STUFFED CROCK POT CHICKEN

Steps:
- Spray your crock pot with cooking spray
- Sprinkle your chicken with salt and pepper
- Loosely stuff your chicken with your prepared stuffing
- Wrap your chicken tightly with aluminum foil and put it in your crock pot
- Make a packet from aluminum foil and place your extra stuffing in it, seal tight
- Place your stuffing packet on top of your wrapped chicken
- Cover and cook on low for 6-8 hours until a meat thermometer says the chicken is done
- Unwrap your chicken and place in a broiler safe dish
- Place in your broiler for 3-5 minutes, watching VERY closely, to crisp up the skin
- Serve with stuffing

- Add chicken, coconut milk, onions, tomato paste, garlic, ginger, cumin, turmeric, garam masala, coriander, curry powder, bay leaves, cinnamon stick, salt, and pepper to a slow cooker.
- Cook on High until chicken is no longer pink in the center and the juices run clear, 2 to 3 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove and discard the bay leaves and cinnamon stick. Shred the chicken.

- Combine the vinegar, flour, tomato paste, 1 teaspoon each garam masala and curry powder, garlic, tomatoes with their juices, ginger, 1/2 teaspoon salt and 1/4 teaspoon pepper in a blender or food processor. Puree until well blended and only slightly chunky.
- Spread the potatoes in the bottom of a 5 1/2- to 6-quart slow cooker. Sprinkle the chicken with the remaining 1 teaspoon each garam masala and curry powder and a generous amount of salt and pepper. Lay the chicken over the potatoes in a single layer. Pour the sauce over the chicken. Cook on high for 4 hours or 6 hours on low.
- Uncover the slow cooker and stir in the baby spinach until wilted. Add the cilantro and season with salt and pepper.
- Serve over rice with an additional sprinkle of garam masala and cilantro for garnish, with bread on the side for scooping up the sauce, some chutney and Greek yogurt.

- Whisk 1/2 cup water, the coconut milk, curry paste, fish sauce, ginger and lime zest in a 6- to 8-quart slow cooker. Smash the lemongrass stalk with the flat side of a knife or a meat mallet and tie in a knot. Add the lemongrass, peanuts and potatoes to the slow cooker. Top with the chicken thighs and gently press to submerge in the liquid. Cover and cook on low, 7 hours.
- Uncover the slow cooker and skim off some of the fat. Stir in the lime juice; season with salt. Break up the chicken into smaller chunks. Let stand 5 minutes, until the sauce thickens slightly; discard the lemongrass.
- Serve the curry with rice. Top with peanuts and cilantro and serve with lime wedges.
EASY SLOW COOKER CHICKEN CURRY WITH POTATOES AND COCONUT MILK
A super simple mild curry for the slow cooker. If you have cashews, they taste great sprinkled on top afterwards. Feel free to spice it up to your liking. I keep it mild so my kids will eat it, too. - Combine chicken, potatoes, bell pepper, and onion in a slow cooker.
- Stir together chicken broth, curry powder, curry paste, cumin, 1 teaspoon salt, and cayenne in a bowl and pour over ingredients in the slow cooker. Mix everything well with a wooden spoon.

STUFFED CHICKEN IN CURRY SAUCE
This recipe is sufficient for 2 chickens, stuffed with a curried rice stuffing and cooked in a tasty curry sauce. This dish is even better when prepared a day ahead as the flavours mix together and will be even tastier heated up the next day.

- Rinse chickens in cold water and dry with paper towel.
- Melt butter for curry sauce in a pot and braise onions for 5 minutes.
- Add curry powder and cook a further 5 minutes.
- Add the flour and then gradually add the chicken stock.
- Bring the mixture to the boil and add the sugar, chutney, salt and lemon juice.
- Cover and cook the sauce for half an hour on very low heat.
- Boil the rice for the filling for 5 minutes and drain.
- Braise the onions in the butter until soft, adding curry powder and rice, then salt.
- Put this filling into the chicken cavity, stuffing the neck cavity as well. Do not overstuff, as the rice will expand during cooking. Close up the cavity with toothpicks.
- Place the chickens in a casserole dish with a lid.
- Pour the curry sauce through a strainer or sieve over the chickens and cover.
- Bake in a 160 C oven for 3 to 4 hours. No need to pre- heat the oven. Baste the chickens with the sauce during cooking.
- Note: This is rustic food, perfect family meal on a cold winters day, served with extra white rice (as the stuffing is not alot, but worth making as the taste is beautiful)-
- I do not bother to strain the sauce, and serve extra sauce in a jug on the side.
- If I am in a hurry I do not make the rice stuffing - cook at 180 C for about 2 hours.

- Put onion in crock pot, followed by tomato and green pepper.
- In a bowl, whisk together the hot water, curry powder, bouillon powder, ketchup and salt; pour mixture over vegetables.
- Arrange chicken pieces over top.
- Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours.
- Transfer chicken to platter; remove vegetables with slotted spoon and place beside chicken.
- Pour broth into a separate gravy boat and serve.
