This is so easy and so tasty. Freezes great for meals later in the week. If you want it a little thinner add an extra can of tomato sauce. Also the green chiles are not hot but add a wonderful flavor, so don't be afraid of them.

1 (28 ounce) can diced fire-roasted tomatoes
1 (16 ounce) can tomato sauce
1 (15.5 ounce) can pinto beans, rinsed and drained
1 (15.5 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can reduced-sodium black beans, rinsed and drained
1 small onion, chopped
1 (4.5 ounce) can chopped green chiles
2 tablespoons chili powder
1 tablespoon minced garlic
1 teaspoon oregano
1 pinch ground cumin

Steps:

  • Cook and stir turkey in a large skillet until completely browned, 7 to 10 minutes; transfer to slow cooker.
  • Stir tomatoes, tomato sauce, pinto beans, kidney beans, black beans, onion, green chilies, chili powder, garlic, oregano, and cumin with the turkey in the slow cooker.
  • Cook on High for 4 hours or on Low for 7 hours.

1 (16 ounce) jar green salsa (salsa verde)
1 (16 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans white beans, drained
1 (14.5 ounce) can chicken broth
1 (14 ounce) can corn, drained
1 onion, chopped
½ teaspoon dried oregano
¼ teaspoon ground cumin
salt and ground black pepper to taste
3 skinless, boneless chicken breasts

Steps:

  • Mix green salsa, diced tomatoes with green chile peppers, white beans, chicken broth, corn, onion, oregano, cumin, salt, and black pepper together in a slow cooker. Lay chicken breasts atop the mixture.
  • Cook on Low until the chicken shreds easily with 2 forks, 6 to 8 hours.

1 medium onion, finely chopped

1 tsp garlic powder
1 tsp kosher salt
1 tsp fresh round black pepper
1-2 TB light olive oil
32 oz good tomato sauce
16 oz can Italian diced tomatoes (with juices)
2 cans (16 oz each black beans, drained)
1 cup frozen sweet corn kernels
6 cloves garlic (minced)
2 green bell peppers (seeded and chopped)
1 large onion (chopped)
2-4 tsp chili powder (depending on desired amount of heat)
1 tsp cumin
1 tsp salt
2 tsp sugar
Dash of cayenne
Dash of Tabasco sauce
Dash of allspice
Optional Toppings: shredded cheddar cheese (chopped fresh cilantro, fresh lime slices, or sour cream)

Steps:

  • Mix uncooked ground meat with 1 tsp garlic powder, 1 tsp kosher salt, and 1 tsp pepper. Mix together well. Add olive oil in a large skillet and cook meat until browned, breaking it up while you cook.
  • Transfer cooked meat to slow cooker. Add in the rest of ingredients to the browned meat. Cook on Low for 6-7 hours or high for 4-5 hours. (If using a Dutch oven or heavy pot on stovetop, bring to simmer for 4 hours.)

2 Skinless boneless chicken breast (about 1 1/2 lbs)
7 to 15 oz black beans (drained and rinsed)
1 cup corn (frozen)
1 cup salsa (thick and medium spicy preferred)
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 teaspoon salt
1/2 cup sour cream or cream cheese

Steps:

  • Trim chicken of any trimmable fat.
  • Drain and rinse a 15 oz can of black beans. Half a can is enough but I like a lot of beans and use the full can.
  • To a smaller crock pot, add the black beans, 1 cup frozen corn, 1 cup salsa, 1 tablespoon chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon pepper, and 1 teaspoon salt. Mix well.
  • Add the chicken into the mixture and spoon some on top. Cook on low for 3-4 hours until the chicken is tender and 165°.
  • Remove the chicken breasts and shred. Place back in the pot and add 1/2 cup sour cream or cream cheese. and finish cooking another 30 minutes.
  • Serve as you wish, usually as nachos.

  • Gather the ingredients.

  • Add onion mixture to slow cooker along with all remaining ingredients except canned beans and garnishes. Stir well and cook on low for 5 to 7 hours. Stir in canned beans about an hour before serving.
  • Serve with your choice of garnishes listed above.
