Crispy Batter that Stays Crispy-Super simple recipe to get a crispy batter that stays crispy for a long time. All the tips you need to know. A gluten-free version of the batter is included.

Cooking oil (for deep-frying)
1 cup all-purpose flour (140 grams)
2 Tbsp rice flour (12 grams)
1 Tbsp baking powder
1 tsp salt (optional)
1 cup ice-cold water
1 cup rice flour (110 grams)
4 Tbsp cornstarch (30 grams)
1 Tbsp baking powder
1 tsp salt (optional)
1/2 cup ice-cold water (add more as needed)

Steps:

  • Place the flour/starch, baking powder, and salt in a mixing bowl. Stir to mix everything. Only prepare your batter when you are ready to fry your food.
  • Pour about 1 1/2 to 2-inch of oil into a stainless steel pot or Dutch oven. Preheat the oil to 330 F. It helps if you have deep-fryer thermometer if not, dip a stick end of wooden spatula, bamboo skewer, or chopsticks into the oil. If there are steady bubbles around it, the oil is most likely more than 330 F, but the temperature will drop once you put in the things you are going to fry. As long as it doesn't bubble vigorously, if it is, lower the heat a bit and test again
  • Pour in the ice cold water into the flour mixture and use a chopstick to stir. Do not over stir with all-purpose flour. It's okay to have some lumps in the batter. If you over mix the flour batter, it will turn out gummy and absorbs too much oil. If you are preparing gluten-free batter, this is not an issue because cornstarch doesn't have gluten in it
  • Coat the food with the batter and fry the food. Another important note is not to overcrowd and frying too many. If you lower the oil temperature too much, the batter will be greasy, soggy, and almost definitely will not stay crispy (if at all). This step is to cook the food inside the batter. Depending on what you are frying, follow the instruction on the time
  • Remove from the oil to a rack. Let them cool down for at least 10 minutes before you go for the second frying. You can even stop at this step if you are prepping ahead. Keep the half-fried food in the fridge and do the second frying just right before serving, whenever that is
  • Remove any crumbs from the oil and bring it back up to hot again over high heat. This time we need about 375 F. Use a thermometer if you have one. If you don't have one, again, use the stick end of wooden spatula, bamboo skewer or chopstick to test the oil. The bubbles will be steady. When it's ready, fry the food for the second time. This round should be quicker. The food will turn golden brown too. This step is to crisp up the food further
  • Place the fried food on a rack set on a baking sheet. You can keep the rest warm in an oven at around 200 F and serve when you are done with frying all

CRISPY ZUCCHINI FLOWERS STUFFED WITH RICOTTA AND MINT



Crispy Zucchini Flowers Stuffed with Ricotta and Mint image

7 ounces good-quality crumbly ricotta cheese (not supermarket ricotta; best bought from a specialty shop)
1/4 of a nutmeg, finely grated, or a pinch of ground nutmeg
A small handful freshly grated Parmesan
1 lemon, zest finely grated, plus 2 lemons, halved for serving
A small bunch fresh mint, leaves picked and finely chopped
1 to 2 fresh red chiles, halved, seeded and very finely chopped
Sea salt and freshly ground black pepper
1 3/4 cups self-rising flour, plus a little extra for dusting
1 1/2 cups decent white wine or sparkling water
8 zucchini flowers, with zucchini still attached
Vegetable oil
A small piece potato, peeled, optional
A few sprigs fresh parsley, optional

Steps:

  • These stuffed zucchini flowers look and taste amazing! Make sure they're eaten straightaway, while they're still crisp and hot. If you can't get hold of any flowers you can still make the recipe using just the zucchini - it will be like an Italian tempura.
  • Beat the ricotta in a bowl with the nutmeg, the Parmesan, lemon zest and most of the chopped mint and chiles. Season carefully, with salt and pepper, to taste.
  • To make a lovely light batter, put the flour into a mixing bowl with a good pinch of salt. Pour in the white wine and whisk until thick and smooth. At this point the consistency of the batter should be like heavy cream or, if you dip your finger in, it should stick to your finger and nicely coat it. If it's too thin, add a bit more flour; if it's too thick, add a little more wine.
  • Open the zucchini flowers up gently, keeping them attached to the zucchini, and snip off the pointed stamen inside because these taste bitter. Give the flowers a gentle rinse if you like.
  • With a teaspoon, carefully fill each flower with the ricotta mixture. Or, as I prefer to do, spoon the ricotta into the corner of a sandwich bag. Snip 1/2-inch off the corner and use this as a makeshift piping bag to gently squeeze the filling into each flower, until just full. Carefully press the flowers back together around the mixture to seal it in. Then put the flowers aside. (Any leftover ricotta can be smeared on hot crostini as a snack!)
  • Now for the deep-frying bit. Get everyone out of the way if you can and make sure there are no kids around. Have tongs or a spider ready for lifting the flowers out of the oil, and a plate with a double layer of paper towels on it for draining. Pour the oil into a deep fat fryer or large deep saucepan so it's about 4 inches deep. Heat it up to 350 degrees F or, if using a saucepan, put in your piece of potato. As soon as the potato turns golden, floats to the surface and starts to sizzle, the oil is just about the right temperature. Remove the potato from the pan.
  • One by one, dip the zucchini with their ricotta-stuffed flowers into the batter, making sure they're completely covered, and gently let any excess drip off. Carefully release them, away from you, into the hot oil. Quickly batter another 1 or 2 flowers and any small zucchini (or parsley) leaves if you have any - but don't crowd the pan too much otherwise they'll stick together. Fry until golden and crisp all over, then lift them out of the oil and drain on the paper towels. Remove to a plate or board and sprinkle with a good pinch of salt and the remaining chile and mint. Serve with half a lemon to squeeze over. Bloody delicious. Eat them quick!

CRISPY STUFFED LOTUS ROOT WITH PORK



Crispy Stuffed Lotus Root with Pork image

Lotus root is prized for its characteristic texture, which is similar to water chestnuts. Even after stir-frying, frying, boiling, braising or steaming, it remains crisp and tender. This traditional dish is made during Chinese New Year -- in Cantonese, lotus root ("leen ngau") is directly translated to "year have," meaning you should have another year to come -- and is a beautiful harmony of crunchy coating, crisp lotus root and savory (and juicy) pork filling. In this version, we dust the stuffed lotus roots with flour to help hold them together; seltzer in the batter (though not classic) contributes to a crispy batter. Ground dark meat chicken can be substituted for the ground pork if you prefer. You can also omit the chicken bouillon powder, though it is commonly used in Chinese cooking to help amplify flavor. Though the stuffed lotus roots are usually served warm with the soy vinegar dipping sauce, they are also amazing at room temperature.

1 1/4 pounds large lotus roots (See Cook's Note)
12 ounces ground pork or dark-meat chicken
1 tablespoon Shaoxing wine
1/3 cup plus 1 teaspoon potato starch
2 tablespoons plus 4 teaspoons light soy sauce (see Cook's Note)
2 1/4 teaspoons toasted sesame oil
2 1/2 teaspoons sugar
1 1/2 teaspoons finely minced fresh ginger
Kosher salt
1/4 teaspoon ground white pepper
1/2 teaspoon chicken bouillon powder, optional
2 scallions, white and green parts separated and finely minced
Vegetable, canola or peanut oil, for frying
1/3 cup all-purpose flour, plus more for dusting
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon Chinese five-spice powder
1/2 cup cold seltzer, plus more as needed
2 teaspoons white vinegar
1 teaspoon chili crisp, such as Lao Gan Ma, optional
1 teaspoon sesame seeds, toasted

Steps:

  • To stuff the lotus roots: Peel each lotus root and then wash well. Remove both ends and cut the lotus root into 1/4-inch-thick slices (about 32 slices, if possible). Soak the slices in a large bowl of cold water to prevent the lotus root from turning black and remove some of the starches.
  • Add the ground pork, Shaoxing wine, 1 teaspoon of the potato starch, 4 teaspoons of the soy sauce, 2 teaspoons of the toasted sesame oil, 1 teaspoon of the sugar, 1/4 teaspoon kosher salt, the ground white pepper and the chicken bouillon powder if using to a large bowl. Add all the scallion white parts and half of the green parts and 3 tablespoons cold water, and stir in one direction until the mixture is combined and very sticky, 3 to 5 minutes. Set the filling aside.
  • Drain the lotus root slices and arrange them in pairs of similar-size slices on a sheet of paper towel. Pat dry with a second paper towel. Spoon 2 tablespoons of the pork filling on 1 piece of each pair of lotus root slices. If there is leftover pork filling, evenly divide it among the slices. Top the filling with the remaining lotus root slices to make sandwiches. Gently press them together so the pork fills the holes of the lotus roots on both sides; smooth the filling around the edges.
  • To fry the lotus roots: Fill a wok or a Dutch oven with about 1 1/2 inches frying oil (about 4 cups for a wok) and heat it over medium heat to 300 degrees F. Set a cooling rack in a baking sheet. As the oil is heating up, lightly dust the outside of the stuffed lotus roots with flour.
  • Mix the batter by whisking the flour, baking powder, baking soda, five-spice powder, 1/3 cup potato starch, 1/2 teaspoon kosher salt and 1/2 teaspoon sugar in a medium bowl until combined. Slowly drizzle in the seltzer and whisk until the batter is just smooth and resembles the consistency of a crepe batter. If the batter is too thick, add a tablespoon of cold seltzer at the time until it reaches the right consistency. Stir in 2 ice cubes to keep the batter cold.
  • When the oil is ready, one at a time, dip a stuffed lotus root into the batter to coat and then carefully lower it into the hot oil. Repeat with more stuffed lotus roots so you are frying 7 to 8 pieces at a time, regulating the heat to bring it back to 300 degrees F. Cook, gently moving the lotus roots so they don't stick to the bottom, until light golden, 5 to 6 minutes (you aren't cooking them all the way through because they will be fried again). Remove from the oil using a spider or slotted spoon and set on the prepared baking sheet to drain. Repeat with the remaining stuffed lotus roots. (The lotus roots will turn soggy after a few minutes, that is normal.)
  • Increase the heat to high heat and bring the oil to 350 degrees F. Fry half the stuffed lotus roots until dark golden brown and very crunchy, 4 to 6 minutes. Remove them to the prepared baking sheet and repeat with the remaining stuffed lotus roots.
  • To make the dipping sauce: Whisk together the remaining 1 teaspoon sugar with 1 tablespoon water in a small bowl until dissolved. Add the white vinegar, chili crisp, sesame seeds, remaining 2 tablespoons soy sauce, 1/4 teaspoon toasted sesame oil and green parts of the scallions.
  • Serve the lotus roots warm with the dipping sauce.

2 eggs, separated,whites set aside
1/2 teaspoon salt
3/4 cup lukewarm water
1 tablespoon oil
3/4 cup flour

Steps:

  • IN BOWL: Beat 2 egg yolks and 1/2 teaspoon salt.
  • ADD 3/4 cup lukewarm water and 1 tablespoon oil, mix.
  • Gradually add 3/4 cup flour until smooth.
  • Set aside for at least one hour.
  • Just before using beat the egg whites to soft peaks and fold into the batter.
  • Ready to use for battering.
  • I find this recipe sufficient in preparing four to six servings.
  • It depends of course on what you are battering and how hungry the family.

CRISPY BATTER FOR CHICKEN OR FISH



Crispy Batter for Chicken or Fish image

Similar to Long John Silvers' batter. Feel free to add some other seasonings, such as garlic powder, lemon pepper, onion powder, even cayenne pepper. This is similar to a tempura batter, so don't try to get too much batter on your fish or chicken pieces. And don't use too big of pieces of fish/chicken or the batter will burn before the food gets done.This is enough batter to coat about 10 medium chicken strips of small fish fillets. Recipe is easily doubled or tripled.

Steps:

  • Preheat the oil in a deep fryer or large cast iron skillet. You'll want at least a couple inches deep of oil in the skillet. The oil should be heated to 325°F A frying thermometer is usful in keeping the oil at a constant temperature.
  • Prepare your chicken or fish by cutting into thin strips, about 1/2 thick; the width is not critical. Pat dry with a paper towel.
  • In a shallow quart container, whisk together the dry ingredients well. Stir in the water and whisk until very smooth.
  • Using tongs, dip the fish or chicken pieces into the batter, covering LIGHTLY, and letting some batter drip off.
  • Immediately place the fish or chicken in the preheated oil. Fry to a deep golden brown, turning once. This should take a total of 5 to 7 minutes, depending on the thickness of the pieces. Remove one piece and cut into it to check for doneness.
  • Drain on fresh paper toweling and keep warm in a low oven till serving time - or serve immediately!

300ml cold water
1L sunflower or vegetable oil, for frying

Steps:

  • Take a large mixing bowl and add the flour and ½ tsp fine salt. Whisk together to incorporate the salt. Add the water and whisk until the batter is completely smooth and the flour is fully combined.
  • Take the oil and pour into a large, sturdy saucepan with high sides. Heat over a high heat until it reaches 200C. To fry your ingredients, dip them in the batter, allowing any excess to run off, and carefully place into the hot oil. Fry until the batter is a rich, golden brown and crisp. The fried ingredients will likely float on top of the oil when cooked, too. Remove from the oil using a slotted spoon and blot on kitchen towel before serving. Sprinkle with a little flaky sea salt to keep crisp. The batter does not keep well and is best made just before using.
