CRISP CUCUMBER SALAD
Crunchy, crispy texture with a touch of sweetness that makes this Crisp Cucumber Salad extra delicious. The combination of fresh veggies will make you crave this salad all-summer long.

Steps:
- In a small bowl, combine the salad dressing ingredients: 3 tbsp grapeseed oil, 1 tbsp white wine vinegar, 1 tsp granulated sugar, 1 tsp fine salt, 1/4 tsp ground black pepper and 1 pressed garlic clove. Give a gentle stir and set aside for sugar and salt to dissolve.
- Wash and paper towel pat dry the salad ingredients.
- In a large bowl, combine 4 sliced medium cucumbers, 1 julienned red bell pepper, 1 julienned medium carrot, 1/4 finely chopped large purple onion, 3 finely chopped green onions and 2 tbsp finely chopped fresh parsley.
- Pour the salad dressing over the vegetables and toss gently to coat. Serve right away. (I like to refrigerate for 30 minutes (covered) before serving so that the flavors really blend in).
CUCUMBER RADISH SALAD
Cucumber Radish Salad is fresh, creamy and crunchy. The combo of fresh cucumbers, radishes and boiled eggs not only bring a crunchy texture, but also a beautiful vibrant color to this salad.

- Wash and paper towel pat dry cucumbers, radishes and green onions. Cut off stems and tails from radishes.
- Cut 3-4 small cucumbers into half (or 1 English cucumber into quarter) and slice onto Benriner Mandolin. Add to the large bowl. Cut radishes into half and slice them onto mandolin or manually with a knife. Grate 5 boiled eggs onto the large hole of grater and finely chop 5 green onions.
- Gently mix all ingredients with a spoon. Dress into real mayo to taste and add salt to taste if needed (I rarely do), just before serving. Garnish with green onions, dill or parsley for final touch.

Steps:
- Halve cucumber lengthwise; seed and thinly slice crosswise. Place in bowl.
- Peel and halve carrot; thinly slice crosswise and add to cucumber. Add radish and onion. (We used fresh mushrooms instead of onion).
- Whisk together oil, vinegar, sugar, soy sauce, sesame oil and hot pepper sauce; add to cucumber mixture and toss to coat. (We left out the sugar and used tahini as a substitute for the sesame oil).

- Toss radishes with salt; let stand for about 10 minutes. Drain any liquid and transfer radishes to a large bowl. Add red onion and cucumber slices.
