RECIPE FOR FRIED MILK
Crispy delicious snacks that pair perfectly with an afternoon tea latte, this fried milk or fried milk custard cubes to be exact, are just so good that anyone would crave for more. They are golden and crisp on the outside, yet soft and melting inward. Better yet, the scent is just so inviting with egg, butter and whole milk. Definitely not your typical dairy

Steps:
- Separate 2 yolks from their whites.
- Fluff 2 egg yolks till color change, add sugar, beat some more to mix.
- Now turn to stir or the slowest mode while adding in 1 1/2 cup of milk.
- In another container, stir to fully mix 1/4 cup of milk with 1/2 cup cornstarch, make sure it is free of clumps.
- Use a wide sauce pan or wok on medium/low heat, pour the liquid milk/egg into this sauce pan and heat until hot. Do not boil, keep stirring to prevent overflowing.
- Add butter to pan then stirring constantly while adding the milk/starch mixture.
- Keep stirring (use a balloon whisk might help) to prevent sticking to the pan bottom.
- Stirring in circular motion, fold and repeat until it is solidified into custard-like thickness.
- Carefully spoon into you mold, use the back of your spatula to spread and even them out.
- Let sit to cool off at room temperature, then chill in your fridge for 2-3 hours.
FRIED MILK
Fried milk with bread crumbles, making 20 to 24 pieces. Serving around 4 to 6 people.

Steps:
- In a small bow, add coconut milk, milk, cornstarch and sugar. Heat over slowest fire and until heating until thickened. In the process, stir in one direction. Transfer to a square baking pan and set aside to cool down in fridge (rest for 40 to 60 minutes) until well hardened.
- Transfer out and cut into small strips around 5 cm long and 3 cm wide.
- Coat with starch, egg and breadcrumbs in sequence.
- Heat oil until 150 to 160 degree C. Place 4-5 pieces on a flat strainer, dip the strainer in and fry until slightly golden brown and crispy. Repeat until all of the remaining pieces are fried. Remove extra oil with kitchen paper and serve directly.
- Absorb extra oil with kitchen paper and serve hot.

Steps:
- Mix granulated sugar, cornstarch and nutmeg in 3-quart saucepan.
- Gradually stir in milk.
- Heat to boiling over medium heat, stirring constantly.
- Boil and stir 1 minute; remove from heat.
- Stir in butter and lemon peel.
- Spread evenly in ungreased square baking dish, 8x8x2 inches.
- Refrigerate uncovered at least 3 hours until firm.
- Cut custard into 2-inch squares, using wet knife.
- Dip custard squares into eggs, then coat with bread crumbs.
- Heat oil (1 to 1/2 inches) to 360°F; fry 2 or 3 squares at a time in oil 1 to 2 minutes or until light brown; drain on paper towels.
- Sprinkle with powdered sugar.

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

- Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
- Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
- Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
- Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

- Mix cold water and kosher salt together in a large bowl until salt dissolves. Add chicken legs. Cover entire bowl with plastic wrap and refrigerate for 2 hours.
- Remove bowl from the refrigerator; drain and pat chicken dry with paper towels.
- Place chicken legs in a plastic bag with 1 cup all-purpose flour and shake to coat.

- In shallow dish, mix flour and seasoned salt. In medium bowl, beat eggs and beer with whisk. Place bread crumbs in large resealable food-storage plastic bag.
- In electric skillet or deep fryer, heat about 2 inches oil to 350°F. Coat both sides of fish fillets with flour mixture, then dip in beer mixture, letting excess drip back into bowl. Place 1 or 2 pieces of fish at a time in plastic bag with bread crumbs; seal bag and shake to coat completely.

- Crack open the eggs, removing and discarding the yolks. Beat the remaining egg whites into a liquid consistency and save for later.
- Pour the milk into a pot, adding in 3 tablespoons (45 grams) of corn starch, 1 teaspoon (5 grams) of salt, and white sugar. Mix until an even liquid consistency, with no powder or lumps, is achieved. Bring to boil under high heat, then turn down to simmer, slowly and evenly stirring so that none of the mixture sticks to the pot. Turn off the burner when the mixture reaches the consistency of a thin paste.
- Bring the yeast to boil in water, and add the low-gluten flour, 2 tablespoons (30 grams) of corn starch, and 1 teaspoon (5 grams) of salt, along with water and sesame oil until the mixture has a pasty consistency. - Pour cooking oil into a pot and bring to medium heat. Wrap each of the previously cut milk-egg pieces in starch, and then dip into the liquid mixture from Step 5. When the pot is heated, place the wrapped pieces inside and fry under medium-low heat until the surface is a golden color.
