CRISPY BAKED EGGPLANT DIPPERS AND ITALIAN MEATBALLS
Change up your eggplant routine and make a kid-friendly, dip worthy dinner with crispy baked eggplant dippers and Italian meatballs!

Steps:
- Preheat the oven to 375 degrees.
- Set out 3 bowls. Put the potato starch in the 1st bowl. Whisk the egg/water in the 2nd bowl. Whisk the coconut shreds, rice flour, Italian season, salt, and pepper in the 3rd bowl.
- Dip each eggplant round in the potato starch 1st, then the egg/water bowl 2nd, and finally the flour bowl. Line up the coated eggplant dippers on a Silpat lined baking sheet.
- Bake the eggplant dippers at 375 degrees for 25 minutes. After 25 minutes, flip the eggplant dippers and bake another 20 minutes (You will be putting the meatballs in to bake for that last 20 minutes too!)
- While the eggplant dippers are baking the first 25 minutes, you can roll your meatballs. Put all of the meatball ingredients in a small mixing bowl and combine. Roll the meatballs and line them up on a baking sheet.
- Bake the meatballs for 20 minutes along with the eggplant dippers that you have flipped. Serve with marinara sauce for dipping and salads on the side!

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs an a greased rack in a shallow pan. Bake, uncovered, at 400° for 30 minutes or until the meat is no longer pink.

These hearty, delicious eggplant morsels can be used as a replacement for meatballs, or they can be fried into patties and eaten like burgers.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Heat a medium skillet over medium heat. Pour in olive oil and saute garlic just until lightly browned. Mix in eggplant and water. Reduce heat to low and cover skillet. Allow eggplant to steam until soft, about 20 minutes. Place eggplant in a large bowl and allow to cool slightly.
- Mix cheese, parsley, eggs, and bread crumbs into eggplant. Stir with a wooden spoon or your hands until ingredients are thoroughly combined and mixture can be rolled into balls. Add more bread crumbs as needed to make mixture workable. Refrigerate mixture for 15 minutes, then roll into balls or form into patties.
- Place eggplant balls on prepared baking sheet. Bake in preheated oven for 30 minutes. Serve immediately.

ITALIAN EGGPLANT BALLS (USE JUST LIKE MEATBALLS) FRY OR BAKE
I've made these for a long time. These Italian eggplant balls are a great substitute for meatballs. Use them just like meatballs, in sauces, in recipes, as a side dish, etc. They can be a vegetarian substitution for many dishes. I like these best fried because I like them crispy. You could bake them instead. They go great "parmesan style" too, in a casserole dish, topped with sauce, parmesan & mozzarella cheese then baked...

Steps:
- In food processor, prepare the ingredients that need to be minced or diced mentioned above.
- In a large saucepan, heat oil & gently sauté garlic until golden brown.
- Add diced eggplant & water - then cover & simmer under low heat until eggplant is VERY soft. Drain if watery when done then transfer to large bowl.
- Combine eggplant, breadcrumbs, parsley, eggs and cheese in large bowl. Let stand for 20 minutes.
- Form into balls (same size as you prefer your meatballs to be) and fry in olive oil in large pan or bake in over for 30-35 minute at 325º or until brown.

Steps:
- Preheat oven to 425°F.
- In a small bowl stir together mayonnaise, dried onion, and salt.
- In a shallow dish mix bread crumbs, Parmesan cheese, and Italian seasoning (or just use Italian breadcrumbs).
- Brush eggplant slices with mayonnaise mixture and then coat in breadcrumb mixture.
- Place eggplant slices on a lightly oiled baking sheet or shallow baking dish.
- Bake in hot oven for about 12 to 15 minutes turning about half way through.
- Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with non-stick play.
- Arrange eggplant and tomato slices into the bottom of the prepared baking dish. Drizzle olive oil over the vegetables; season with oregano, salt, and pepper. Sprinkle Parmesan cheese over the entire mixture.
- Bake in preheated oven until the cheese is beginning to brown, about 30 minutes. Switch oven broiler to high; continue baking until completely browned, about 5 minutes.
