2 large eggs
1 tablespoon minced garlic
2 tablespoons fresh chopped parsley
Salt and pepper (to season)
3 large chicken breasts (halved horizontally to make 6 fillets)
1 cup Panko breadcrumbs
1/2 cup breadcrumbs ((Italian or golden))
1/2 cup fresh grated parmesan cheese
1 teaspoon garlic or onion powder
1/2 cup olive oil (for frying)
1 tablespoon olive oil
1 large onion (chopped)
2 teaspoons minced garlic
14 ounces (400 g) tomato puree ((Passata))
Salt and pepper (to taste)
1 teaspoon dried Italian herbs
1 teaspoon sugar ((optional))
8 ounces (250 g) mozzarella cheese (sliced or shredded)
1/3 cup fresh shredded parmesan cheese
2 tablespoons fresh chopped basil or parsley

Steps:

  • Preheat oven 430°F | 220°C. Lightly grease an oven tray (or baking dish) with non stick cooking oil spray; set aside.
  • Whisk together eggs, garlic, parsley, salt and pepper in a shallow dish. Add chicken into the egg, rotating to evenly coat each fillet in the mixture. Cover with plastic wrap and allow to marinate for at least 15 minutes (or overnight night if time allows for a deeper flavour).
  • When chicken is ready for cooking, mix bread crumbs, Parmesan cheese and garlic powder together in a separate shallow bowl. Dip chicken into the breadcrumb mixture to evenly coat.
  • Heat oil in a large skillet over medium-high heat until hot and shimmering. Fry chicken until golden and crispy, (about 4-5 minutes each side).
  • Place chicken on prepared baking tray / dish and top each breast with about 1/3 cup of sauce (sauce recipe below). Top each chicken breast with 2-3 slices of mozzarella cheese and about 2 tablespoons parmesan cheese. Sprinkle with basil or parsley.
  • Bake for 15-20 minutes, or until cheese is bubbling and melted, and the chicken is completely cooked through.
  • Heat oil in a medium-sized pot. Fry onion until transparent (about 3 minutes), then add the garlic until fragrant (about 30 seconds).
  • Add the tomato puree, salt and pepper to taste, Italian herbs and sugar (If using). Cover with lid to simmer for about 8 minutes, or until sauce has thickened slightly. Taste test and adjust salt and pepper, if needed.

16 ounces pasta (spaghetti, fettuccini, or linguini)
1 - 1¼ pound chicken breast (cut lengthwise in half)
salt and pepper (enough to season both sides of each chicken breast)
2 large eggs (lightly beaten)
½ cup parmesan cheese (grated)
1 cup Panko breadcrumbs
¼ cup olive oil (extra virgin)
24 ounces Marinara Sauce (or your favorite pasta sauce)
8 ounces Mozzarella cheese (cut into 6 thin slices, grate remaining mozzarella cheese)
½ cup parmesan (grated)

Steps:

  • Cook pasta according to package instructions. Drain, cover, and set aside.
  • Preheat the oven to 450º Fahrenheit.
  • Cut 6 thin slices of mozzarella cheese. Grate the remaining mozzarella. Set aside.Grate 1 cup of parmesan cheese. ½ cup for the breading and ½ cup to sprinkle on top of the marinara sauce.
  • Prepare two shallow dishes. The first dish is for the eggs. Use a fork or whisk to lightly beat the eggs. In the second dish combine ½ cup of parmesan and 1 cup panko breadcrumbs.
  • Butterfly the chicken. Cover with plastic foil and pound with a meat tenderizer (or a rolling pin) until the slices are thin and tender. Season each side with salt and pepper.
  • Dip each slice of chicken into the egg wash. Make sure the chicken is fully coated. Transfer the chicken into the bowl with the parmesan breadcrumb mixture and coat well.
  • Heat the olive oil in a large frying pan over medium heat. Once hot transfer the chicken into the frying pan. Cook until golden brown on both sides. About 3-5 minutes per side.
  • Use 2-3 tablespoons of marinara sauce and spread across a 9x13 inch casserole dish.
  • Transfer fried chicken into the casserole dish and coat it with the remaining marinara sauce. Top with mozzarella slices. Sprinkle with the remaining grated mozzarella and parmesan cheeses.
  • Bake the chicken for 15 minutes or until the cheese has melted. Serve Chicken Parmesan over pasta. Enjoy.

4 boneless skinless chicken breast halves (4 ounces each)
1 can (6 ounces) tomato paste
3/4 cup water
2 garlic cloves, minced
1 tablespoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Italian seasoning
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes, optional
2 cups shredded part-skim mozzarella cheese

Chicken Parmigiana , aka chicken parmesan, is one my favorite Italian-American dishes. Serve up a plate of tender and juicy chicken breasts with marinara sauce and baked cheese topping over a fresh bed of pasta!

4 chicken breast halves skinless boneless
½ cup flour
2 eggs
⅔ cup Panko bread crumbs
⅔ cup Italian Seasoning bread crumbs
⅓ cup parmesan cheese grated
2 tablespoons parsley
4 tablespoons oil or as needed
24 ounces marinara sauce homemade or jarred
1 cup mozzarella cheese shredded
¼ cup Parmesan cheese shredded
1/2 cup basil & parsley fresh (chopped)

Steps:

  • Preheat an oven to 425°F.
  • Place flour in shallow dish. Place the eggs in a second dish (and beat with a fork).
  • Combine Panko, Italian crumbs, grated parmesan, 2 tablespoons fresh parsley, salt and pepper to taste in a third shallow dish.
  • Pound chicken breasts to ½" thick (if they're very large you can cut them in half).
  • Dip chicken into flour and shake to remove any excess. Dip chicken in beaten eggs & then into bread crumb mixture (press to adhere).
  • Preheat oil in a large pan. Brown chicken on each side, about 4 minutes per side or until golden (it does not need to cook through as it will continue to cook in the oven).

1 bunch parsley, finely chopped
1/4 cup vegetable oil
2 (14 1/2 ounce) cans Italian-style stewed tomatoes, undrained
1 (15 ounce) can Italian-style tomato sauce
1 (6 ounce) can tomato paste
1/4 teaspoon dried oregano, heaping
1/2 teaspoon dried sweet basil leaves, heaping
1/8 teaspoon salt
1/8 teaspoon black pepper
2 teaspoons granulated sugar
1 egg
1/4 cup milk
1 dash salt
1 dash black pepper
1 cup Italian seasoned breadcrumbs
1 tablespoon fresh parmesan cheese, grated
1 dash salt

4 boneless skinless chicken breasts
1/4 cup vegetable oil
1/4 cup fresh parmesan cheese, grated

Steps:

  • SAUCE:.
  • In a medium saucepan, cook the onion, garlic, and parsley in the oil for approximately 15 minutes. Add stewed tomatoes, tomato sauce, tomato paste, oregano, basil, salt, pepper, and sugar. Cover and simmer for 30 minutes, stirring occasionally. Taste for flavor and add more sugar if sauce is too tart.
  • In a shallow bowl or pie plate, stir together the egg, milk, and dash of salt and pepper; set aside. In another shallow bowl or pie plate, combine the bread crumbs, 1 Tablespoon Parmesan cheese, and dash of salt and pepper; set aside.
  • Preheat oven to 350 degrees. Lightly pound chicken breasts, between 2 sheets of plastic wrap, with a mallet. Heat the oil in a large frying pan. Dip each breast in the egg mixture and then the bread crumbs, coating well with crumbs. Cook the breasts in the hot oil until golden brown, about 3 minutes on each side.
  • Spread 1 cup of the sauce on the bottom of a 9"x13" baking dish. Place the breasts over the sauce. Spread 1-1/2 cups of sauce over the breasts, then sprinkle with 1/4 cup Parmesan cheese.
  • Cover with foil and bake in preheated oven for 25 minutes. Remove foil and sprinkle with mozzarella cheese. Bake until cheese melts.
  • Toss cooked pasta with remaining sauce. Serve pasta on the side.

Steps:

  • Spray a 13x9 inch baking dish with nonstick cooking spray.
