2 tablespoons butter
1 small onion, finely chopped
2 cups finely chopped fresh broccoli
3 cups reduced-sodium chicken broth
1 can (12 ounces) evaporated milk
1/2 teaspoon pepper
1 package (8 ounces) Velveeta, cubed
1-1/2 cups shredded extra-sharp cheddar cheese
1 cup shredded Parmesan cheese
Additional shredded extra-sharp cheddar cheese

Steps:

  • In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 3-4 minutes or until tender. Transfer to a 3- or 4-qt. slow cooker. Add broccoli, broth, milk and pepper., Cook, covered, on low 3-4 hours or until broccoli is tender. Stir in process cheese until melted. Add shredded cheeses; stir until melted. Just before serving, stir soup to combine. Top servings with additional cheddar cheese.

6 cups potatoes (peeled and cubed)
1/2 cup onion (diced)
32 oz container chicken broth
1 cup water
3 Tablespoons all-purpose flour
salt and pepper to taste
1 cup milk
8 oz pkg shredded Cheddar cheese
Garnish: sliced green onions and 1/4 lb bacon (cooked until crispy and crumbled)

Steps:

  • Peel and cut your potatoes into cubes
  • Dice about a half of a small onion until you have 1/2 cup
  • Put potatoes and onion in your crock pot
  • Add your chicken broth and water to your crock pot
  • Cover and cook on low for 6-7 hours
  • Mix together your flour, salt, pepper and milk.
  • Pour mixture into your crock pot and turn the heat to high
  • Cover and cook for an additional 20-30 minutes
  • When the soup has thickened, add your cheese and stir together until the cheese melts
  • Garnish with bacon and green onions

1 large onion (chopped)
5 cups potatoes (peeled and diced)
5 cups chicken broth ((or vegetable broth))
1 large head of broccoli (chopped into florets)
3 tablespoons cornstarch
3 tablespoons milk
2 cups shredded Cheddar cheese

Steps:

  • Spray a slow cooker with nonstick spray. Add onions, potatoes and broth into slow cooker. Cook on high for 4 hours.
  • With 30 minutes remaining add broccoli to slow cooker and stir.
  • In a small bowl mix cornstarch and milk together. With 15 minutes remaining add cornstarch mixture to slow cooker.
  • When 4 hours is up, add shredded cheese and mix until melted.
  • Serve in bowls. Enjoy!

1/4 cup unsalted butter
1 onion, finely diced
2 carrots, peeled and finely diced
1 Tablespoon garlic, minced
1/4 cup all-purpose flour
4 cups vegetable broth
1 cup milk, 2% or whole
2 large Russet potatoes, peeled and diced
1 pound broccoli, florets chopped
2 cups sharp cheddar cheese, shredded
sea salt
ground pepper

Steps:

  • Rinse the carrots and potatoes. Peel the potatoes and carrots.
  • Dice the carrots, potatoes and onion. Mince garlic if using whole cloves.
  • Chop the broccoli florets from stem and chop down florets to bite-sized pieces.
  • Melt the butter in a soup pot on the stovetop on a medium-high heat.
  • Add carrots and and onion to the pot. Stir and cook until onion is translucent.
  • Add garlic and stir until fragrant (about 1 minute).
  • Immediately add the flour followed by broth and milk. Stir well.
  • Add potatoes. Stir and bring to a boil.
  • Reduce to a simmer for 5 minutes.
  • Season with salt and pepper. Add broccoli.
  • Simmer for about 10 minutes or until the potatoes are tender when poked with a fork. Time can vary depending on the size the potatoes were diced.
  • Remove from heat. Stir in shredded cheese.
  • Sprinkle cheddar cheese on top and freshly ground pepper. (optional)

Steps:

  • Combine chicken broth, onion, potatoes, carrots and broccoli in a large stock pot and bring to a boil over high heat. Cook until the potatoes are fork tender (about 10minutes depending on how large the chunks are).
  • Add the half and half.
  • In a small bowl, melt the butter and add the flour, whisking until smooth. Add to the soup along with the cheese. Mix well and bring to a simmer for 5 minutes before serving.

1 can(s) broccoli cheese soup, 10.5 oz
1 can(s) evaporated milk, 12 oz
1/2 box velveeta
2 lb frozen broccoli florets
4-5 large potatoes, your favorite kind, cut into cubes for cooking
2 c reserved starchy water from potatoes
1/2 stick butter
1 - 2 Tbsp onion flakes, dehydrated
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp celery salt
1 tsp garlic powder
1 tsp poultry seasoning
dash(es) hot pepper sauce, optional

Steps:

  • 1. Bring a large pot of water to boil, add a few pinches of salt & the chopped potatoes. Boil potatoes until tender, drain, reserving 2 cups of liquid.
  • 2. Mix together soup, milk, & seasonings, pour in crock pot. Add butter & reserved cooking liquid.
  • 3. Add remaining ingredients, stir to combine.
  • 4. Cook on high 3-4 hours, or on low for 6-8 hours. If cooking on high, stir half way through cooking.

Steps:

  • Get a chopping board and chop up the broccoli, potato, and celery stick into bite-sized pieces.
  • Slice the onion thinly and use a garlic press to garlic and set aside.
  • In the instant pot pour the chicken stock, salt, heavy cream, chopped potato, chopped celery, and chopped garlic and cook on high for 3 hours.
  • When the 3 hours are finished, put the cheese in the instant pot and mix it in and serve immediately.
