CREOLE SWEET POTATOES, CORN AND SQUASH BAKE
My latest take on a favorite Faye Levy recipe. The recipe is metric, but you can use the Zaar magic button to convert to Imperial.

Steps:
- Preheat the oven to 190°C.
- Add the sweet potatoes to a saucepan of boiling water.
- Simmer uncovered over medium heat for 6 minutes.
- Add the squashes and simmer for 4 minutes, or until both vegetables are nearly tender but not too soft.
- Drain and rinse the vegetables with cold water.
- Cut squashes and sweet potatoes into 2 centimeter dice (a little smaller than 1 inch).
- Heat the oil in a medium saute pan.
- Add the onion, pepper and celery and cook over medium low heat, stirring, until onion begins to brown, about 7 minutes.
- Add garlic and cook for another 1/2 minute.
- Add the tomatoes, bay leaf, paprika, salt and pepper and bring to a boil.
- Cook uncovered over medium heat, stirring often, for 10 minutes or until the sauce is thick.
- Discard the bay leaf.
- Add the oregano, thyme and hot sauce to taste.
- Add the squash, corn and sweet potatoes to the sauce.
- Season to taste with salt and pepper.
- Spoon into a 2-liter casserole.
- Cover and bake for 25 to 30 minutes or until the vegetables are tender.

BAKED SPICED SWEET POTATOES AND PEARS (CREOLE)
This recipe was found on the internet at gumbopages.com. The original recipe called for peeling the sweet potatoes, but I much prefer them unpeeled.

Steps:
- Preheat oven to 400 degrees F & butter a 13"x9" glass baking dish.
- In a small saucepan over medium-low heat, stir butter, cane syrup, pear nectar, vanilla, Bourbon & OJ until butter melts.
- Increase heat & boil until mixture is slightly reduced, about 5 minutes, then remove from heat & whisk in the cinnamon, nutmeg & salt.
- Arrange1/3 of the potato slices in the prepared baking dish, then top with half of the pear slices, & then with another 1/3 of the potato slices. Finally, arrange the remaining slices of potato & pear on top & on their edge, alternating potato & pear, & overlapping slightly.
- Sprinkle lightly with salt, then pour the cane syrup mixture over everything.
- Cover the dish tightly with aluminum foil & bake until sweet potatoes are nearly tender, about 1 hour.
- Uncover & bake until completely tender, basting occasionally with the syrup, for about 20-30 minutes longer, checking with a toothpick or knife point to make sure the potatoes are completely tender.
- Spoon the syrup over the sweet potatoes & pears one last time & serve hot.

CORNBREAD STUFFING WITH SWEET POTATOES AND SQUASH

- Heat oven to 375°F. Spray 13x9- inch (3-quart) glass baking dish with cooking spray.
- In large, deep skillet, heat oil over medium-high heat. Cook seasoning blend and garlic in oil 2 minutes, stirring frequently, until vegetables are tender. Stir in squash, sweet potatoes, apple, melted butter, brown sugar, chopped sage, 1 teaspoon of the Creole seasoning and the water. Reduce heat to medium. Cover; cook 15 minutes, stirring occasionally, until squash and potatoes are tender. Stir in 1 3/4 cups of the broth. Remove from heat; cool 15 minutes.
- In medium bowl, stir together stuffing mix, egg, and remaining 1 teaspoon Creole seasoning and 1 3/4 cups broth. Fold into squash mixture. Spoon into baking dish. Cover with foil.
- Bake 25 minutes. Sprinkle with pecans; bake uncovered 20 minutes or until thoroughly heated and pecans are toasted. Let stand 10 minutes before serving. Garnish with sage leaves.

SEPHARDIC SWEET POTATOES AND SQUASH
I was looking through (forgive me) another recipe site, and found this. I have been making it for the last four Thanksgivings. It has become a "traditional" Thanksgiving side dish (and for any other meal). I made it the first year and brought it to my daughter-in-law's house, now three years later, she is making it for Thanksgiving.It can be used with chicken and pot roast too) The peeling & cutting of the potatoes and squash is a little bit of a bother, but it's worth the work. You will love this dish! I usually double the ingredients so we will have leftovers.

Steps:
- Preheat oven to 375°F.
- Peel the squash and sweet potatoes.
- Cut both the sweet potatoes and the squash into 1 inch cubes. Place most of the oil in the pan (I use a 9-inch13"), and add the sweet potatoes and the squash and bake, covered with aluminum foil for about 20 minutes.
- After 20 minutes is up, remove dish from oven and remove foil.
- Add cranberries (I use more than 1/4 cup).
- Sprinkle the sugar and cinnamon on top and dribble with remaining oil (again, I use a little more of the sugar, cinnamon and oil).
- Bake uncovered at 375°F for 30-35 minutes, or until well browned.

- Preheat oven to 350°. In a large saucepan, saute onion in butter until tender. Stir in flour, garlic, salt and pepper until blended; gradually add milk. Stir in potatoes. Bring to a boil. Reduce heat; cook and stir until potatoes are crisp-tender, 8-10 minutes., Stir in corn and cream-style corn. - Preheat oven to 375°F with racks in upper and lower thirds.
- Toss sweet potatoes and squash with butter, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Divide between two 17-by 11-inch 4-sided sheet pans. Bake, switching position of pans halfway through, 25 minutes.
