CRISPY BAKED EGGPLANT FRIES - GLUTEN-FREE
Crispy Baked Eggplant Fries that are gluten-free and so easy to make! Chickpea breadcrumbs stuck to soft and tasty eggplant all baked to oven-fried perfection and matched with a delicious marinara dipping sauce!

Steps:
- Preheat oven to 425 degrees F and spray a baking sheet with cooking spray.
- Place the whisked eggs into a shallow bowl and season them with a little salt and pepper. Place the breadcrumbs into another shallow bowl, add the parmesan cheese to the breadcrumbs and toss to combine.
- Dredge each eggplant fry in the egg then the breadcrumbs and place it in a single layer onto the baking sheet. Continue until you have dredged all of the eggplant. Make sure to lay the breaded eggplant in a single layer on the baking sheet.
- Spray the eggplant with olive oil cooking spray and bake in the oven for 20-25 minutes, turning the fries over halfway through to get both sides nice and crispy.
- Remove, sprinkle with salt and fresh chives or parsley. Plate and serve warm with your favorite marinara.

- Wash and cut the eggplants/aubergines into long strips. Sprinkle with salt and set aside (in a colander if possible) for a minimum of 15 minutes - but up to 30 would be best. This will remove any extra water so they maintain the perfect texture once baked.It's best to cut the fries as evenly as possible. To do this, slice the eggplant into 1/2-3/4-inch round slices, then chop those into batons.For baked eggplant slices (rather than fries), chop into round slices about 1/2-inch in thickness.I leave the skin on the eggplant as it helps the fries hold their shape while baking.
- While the eggplant sweats, prepare three separate bowls. In one, whisk the eggs. In the second, add the flour, and in the third, combine the breadcrumbs and spices (garlic powder, Italian Seasoning, and sometimes cayenne pepper if I want heat).
- After the eggplant is done 'sweating; then pat the pieces with a kitchen towel to remove the excess liquid. Then it's time to coat the fries.
- Spray the fries lightly with a little cooking spray/ olive oil and then bake them in the oven for 15-18 minutes at 425ºF/220ºC until golden brown. You could flip the breaded eggplant midway - but it's not 100% necessary.

- Preheat the oven to 400 degrees F. Prepare a large rimmed baking sheet with parchment paper and set aside.
- Slice the eggplant in half (see above image), then place the sliced side down on the cutting board and slice a cross shape (as shown) in each half. Then, make horizontal and vertical slices again (see image) until you have small rectangle fry shapes.
- Lay the sliced eggplant on a rimmed baking sheet and spray with extra-virgin olive oil. Coat all the eggplant pieces with almond flour (or make your own almond flour-see note below using blanched almonds). Sprinkle with sea salt and pepper and bake in the oven for 30 minutes or until golden brown and crispy.
