Steps:
- Pour your cans of green beans in your crock pot
- Tear up your uncooked bacon into pieces and scatter in your crock pot
- Cut up your butter into pats and place evenly around your crock pot
- Add enough water to cover your beans by a half inch
- Salt and pepper to taste
- Cover and cook on low for 8 hours
CROCK POT GREEN BEANS
This is an adaptation from my Grandma Smith's green beans. Green Beans are not crips but full of flavor. Grandma used her own home canned green beans, and cooked all day on the stove. I use canned beans when I can't get fresh. But I like the crock pot for cooking, using less energy.

- This recipe fills my crock pot that is why I use 2 pots, one for mixing one for cooking, If your cooking this on the stove you'll only need one.
- Chop bacon into small size pieces. Remember when cooking they will absorb the water and get bigger.
- In skillet over low-med heat brown bacon, transfer to big bowl or pot.
- (Use as much onion as you wish I do use more than one small one).
- Cook onion in bacon fat until translucent, you may want to remove some of the bacon fat-depends on your diet preference.
- Rub a little bacon fat around sides of crock pot.
- Drain water of store canned beans in sink, add all ingredients into over size pot mix and dump into crock pot.
- Then add water to barely cover.
- OR at this point barely cover with water in your stove pot, cover with lid cook on low all day.
- To add zip add a little crushed red pepper flakes.
- Add recommended amount of warm water, for the crock pot.
- My pot is 2 -1/2 qt and I add 3/4 to 1 full quart of water, so I add just until I can see the water line in the crock pot.
- I also add 2 strips of uncooked bacon on top.
- If you do not like bacon fat or can not use,( sub what ever kind of fat you desire, it is also good with butter .) To adjust for flavor I would use Wright's All Natural Hickory Seasoning, Liquid Smoke Concentrate. If you do not use Wright's your on your own! I have tried others but found they do not have the flavor I want, and just do not taste right.
- Cover set on low all day.a minimum of 4 hours better after 6.
- Now you might think this will serve a lot of people but remember they cook down.
- Note: Grandma cooked 2 quarts for 6 people, she would cook these all day on low on the stove.

- wash and trim the beans. Snap into 1 to 2 inch pieces.
- Chop onion and start frying bacon until almost crisp.
- wash and cut your potatoes into quarters.
- add your ham base to 1 cup of water and boil or put in microwave to boil.
- Add your green beans to the crockpot along with chopped onion, potatoes and spices.
- pour ham base broth over all and add the cooked bacon.
- cook on high for 3 1/2 hours. check for doneness on the potatoes. add more time if needed. I did stir and move all around a few times to distribute ingredients and spices.

- Bacon ... Add the bacon to a cold saute pan; then, slowly bring up the heat to medium. I also prefer a non-stick pan, if possible. If you render (cook) the bacon slowly, you don't need any oil at that point. Slowly render until cooked about half way; 4-5 minutes on medium heat. Then, add the olive oil, onions, red pepper flakes; and cook another 2-3 minutes just until the bacon is lightly crisp. The last minute, stir in the garlic; then, transfer everything to the crock pot.
- Beans ... Add the trimmed fresh beans (whole, I don't cut mine in half) to the crock pot. Then, add the thyme, all purpose seasoning, a pinch of salt and pepper to the can of tomatoes (undrained); and mix. Then, pour the tomatoes over the top of the beans.
- Note: I like more beans and less tomatoes; so, I usually use 2 1/2 lbs. But ... if you like a bit more sauce and tomatoes - stick with 2 lbs. There is NO RIGHT or WRONG.
- Cook ... Put the lid on, turn on the heat; and, let it cook. Three (3) to 4 hours is about the right time on low heat. My smaller crock took 5 hours; my newer, and larger pot took 3 1/2 hours - the newer pots cook much hotter. You just want the beans tender, and the tomatoes should be broken down and falling apart. About half way through; I like to stir, taste and re-season if necessary. Usually, I'm good; but, you may want a pinch more salt or pepper to your liking. Adjust accordingly; cover, and finish cooking. Right before serving, add the cider vinegar.
