CRISPY ROASTED PARMESAN POTATOES

Steps:
- Preheat oven to 200C/400F.
- Mix Parmesan Mixture in a bowl.
- Drizzle oil in 22 x 33cm / 9 x 13" glass baking dish (Note 2). Tilt pan to spread all over the base.
- Use a spoon to scatter the Parmesan Mixture over the base. Spread as evenly as you can. Once sprinkled, do not touch - don't try to spread it.
- Place potatoes cut side down, pressing firmly.
- Optional: drizzle top of potatoes with a touch of oil or spray with oil, then sprinkle with salt.
- Bake potatoes for 35 - 40 minutes or until they are soft and the parmesan crust is deep golden (you can check through the glass!)
- REST for 5 minutes. Then use an egg flip to cut between every 4 or so potatoes (i.e. cutting through the parmesan crust which bonds between each potato - see video), then scoop up 4 or so potatoes and flip them upside down so the cheese side is up on a serving platter.
- Serve with Dipping Sauce, if using, and sprinkle over extra green onions if desired. Serve as a side dish or as nibbles!

Steps:
- Preheat oven to 450F.
- Place a large baking sheet (if you can fit 2 in, use 2 though it'll depend on how big your potatoes are) in the oven while it's heating up.
- In a medium saucepan over high heat, add potatoes and enough water to cover potatoes.
- Bring to a boil and add 1 teaspoon salt.
- Reduce the heat and simmer for 5 minutes. The edges should start to feel a tad soft but the insides will be firm.
- Drain the potatoes and dump into a large bowl.
- Add in the onions and gently stir.
- Drizzle the olive oil on top and using a rubber spatula, stir around to coat the potatoes and onions.
- In a small bowl mix together the remaining salt, pepper, paprika, garlic powder and 1/2 cup grated parmesan cheese.
- Sprinkle the seasoning on top and mix to coat all sides. You want to see almost a potato starch paste form.
- Carefully take the hot baking sheet out of the oven and place the potato slices in a single layer
- Bake for 20-25 minutes or until the bottoms of the potatoes turn golden brown.
- Using tongs or a metal spatula, flip the potatoes over (along with the onions) and bake for another 10-15 minutes or until golden brown and crispy.
- Remove from the oven plate.
- Garnish with shredded parmesan.
- Add additional salt if needed.
MASHED POTATOES WITH GREEN ONIONS AND PARMESAN

- Cook potatoes in large pot of boiling water until tender. Drain well. Press through food mill or ricer into same pot or return to pot and mash. Mix in milk and 1 1/2 tablespoons butter.
- Melt remaining 1/2 tablespoon butter in heavy small skillet. Add green onions and sauté until wilted, about 1 minute. Add to potatoes. Add Parmesan and mix gently. Season with salt and freshly ground pepper and serve.
PARMESAN FRIED ONION
Steps:
- Fill a large pot or Dutch oven with enough oil to submerge the onion, with space around the sides for it to "bloom." (You might need up to a gallon, depending on the size of your onion, but don't worry; you can strain the oil and use it again for frying, so it won't go to waste.) Preheat to 400 degrees F.
- Combine the milk, eggs, garlic, 1/2 teaspoon salt and a generous amount of pepper in a medium bowl. Whisk to combine.
- Combine the flour, Parmesan, paprika, garlic powder, 1 teaspoon salt and a generous amount of pepper in a large bowl. Toss with a fork to combine.
- Cut off the top of the onion and place cut-side down. Think of the onion as the face of a clock, and cut slits at noon, 3, 6 and 9, cutting almost but not quite to the center of the onion. You'll now have 4 quadrants. Cut 3 more slits in each quadrant, once again cutting almost but not quite to the center of the onion. Flip the onion and gently separate the "petals" with your fingers.
- Put the onion in the flour mixture and sprinkle it over and around to coat, gently separating the petals as needed to completely coat it.
- Put the onion in the egg wash and coat evenly in the egg, opening the petals again as needed. Let the excess egg wash drip back in the bowl.
- Put the onion in the flour once more and sprinkle it over and around to coat, making sure to keep the petals as separate as you can.
- Use a large spider to lower the onion, cut-side up, into the hot oil. The temperature of the oil will immediately begin to drop. Adjust the heat so the oil stays around 350 to 360 degrees F for the remainder of frying. With a fork, separate the petals a bit more, if needed. Fry the onion until the tips are golden, 3 to 4 minutes. Use the spider to gently flip the onion and continue to fry until the entire onion is crisp, deep golden and cooked through, 3 to 4 minutes more. Drain on a paper towel-lined plate.
- Transfer the onion while still hot to a serving plate. Season with salt and pepper. Shower with chopped parsley and grated Parmesan. Serve with mayo for dunking.
CRISPY PARMESAN POTATO AND GREEN ONION ROUNDS
The trick to this being successful is the more Parmesan cheese you use and the thinner you slice your potatoes the crispier they will be! I like to make this using my huge crop of garden fresh green onions. I have even sprinkled grated cheddar cheese on top at the end of baking and put it under the broiler for a couple minutes YUM!

- Set oven to 400°F (set rack to bottom position).
- Melt the butter in the microwave.
- Generously spray a 15 x 10-inch baking sheet with cooking spray, then drizzle a small amount of butter over the cooking spray (I use the non-stick heavy-duty foil for this).
- Layer the thinly sliced potatoes in the bottom of the baking sheet overlapping slightly.
- Sprinkle with lots salt, black pepper and garlic powder.
- Drizzle the melted butter over the potatoes, then evenly sprinkle with green onion.
- Sprinkle generously with grated Parmesan cheese.
- Bake uncovered for about 20-25 minutes, or until the potatoes are just fork tender (watch closely the thinner your slices are the faster they will cook!).
- Lift off using a spatula.
- Delicious!

- Pour butter into a 15-1/2-in. x 10-1/2-in. x 1-in. baking pan. In a plastic bag, combine flour, cheese, salt and pepper. Shake a few potato slices at a time in the bag to coat with the flour mixture. Place potatoes in a single layer over the butter. Bake at 375° for 30 minutes. EASY PARMESAN POTATO ROUNDS
This is a fantastic easy to make potato side dish. If you are serving more than 3 or 4 people, I suggest to double the recipe. This is like scalloped potatoes only without the heavy cream sauce. You can even sprinkle the cheese in between the layering if desired. You will be making this all the time, it is so good! I like the crispy potatoes on the top lol! Please adjust all ingredients to taste.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
- Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.

- Place potatoes into a large pot and cover with water; add salt and bring to a boil. Reduce heat to medium-low and simmer until just beginning to soften, 15 to 20 minutes; drain.

- Preheat your oven to 450 degrees F. Grease a 15x10-inch baking pan (see notes for a half-sheet pan) with butter. Rinse and peel your potatoes. Slice them thinly (1/8 -inch to 1/4-inch thick), using a food processor, mandoline, or the slicer on a box grater.
