Steps:

  • Combine 8 ounces each shredded cheddar and pepper jack, one 4-ounce jar diced pimientos (plus 2 tablespoons juice), 1/2 diced red onion, 1 cup mayonnaise, 1 to 2 minced garlic cloves, 1 teaspoon hot smoked paprika and 1/2 teaspoon ground celery seeds with a rubber spatula. Season with salt and pepper. Refrigerate until ready to serve.

5 cups tortilla chips
2 cups shredded sharp cheddar cheese (8 oz)
1 jar (2 oz) diced pimiento peppers, drained and patted dry
3 tablespoons from 1 jar (12 oz) Old El Paso™ Hot Jalapeño Slices
4 green onions, sliced, white and green parts separated
1 cup shredded Colby-Jack cheese blend (4 oz)
2 tablespoons mayonnaise
1 teaspoon lemon juice
1 tablespoon Sriracha hot pepper sauce

Steps:

  • Heat oven to 400°F. Line large rimmed sheet pan with parchment paper or foil; if using foil, spray with cooking spray. Spread tortilla chips evenly in a single layer on pan.
  • Arrange sharp cheddar cheese on chips. Top with pimiento peppers, jalapeños and green onion whites, followed by Colby-Jack cheese blend. Bake 6 to 8 minutes or until cheese is melted.
  • Meanwhile, in small bowl, stir together mayonnaise and lemon juice. Drizzle over cooked nachos. Drizzle Sriracha sauce over nachos. Top with green onion greens.

1 1/2 cups (packed) finely grated extra-sharp yellow cheddar cheese (about 6 ounces)
1 1/2 cups (packed) finely grated extra-sharp white cheddar cheese (about 6 ounces)
1 cup mayonnaise
1/4 cup diced drained pimiento peppers from jar, roasted red peppers, or piquillo peppers (about 2 1/2 ounces)
1/4 teaspoon cayenne pepper
Celery sticks
Ritz crackers
Sliced white bread (optional)

Steps:

  • Mix first 5 ingredients in medium bowl. Mash with fork to blend well. Season with salt and pepper. Cover; chill until cold, at least 2 hours and up to 3 days. Serve pimiento cheese with celery sticks and Ritz crackers, or, if desired, spread between 2 slices of white bread and cut diagonally to make 4 sandwich triangles.

One 4-ounce jar chopped pimientos, drained
1 cup mayonnaise
1 garlic clove, minced
1 tablespoon lemon juice
1 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground red pepper
2 cups grated Cheddar (8 ounces)
2 cups grated Colby (8 ounces)

Steps:

  • Combine pimientos, mayonnaise, garlic, lemon juice, dry mustard, Worcestershire sauce, and red pepper in a medium bowl. Beat with a wooden spoon or an electric mixer at medium speed until blended.
  • Add grated cheese and beat until the consistency of cottage cheese.

1 egg, beaten
2 tablespoons sugar
1 tablespoon water
1/4 cup vinegar
2 cups cheddar cheese, grated
1/4 cup pimiento, diced
1 pinch cayenne
1 dash Worcestershire sauce
4 drops hot sauce
1 pinch garlic

Steps:

  • In small saucepan, beat egg and sugar until well blended.
  • Stir in vinegar and water.
  • Cook over low heat until thick. Stir with a wire whisk. Usually takes about 5 minutes. You'll know when it is ready as it will be frothy and a lemon yellow colour.
  • Set aside until cool.
  • In medium bowl, mix together cheese, pimientos and sauce.
  • Stir in cayenne, Worcestershire sauce, hot sauce and garlic. Adjust to taste.
  • Chill until ready to use.
