1 lb crabmeat, special
1 egg
3 tablespoons self-rising flour
1 tablespoon prepared mustard
2 tablespoons mayonnaise
1 tablespoon Old Bay Seasoning
3 drops hot pepper sauce

Steps:

  • Put crabmeat in a bowl and gently sort through it for pieces of shell with a 2-pronged fork.
  • Remove shell.
  • Add all ingredients and mix gently until thoroughly blended.
  • Form into balls.
  • Deep fry until golden.
  • Yields about 30 balls.

12 ounces crabmeat, fresh or canned
1/3 cup fine soft bread crumbs
2 tablespoons dry sherry
1 teaspoon chopped chives
1 teaspoon dried mustard
1/4 teaspoon salt
10 slices bacon, cut into thirds

Steps:

  • Remove any shell or cartilage from crab meat and chop into small pieces.
  • Combine all ingredients except bacon, mix thoroughly.
  • Chill 30 minutes.
  • Portion crab mixture with a tablespoon, shape into small rolls.
  • Wrap bacon around crab rolls.
  • Secure with toothpicks.
  • Broil about 4 inches from heating element 6-7 minutes or until bacon is crisp Turn carefully, broil 4-5 minutes longer until bacon is crisp.

1/3 cup fine soft bread crumbs
2 tablespoons dry sherry
1 teaspoon chives, chopped
1 teaspoon dry mustard
1/4 teaspoon salt
10 slices bacon, cut in thirds
4 tablespoons mayonnaise

Steps:

  • Remove cartilage from crab meat. Combine all ingredients except bacon.
  • Mix thoroughly.
  • Chill for 30 minutes.
  • Portion crab mixture with a tablespoon.
  • Shape into small rolls.
  • Wrap bacon around crab rolls and secure with a toothpick.
  • Place crab rolls on a broiler pan.
  • Broil about 4 inches from source of heat for 8 to 10 minutes or until bacon is crisp.
  • Turn carefully.
  • Broil 4 to 5 minutes longer.
  • Makes 30 hors d'oeuvres.
