- Preheat oven to 400F, with rack on lower middle position. Line a large baking sheet with foil and generously grease the foil. Add panko breadcrumbs in a single layer on greased foil; spray oil over the top of the panko. Brown panko for 4 minutes, or until golden and crisp. Toasting the panko is the secret to the crunch. Let cool while you continue with recipe.
- Meanwhile, increase oven temp to 450F, keeping rack on lower middle position. Use paper towels to thoroughly dry chicken tenderloins. Set chicken aside. In a shallow pan (I use pie pans) combine toasted panko with oregano, onion powder, salt, garlic powder, and pepper. Stir to combine well. In a separate shallow pan, combine the egg with 1 TB water, whisking to incorporate.
- Replace the foil on large baking sheet and place a wire rack over it. Generously grease the rack. Dip a chicken tenderloin into the egg mixture, coating well and letting excess drip off. Coat generously with panko mixture. Place on greased wire rack. Repeat with remaining chicken tenderloins, leaving at least an inch of space between each one on the rack.
- Spray tops of chicken tenders with oil. Bake 11-13 minutes or until chicken genders are just cooked and the coating is nicely browned (actual bake time depends on thickness of chicken and your oven.) Serve immediately while fresh from the oven, with dipping sauces of your choice.

- Cut the chicken into strips. Make sure they are even sized so that they cook evenly. The thicker they are, the longer they will take to cook. Season chicken strips salt, pepper, garlic powder and paprika. Set aside.
- Put the panko bread crumbs in a bowl. In another bowl, beat the eggs until smooth. Dredge chicken cutlets strips in egg, then panko bread crumbs. Press chicken cutlet into the bowl of panko bread crumbs so that they completely coat the chicken cutlet. Repeat this process for all chicken pieces.

- 1. Preheat oven to 350 degrees F. Using a gallon size zip lock bag, add panko bread crumbs, dry ranch dressing mix, parmesan cheese and all of the spices, then shake to mix completely. Set aside till needed. Spray a large jelly roll size pan with non stick cooking spray and set aside till needed.
- 2. In a separate small dish large enough to accomodate chicken strips, melt the butter in microwave and set aside. Wash chicken strips as desired and drain. Then in another plate or platter add some of the bread crumb mixture.
- 3. Now you are ready to begin. Add the chicken strips one at a time into the melted butter, then remove and drain excess butter, then add chicken strip to plate of bread crumbs, and coat on all sides pressing firmly into the crumbs. Then place on the prepared baking pan.
- 4. Repeat until all the pieces have been coated, adding more bread crumbs as needed. If you have some of the crumbs left over, you can store them into the freezer to use at a later time, because you did not contaminate them with the raw chicken.
- 5. Now spray each piece of chicken lightly with the non stick cooking spray. Then place in center of preheated 350 degree F. Oven & bake for 35 to 40 minutes or until juices run clear. Remove from oven and serve with your favorite sides.
- 6. NOTE: As A TIME SAVER, I KEEP EXTRA BAGS OF THIS Seasoning MIXTURE IN THE FREEZER in a zip lock bag, and then I can use it on Chicken, Fish or Pork Chops when ever needed. It saves a few minutes of getting dinner on the table in a hurry. This recipe is similiar to a recipe in my cookbook, but with slight variations & extra added seasoning. It taste really great.

- Toast panko bread crumbs in oven for 4 minutes by spreading it on a lightly greased baking tray. Once the crumbs begin to turn golden brown remove it and let it cool completely.
