- In a large bowl, combine all the ingredients for the soup. Refrigerate for 1 hour. Transfer to a food processor and pulse until almost pureed, leaving a little texture. Season with salt and pepper. Return to bowl, cover, and refrigerate for 1 hour before serving. Prepare topping mixture. In a medium bowl, combine all the ingredients until well blended. Season with salt and pepper. Cover and refrigerate until needed. To serve: Ladle 10 to 12 ounces into chilled soup plates. On a large serving spoon, place 1/4 cup of the topping mixture, top with 2 shrimp, and garnish with a sprig of cilantro. Carefully place in the center of the plate of soup. Place a wedge of lime on the rim of the plate.
GAZPACHO
This is my gram's recipe for the traditional Spanish "salad soup". Good homegrown tomatoes are a must for this recipe. She also blends it quite fine--not totally puréed, but no large chunks either.

- Peel cucumbers and cut in chunks.
- Seed peppers and cut in chunks.
- Combine tomatoes, cucumbers, peppers, and scallions in batches in a blender or food processor. Blend, not until pureed, but until there are no large chunks.
- Add tomato juice, vinegar, pepper, and Tabasco sauce.
- Chill well.
SUMMER WATERMELON GAZPACHO
This twist on classic gazpacho will be a welcome, refreshing sight on those hot summer days!

- Combine watermelon, tomatoes, red pepper, cucumber, shallot, lime juice, vinegar, salt, and pepper in a high-powered blender. Blend until smooth, 20 to 30 seconds. Refrigerate for at least 1 hour to allow flavors to meld and soup to chill.
- Stir gazpacho before serving, as it has a tendency to separate, and divide between 4 bowls. Top with feta cheese and cilantro.

GAZPACHO WITH SHRIMP AND MUSSELS
A little Madeira in this elegant gazpacho draws out the natural sweetness of shellfish. Shrimp stock, strained tomatoes, and vinegar form the flavorful base.

- Working in batches, pulse tomatoes and salt in a food processor until coarsely chopped. Transfer mixture to a cheesecloth-lined sieve set over a stockpot. Let strain in refrigerator for at least 6 hours (or up to overnight).
- Bring shrimp shells and 3 cups water to a boil in a saucepan. Reduce heat, and let simmer, partially covered, for 30 minutes. Strain through a fine sieve into a heatproof bowl; discard shells. Refrigerate until chilled, at least 1 hour (or up to 1 day).
- Extract remaining juice from tomatoes by gently squeezing cheesecloth, being careful not to extract solids. Add shrimp stock and vinegars to juice. Refrigerate until chilled, at least 1 hour (or up to 1 day).
- Bring Madeira and remaining cup water to a simmer in a 12-inch skillet over medium-high heat. Add shrimp, mussels, and garlic. Cover, and let simmer until shrimp have cooked through and mussels have opened, about 3 minutes. Using a slotted spoon, transfer shrimp and mussels to a large bowl (discard any unopened mussels). Let cool, about 10 minutes. Divide chilled broth among 6 shallow bowls. Drizzle with oil, top with shrimp and mussels. Garnish with parsley, cucumber, and bell pepper just before serving.
SPICY GAZPACHO WITH SHRIMP AND MUSSELS
Sweet shrimp and plump mussels may not be traditional gazpacho ingredients, but they turn this spicy tomato-based soup into a hearty meal.

- Bring a large pot of water to a boil. Using a paring knife, score nonstem end of each tomato with shallow hatch mark. Blanch tomatoes in boiling water for 30 to 60 seconds, until skin peels easily. Transfer tomatoes to a bowl of ice water. Peel and halve them after they cool. Remove and discard most of the seeds, without wasting pulp.
- Place tomatoes in the jar of a blender, and add garlic and half of 1 jalapeno. Blend mixture, working in batches if necessary, until smooth. Season mixture with lime juice, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Transfer to refrigerator, and chill.
- Meanwhile, combine shallot, white wine, and 2 cups water in a large skillet. Bring mixture to a boil, and add mussels. Cover skillet, and let mussels cook until shells open, about 2 minutes. Using a slotted spoon, transfer mussels from skillet to a bowl. Cool slightly, cover with plastic, and refrigerate.
- Return skillet to heat, and bring to a simmer. Add shrimp, and poach until shrimp are pink and cooked through, about 1 1/2 minutes. Transfer shrimp from poaching liquid to a bowl, let cool slightly, and refrigerate.
- Dice the remaining 1 1/2 jalapeno peppers. Slice yellow cherry tomatoes in half.
- Adjust seasoning of chilled tomato puree with salt and pepper. Stir in chopped jalapenos, cucumbers, red onion, and sliced cherry tomatoes. Ladle soup into bowls. Divide seafood among bowls. Sprinkle each bowl with chopped cilantro, and serve.
SEAFOOD GAZPACHO
This soup is cool, refreshing and delicious on a hot summer day. Use vine ripe tomatoes for the best results.

- Combine the bread crumbs and garlic and set aside.
- Mix together the cucumber, red peppers, jalapeno peppers, onion, and tomatoes in a large bowl.
- Pour in the tomato juice and lime juice and stir to combine.
- Add the bread crumb mixture and stir in the oil.
- Puree half the soup in a food processor or blender and stir it back into the half that is not pureed.
- Season with cumin and salt and pepper to taste.
- Refrigerate until cold.
- Just before serving, stir in the crabmeat and avocado.

BEST GAZPACHO
This recipe produces quite a large amount, but do not worry--this gazpacho is so delicious that it will soon be gone. One of my favorites for summer parties. Serve with fresh croutons or bread.

Steps:
- Prepare a bowl with ice water.
- Bring a large pot of water to a boil over high heat. Cut crosses into the bottom of the tomatoes with a sharp knife, and blanch tomatoes in the boiling water for 1 to 2 minutes until the skin begins to come off. Remove tomatoes with a slotted spoon and immediately immerse in the ice water.
- Remove skin from the tomatoes and cut out the seeds over a bowl (so that no juice is lost); discard the seeds.
- If the cucumber is organic, leave the peel on; otherwise peel it. Remove seeds of cucumber and roughly chop.
- Combine tomatoes, cucumber, onion, garlic, and red wine vinegar in a food processor or blender; blend until gazpacho has desired consistency, either coarsely chopped or finely pureed. Slowly add olive oil and season with salt and pepper. Puree again briefly.
- Refrigerate gazpacho until cold, at least 1 hour. Remove from the fridge at least 30 minutes before serving.

- Rinse fresh PEI mussels in water. Tap any mussels that are open and discard any mussels that do not close in response to the tap.To steam the mussels simply place the 2 pounds of mussels in the shell into a pot. Add 2 oz (57 g) of white wine and ¼ cup (50ml) red onions. Turn burner to high and cover. As soon as the cover starts to steam the mussels are done. It should take 4 to 5 minutes. Remove the meat from the shell and use the liquid as your mussel broth. Discard any mussels that do not open after being steamed.Place vegetables in large bowl, add olive oil, mussel broth, tomato juice and Tabasco stir well, season and allow to chill for at least two hours before serving.Place two mussels in the bottom of a 2 oz shot glass fill with gazpacho then garnish with a mussel and a sprinkle of sea salt.
- 1. For lemon dashi, bring water to a boil in large saucepan. Meanwhile, combine remaining ingredients in a large heatproof bowl. When water reaches a boil, remove from heat and pour over ingredients in bowl. Let cool, then strain (discard solids). 2. To poach fingerlings, bring 5½ quarts water to a boil in large saucepan. Add potatoes; reduce heat to medium and simmer about 15 minutes until fork-tender. 3. Drain potatoes and add to strained lemon dashi in bowl. Let potatoes cool in dashi. Once cool, drain potatoes, reserving lemon dashi for glaze. 4. For dashi glaze, bring reserved lemon dashi and agar-agar to a boil. Pour into a metal container and let stand at room temperature for about 30 minutes until set. Blend and pass through a fine chinois. 5. To assemble, cut poached potatoes into ½-inch thick slices.
