1 lb sausage
29 oz Italian style diced tomatoes ((2-14 1/2oz cans))
30 oz cannellini beans ((2-15oz cans) drained and rinsed)
2 cloves of garlic (diced)
1/2 cup fresh basil (chopped)
2 Tablespoons Italian seasoning
1 1/2 teaspoons salt
1 teaspoon pepper
64 oz chicken or vegetable broth ((2-32 oz containers))
16 oz pkg of ditalini pasta (cooked)
Garnish: thinly slice mozzarella cheese

Steps:

  • Brown sausage and drain.
  • Add remaining ingredients except pasta, cover and cook on low for 6 hours
  • Place a serving of pasta in each bowl and pour soup over top.
  • Sprinkle mozzarella over soup and pasta.

1 onion (chopped)
3 carrots (shredded)
1 cup celery (chopped)
28 ounces diced tomatoes (undrained)
16 ounces red kidney beans (drained)
16 ounces white kidney beans (drained)
4 cups beef stock
3 teaspoons oregano
2 teaspoons salt
2 teaspoons pepper
5 teaspoons parsley
1 teaspoons tabasco sauce
20 ounces Prego traditional spaghetti sauce
8 ounces Ditalini pasta

Steps:

  • Brown ground beef in large skillet. Drain fat.
  • Add beef and all ingredients except the pasta into a large crock pot. Cook on low for 7-8 hours or high for 4-5 hours.
  • Before serving, cook pasta according to package directions. Drain and add to soup.
  • Serve in bowls topped with parmesan cheese and parsley if desired. Also, we love to serve this soup with crusty bread, breadsticks, or cornbread.

1 Tbsp Minced Garlic
3 cans Tomato Sauce (8 oz.)
1 can Diced Tomatoes (15 oz.)
3 tsp Italian Seasonings
1/2 tsp Dried Thyme
1/2 tsp Salt
1/2 tsp Pepper
1 can Dark Red Kidney Beans (15 oz., drained and rinsed)
1 can Great Northern Beans (15 oz., drained and rinsed)
1 cup Dry Ditallini Pasta
6 cups Chicken Broth
1/2 cup Shredded Parmesan Cheese
3 Tbsp Fresh Parsley (chopped)

Steps:

  • Brown the ground beef and drain the excess grease. We browned the beef in a multi-cooker slow cooker on the sauté setting but you can brown on the stovetop in a large skillet as well.
  • Place the beef, onions, carrots, celery, garlic, tomato sauce, diced tomatoes, beans, Italian Seasoning, thyme, salt, pepper and chicken broth in the crock pot.
  • Cover and cook on low for 6-8 hours.
  • Stir in the uncooked pasta for the last 30 minutes of the cook time on low.
  • Stir in the fresh parsley and serve warm topped with the parmesan cheese. Enjoy!

This is a delicious meal and comes together VERY easily! The recipe is versatile. Substitute listed beans for beans you have on hand - same with the vegetables and type of tomatoes! You can add in any additional veggies that you want, including frozen vegetables. This would also make an excellent freezer meal. Enjoy!

1 lb ground beef, browned and drained
1 tablespoon dried onion flakes
4 medium carrots, sliced in coins
2 celery ribs, sliced
2 (14 1/2 ounce) cans diced tomatoes, with juice
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can white beans, drained and rinsed
4 cups beef broth
1 (26 ounce) can spaghetti sauce
2 teaspoons oregano
1 tablespoon Tabasco sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup dry pasta, saved for later (macaroni is our favorite)

Steps:

  • Brown the beef (or you can use ground turkey if you prefer), drain, and let cool a bit while you handle the other ingredients. If you wish, you can use minced garlic and onion while browning the meat to add a little extra flavor.
  • Fill a large crock pot with the chopped carrots, celery, minced onion, rinsed beans, 2 cans of tomatoes, can of pasta sauce, beef broth, salt, pepper, oregano, and Tabasco sauce. You can also add in any extra vegetables you'd like if you have some on hand to add.
  • Add in the pound of meat and stir it all together.
  • Cook on high for 4 hours or low for 8 hours.
  • When the vegetables are tender, or about 3/4 into the cooking time, stir in the dry pasta and continue until the end of the cooking time.
  • Enjoy!

2 lbs ground beef
14 ounces carrots, slivered
12 ounces onions, chopped
14 ounces celery, diced
48 ounces diced canned tomatoes
2 cups red kidney beans
2 cups white kidney beans
88 ounces beef stock
3 teaspoons oregano
2 1/2 teaspoons pepper
5 tablespoons fresh parsley, chopped
1 1/2 teaspoons Tabasco sauce
48 ounces spaghetti sauce
8 ounces dry pasta shell macaroni

Steps:

  • Sauté beef in oil in large 10 quart pot until beef starts to brown.
  • Add onions, carrots, celery and tomatoes and simmer for about 10 minute.
  • Drain and rinse beans and add to pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles .
  • Simmer until celery and carrots are tender, about 45 minute.

  • VEGGIES AND BEEF: To a large stockpot, add the 1 tablespoon olive oil. Heat over medium heat. Once hot, add in the 3/4 cup diced carrots, 3/4 cup diced celery, and 3/4 cup onion. Cook, stirring often, until veggies are beginning to soften, about 3-5 minutes. Add in the 2 teaspoons minced garlic and cook, stirring often, for another minute. Push veggies to the sides, increase the heat to high and add in the 1 pound of lean ground beef. Allow to cook without touching for about 30 seconds. Then crumble the beef and cook until no longer pink, about 6-8 minutes. Incorporate the veggies into the beef as you crumble and cook it.
  • SEASONINGS AND TOMATOES: Add the seasonings to the beef: start with 1/2 teaspoon salt (or even less; add to preference), 3/4 teaspoon cracked pepper (or to preference), 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon dried thyme, and 1/2 teaspoon Italian seasoning. Stir for 30 seconds. Add in the 2 cans of undrained fire-roasted diced tomatoes, drained and rinsed can of kidney beans, drained and rinsed can of white beans, 2 tablespoons tomato paste, and 1 and 1/2 cup Rao's marinara sauce. Stir to combine. Add in the beef stock; start with 2 cups and add in the 3rd (or even 4th) cup if you'd like it slightly thinner (we usually stick to 2 cups for a thicker soup). Stir and then reduce the heat to low. Crumble in the beef bouillon cube and add in the bay leaf. Stir. Simmer over low heat, stirring occasionally for 30 minutes. After it's simmered for 30 minutes, stir in the 2 teaspoons red wine vinegar. Taste and adjust seasonings and salt to taste. Remove the bay leaf.
  • PASTA: About 20 minutes before the soup is done, bring a pot of water to a boil. Once boiling, add some salt to the water and add in the 3/4 cup uncooked pasta. Cook until 1 minute short of package instructions for al dente. Drain the pasta and return it to the pot. Toss with the remaining 1 teaspoon red wine vinegar and set aside until soup is ready.
