1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon ground black pepper
¼ teaspoon sea salt
¼ teaspoon cornstarch
⅛ teaspoon cayenne pepper
2 medium sweet potatoes
2 tablespoons olive oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Mix chili powder, cumin, paprika, garlic powder, onion powder, sea salt, cornstarch, and cayenne pepper together in a small bowl.
  • Cut potatoes in half lengthwise, then cut each half into 3 wedges. Place in a large bowl and drizzle with olive oil; toss to coat. Add spice mixture and stir with a rubber spatula or your hands until potatoes are completely coated. Transfer to the prepared baking sheet.
  • Bake in the preheated oven until the thickest parts of potato wedges are easily pierced with a fork, about 25 minutes.

3 tbsp olive oil
1 1/2 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder ((or sub with more garlic powder))
1 tsp salt
1/2 tsp pepper
Sour cream and
Sweet chili sauce
Other options: Ketchup, tomato sauce, aioli, mayo, yogurt, BBQ sauce, relish
Avocado Dipping Sauce

Steps:

  • Preheat oven to 220°C/430°F (200°C/390°F fan/convection)
  • Mix the Seasoning ingredients.
  • Cut the potatoes in half lengthwise, then cut each half into 4 "wedges" (so you get 8 pieces from each potato). If your potato is small/medium, just cut into 6 wedges.
  • Place potatoes in a large bowl, drizzle over oil and seasoning. Toss with hands.
  • Spread out on tray, ensuring cut side lies flat on the tray.
  • Bake for 35 to 45 minutes, turning once, or until dark golden brown and crispy.
  • Serve immediately!
  • Dipping sauces: Classic Aussie way is with sour cream and sweet chilli sauce. Otherwise, try tomato sauce/ketchup, BBQ sauce, yogurt, ranch, aoli.

Steps:

  • Spread the wedges on a baking tray, lined with foil paper.

Store-bought BBQ spice mixture

Steps:

  • Preheat oven to 450 degrees F.
  • Place the potato wedges in a saucepan with 2 quarts of cold salted water. Bring to a boil and then reduce to a simmer for approximately 5 minutes, or until a knife pierces through easily. Drain. In a large bowl, toss the wedges with olive oil. Place the BBQ spice and salt in a shallow dish and roll the wedges in it. Place the wedges on a sheet pan in single layer and roast for 15 to 20 minutes until crispy.

3 tbsp Olive ( or avocado oil)
2 tbsp Corn starch (or Potato starch)
Kosher salt (to taste)

1-2 tbsp Freshly chopped curly parsley (to garnish, optional)

Steps:

  • Scrub and rinse the sweet potatoes to remove any dirt.
  • Cut the potato in half and then cut each half lengthways again to end up with 8 wedges. Soak the wedges into a bowl filled with cold water for at least 1 hour.
  • After the time is up, remove the potatoes from the water and pat the excess moisture with a paper towel.
  • Meanwhile preheat the oven to 400°F and lightly grease 2 non-stick baking sheets with cooking oil spray. Next, place the potato wedges together with the starch in a large ziplock bag.
  • Close the bag and shake well to coat. Open the bag and pour in the oil, then seal and again shake the bag to evenly coat with the oil.
  • Lay the wedges on the prepared baking trays, in a single layer. Bake for 25-30 minutes, turning halfway through until both sides are golden and crispy.
  • Once done remove from the oven and let them slightly cool at room temperature for about 8-10 minutes before removing them from the trays. Garnish with salt, pepper, and parsley.
  • Serve with your favorite dip and enjoy!
