablespoons Thai green curry paste
Finely grated zest of 1 lime
1 tablespoon vegetable oil
1 large onion, thinly sliced
2 red bell peppers, thinly sliced
1 jalapeno pepper, thinly sliced (remove seeds for less heat)
Kosher salt
1 20-ounce package cubed peeled butternut squash (about 4 cups)
1 cup light coconut milk (about half of a 14-ounce can)
1 cup chopped fresh cilantro
3 cups cooked rice

Steps:

  • Rub the fish with 1 tablespoon curry paste and the lime zest in a bowl. Cover and refrigerate while you cook the vegetables.
  • Heat the vegetable oil in a large saucepan over medium-high heat. Add the onion, bell peppers, half of the jalapeno and a pinch of salt. Cook, stirring, until the vegetables are just crisp-tender, about 2 minutes. Add the remaining 1 tablespoon curry paste and cook, stirring, until lightly browned, about 1 minute.
  • Add the squash, coconut milk and 2 cups water to the saucepan and stir to combine. Bring to a boil, then cover, reduce the heat to medium low and simmer until the squash is almost tender, 12 to 15 minutes. Add the fish, cover and simmer until just opaque, about 8 minutes. Stir in the cilantro and season with salt. Serve over rice; top with the remaining jalapeno.

SEAFOOD CREOLE



Seafood Creole image

This is a spicy sauce similar to etouffee. By adding seafood, it becomes Seafood Creole. Due to the seasoning mix, it is quite spicy. This can be controlled by adjusting the amount of the peppers. I like mine full strength, but for the wife I have to cut the peppers down to 1/8 teaspoon each. This recipe can easily be doubled or quadrupled for large affairs. It goes great with rice, garlic bread, a green salad and a good white wine, such as white Merlot, white Cabernet, Johannisburg Riesling, or Gewurztraminer. Use your favorite firm, white fish fillets in this recipe. Canned diced tomatoes can be used in place of chopping fresh tomatoes.

Steps:

  • Mix together oregano, salt, white pepper, black pepper, cayenne pepper, thyme, and basil in a small bowl; set aside.
  • Melt butter in a large Dutch oven over medium heat; stir in tomato, onion, celery, green bell pepper, and garlic. Cook and stir until the onion is translucent, about 5 minutes.
  • Stir in chicken stock, tomato sauce, sugar, hot pepper sauce, and bay leaves. Reduce heat to low and bring sauce to a simmer. Stir in seasoning mix and simmer until the flavors have blended, about 20 minutes.
  • Gently stir in rock shrimp, bay scallops, and haddock; bring sauce back to a simmer and cook until the shellfish and fish are opaque, about 20 more minutes. Remove bay leaves to serve.

A very spicy dish. This recipe is inspired by my mother's Bengali fish recipe she used to make in India.

2 teaspoons Dijon mustard
1 teaspoon ground black pepper
½ teaspoon salt
2 tablespoons canola oil
4 white fish fillets
1 onion, coarsely chopped
4 cloves garlic, roughly chopped
1 (1 inch) piece fresh ginger root, peeled and chopped
5 cashew halves
1 tablespoon canola oil
2 teaspoons cayenne pepper, or to taste
½ teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon white sugar
½ cup chopped tomato
¼ cup vegetable broth
¼ cup chopped fresh cilantro

Steps:

  • Mix the mustard, pepper, 1/2 teaspoon salt, and 2 tablespoons of canola oil in a shallow bowl. Add the fish fillets, turning to coat. Marinate the fish in the refrigerator for 30 minutes.
  • Combine the onion, garlic, ginger, and cashews in a blender or food processor and pulse until the mixture forms a paste.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon of canola oil in a skillet over medium-low heat. Stir in the prepared paste; cook and stir for a minute or two. Add the cayenne pepper, turmeric, cumin, coriander, 1 teaspoon salt, and sugar. Cook and stir for an additional five minutes. Stir in the chopped tomato and vegetable broth.
  • Arrange the fish fillets in a baking dish, discarding any extra marinade. Top the fish with the sauce, cover the baking dish, and bake in the preheated oven until the fish flakes easily with a fork, about 30 minutes. Garnish with chopped cilantro.

This is the favorite fish curry dish from the eastern part of India. I learned this recipe from my mother-in-law, who is a master in cooking this recipe. I have to practice it 3-4 times to achieve perfection. Try this curry with plain steamed rice--you'll love it.

2 lbs fish fillets (best with tilapia)
2 tablespoons garlic paste
2 inches gingerroot
5 teaspoons mustard seeds
4 bay leaves
1/2 tablespoon coriander powder
5 medium shallots or 2 medium onions
7 red chilies
1 tablespoon cumin seed
3 teaspoons turmeric powder
3 tablespoons salt
2 big tomatoes
oil, to deep fry fish
3 cups water

Steps:

  • In a grinder grind the onions, ginger, 2 bay leaves, red chili, mustard seeds, cumin seed all together.
  • Preserve some cut pieces 1 cup) of onion.
  • Cut small pieces of tomatoes.
  • Make small pieces of fish fillets, about 3 inches in length.
  • Clean them properly if you are using the whole fish and make it into small pieces.
  • Take a big plate, put the fish in it and sprinkle 2 teaspoon of salt, two teaspoon of turmeric powder and the garlic paste.
  • Mix all of them properly.
  • Allow to marinate for 1/2 hour.
  • Take a pan or a wok (preferable), heat it and put oil to deep fry the fish.
  • Once the oil is much hotter, fry the fish, 3-4 pieces at a time, 3-4 minutes on each side.
  • Keep all of them in a separate plate.
  • When all the pieces are fried, clean all the black residues from the oil in the wok with the spatula and put 2 tablespoon of fresh oil in the it.
  • Then put a pinch of cumin seed, a pinch of mustard seed, 2 red chili, 2 bay leaves, a pinch of aniseed (all together is called panch-phoran) and allow them to splutter.
  • Then put the cut onion pieces and allow it to just a little brown.
  • Then put all the ground paste,tomatoes,left over turmeric powder and salt to taste.
  • Keep stirring it until the paste becomes a little brown (it takes around 10 minutes).
  • You can also identify it by looking at the wok, that the paste will start leaving the oil and paste will now no more stick on the wok.
  • The paste is now perfectly fried.
  • Now pour 3 cups of water to it, or as much thick gravy you want.
  • Once the gravy comes to boil, start dropping the fried fish pieces and allow to boil for 15 minutes.
  • Switch off the gas.
  • Use coriander leaf for garnishing.
  • This dish should be served with fresh steamed rice and squeeze some lime some juice on top.

COCONUT FISH CURRY

Lightly spicy, this is a wonderful creamy fish curry. Try with whatever white fish you like. Serve with brown rice.

½ teaspoon ground ginger
¼ teaspoon ground turmeric
¼ teaspoon olive oil

3 ½ ounces cod, cut into bite-size pieces
1 large tomato, diced

Steps:

  • Combine curry powder, ground ginger, and ground turmeric in a skillet; toast the spices over medium heat until browned, about 5 minutes. Pour olive oil and garlic into the spice mixture and stir to make a paste.
  • Stir onion into the spice mixture; cook and stir until the onion is tender, 5 to 7 minutes. Stir about half the coconut milk and half the water into the onion mixture; simmer together for 5 minutes. Add cod to the mixture; continue cooking until the fish is firm, about 5 minutes. Add tomato, remaining coconut milk, and remaining water to the skillet; cook until the tomato is softened, about 5 minutes.

EASY FISH CREOLE



Easy Fish Creole image

This recipe has the trinity in it that is what makes it creole cooking. After reading Derf's review, I set out to find what other Creole recipes used for spices. I found most used garlic and either chili powder, red pepper or Tabasco sauce. So you might want to add 2 cloves of garlic and one of the other pepper spices to put a kick into this recipe. Let me know which pepper and how much you use.

1/2 cup chopped green bell pepper

5 leek leaves
1-ounce vegetable oil
6 ounces julienne tomatoes
White wine
1 cup fish stock
6 ounces tomato juice
2 pounds tomato paste

Steps:

  • Roll flying fish with pineapple, mango, and coconut. Tie with leek leaves. Heat pan add vegetable oil and saute julienne of vegetables and add white wine, fish stock and tomato juice. Bring to the boil; add tomato paste and place fish into liquid until cooked. Serve using the liquid as the sauce.;

1/2 kg kingfish
100 g onions
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
100 g low-fat plain yogurt

3 tablespoons oil or 3 tablespoons ghee
2 tablespoons fresh coriander leaves, chopped,for garnishing

Steps:

  • Heat oil in a pot.
  • Add onions and saute until brown.
  • Grind the onions.
  • Put the ground onions in a large mixing bowl.
  • Add yoghurt to the ground onions.
  • Add fish pieces to this, mix well and marinate the fish in this mixture for 2 hours.
  • In the same oil which was used to saute the onions, add the methi seeds.
  • Allow to sizzle a bit, then remove them once they turn brown.
  • Add ginger-garlic paste to the same oil.
  • Saute until the raw smell is gone.
  • Add red chilli and turmeric powders.
  • Mix well and continue to stir-fry for a few minutes.
  • Add the marinated fish pieces.
  • Add half a glass of water and mix well.
  • Keep on low flame for 10 minutes.
  • Garnish with corriander leaves.
  • Serve hot with chappatis.
