CRISPY BREADED AIR FRYER ZUCCHINI STICKS
These easy Crispy Breaded Air Fryer Zucchini Sticks with parmesan cheese make a delicious appetizer, snack, or side dish, and they're perfect for dipping. A great way to use up some of that garden zucchini!

Steps:
- Cut the zucchini into sticks about 2½" long by ½" wide.
- In a shallow bowl, combine the flour, salt and pepper.
- In another shallow bowl, beat the egg.
- In a third shallow bowl, combine the breadcrumbs, parmesan cheese, and garlic powder.
- Lightly dredge each zucchini stick in the flour mixture, tapping gently to remove any excess flour.
- Then dip each zucchini stick into the beaten egg, allowing any excess egg to drip off.
- Then dip each zucchini stick into the breadcrumb mixture, gently pressing to help the breadcrumbs adhere. See note below about dividing the breadcrumbs in half and doing this step in two batches.
- Preheat your air fryer to 400°F.Note: If your air fryer doesn't have a preheat cycle, just turn it on to 400°F and let it heat up for 5 minutes.
- Working in batches (I need to do 2 batches in my air fryer), place the zucchini sticks in a single layer in the air fryer basket, leaving space between them to allow the air to circulate properly around them.
- Air fry for 8 to 10 minutes or until browned and crispy, flipping once and lightly spraying the other side of the sticks with oil halfway through the cooking time.
- As soon as they are done, lightly sprinkle with salt, if desired.
- Serve immediately with your favorite dipping sauce (marinara and ranch are my favorites!).

FRIED ZUCCHINI STICKS
Our garden always produces a ton of zucchini in the summer. This is one of our favorite ways to cook it. Serve with ranch dressing for dipping.

Steps:
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Whisk buttermilk and eggs together in a shallow dish.
- Mix flour, bread crumbs, Parmesan cheese, baking powder, and salt together in a separate shallow dish.
- Dip zucchini sticks into the egg mixture; roll in bread crumbs to coat. Dip in the egg mixture again; reroll in bread crumbs.
- Cook breaded zucchini sticks in batches in the hot oil until golden brown, about 3 minutes per batch. Drain on a large plate lined with paper towels.

THE BEST AIR FRYER ZUCCHINI FRIES
Zucchini sticks breaded in breadcrumbs and seasonings that give you perfectly crispy zucchini that is so delicious!

Steps:
- Cut the ends of each zucchini. Then cut each zucchini into half (length wise), then cut each piece in half again so that you have 4 long wedges. Cut each wedge in half so that you have 8 wedges total that are equal in size and width (each about 3 inches long). Set aside.
- Spray the bottom of the air fryer pan with non-stick cooking spray.
- Pull out 3 small mixing bowls. In the first bowl, mix together flour, garlic powder, and salt and pepper.
- In the second bowl, beat the eggs.
- In the third bowl, mix together the panko breadcrumbs, regular breadcrumbs, and Parmesan cheese. You can also add salt and pepper if desired.
- Working with just a few zucchini pieces at a time, dip each zucchini in the flour mixture, then the egg mixture, and then the breadcrumb mixture.
- Place the breaded zucchini in the bottom of an air fryer pan (I had to do 2 batches because I had so much zucchini).
- Set air fryer for 375 degrees.
- Cook for 15 minutes, flipping zucchini half way through cooking time (right around 8 minutes).
- Remove zucchini and enjoy! We love to dip these in ranch or marinara sauce.
