3 pounds (3 to 4 pieces) boneless, skinless chicken breasts
2 teaspoons taco seasoning
1 teaspoon garlic powder
1 package (8 ounces) cream cheese, softened
5 jalapenos, sliced
1 cup cheddar cheese, shredded
4 slices bacon, cooked and crumbled

Steps:

  • Place the butter in the bottom of the crockpot and arrange the chicken breasts in a single layer.
  • Sprinkle the chicken with the taco seasoning and garlic powder.
  • Spread the softened cream cheese evenly on top of the chicken to cover and then the sliced jalapenos.
  • Cover with the lid and cook for 3 to 4 hours on HIGH or 6 to 8 hours on LOW, or until a thermometer inserted in the center reads 165 F.
  • Add the shredded cheese and crumbled bacon on top, as well as additional jalapeno slices.
  • Cover with the lid and continue to cook on HIGH for another 15 to 20 minutes or until the cheese is melted.
  • Serve hot.

1 tablespoon chili powder
1/8 teaspoon salt
1/2 cup reduced-sodium chicken broth
2 tablespoons lemon juice
1/3 cup sliced pickled jalapeno pepper, drained
1 tablespoon cornstarch
1 tablespoon cold water
1 (8 ounce) package reduced-fat cream cheese, softened and cut into cubes (Neufchatel)
2 slices regular bacon (optional) or 2 slices turkey bacon, crisp-cooked, drained, and crumbled (optional)

Steps:

  • Sprinkle chicken with chili powder and salt. Arrange chicken, bone sides down, in a 4 1/2- to 6-quart slow cooker. Pour broth and lemon juice around chicken. Top with drained jalapeno pepper.
  • Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours.
  • Transfer chicken and jalapeno pepper to a serving platter, reserving cooking liquid. Cover chicken and keep warm.
  • If using low-heat setting, turn to high-heat setting. For sauce, in a small bowl, combine cornstarch and the water; stir into cooking liquid. Add cream cheese, whisking until combined. Cover and cook about 15 minutes more or until thickened. Serve chicken with sauce. If desired, sprinkle with bacon.

1/2 cup chopped onion
2 lb boneless skinless chicken breast
1/4 teaspoon salt
1/2 cup salsa verde
1 can (10.5 oz) Muir Glen™ diced tomatoes, undrained
2 tablespoons butter
3 slices diced cooked bacon
2/3 cup Progresso™ plain bread crumbs
2 tablespoons butter
1 cup shredded Cheddar cheese (4 oz)
1/4 cup milk
4 large buns
1/2 cup pickled sliced jalapeño chiles, if desired

Steps:

  • In bottom of 6-quart slow cooker, place chopped onion; top with chicken breast. Season chicken with salt.
  • Pour salsa verde and diced tomatoes on top of chicken. Cover; cook on High heat setting 4 hours.
  • Shred chicken with 2 forks. Set slow cooker to lowest setting, and cover until ready to assemble sandwiches.
  • In 1-quart saucepan, melt 2 tablespoons butter over medium heat. Add diced bacon and bread crumbs, stirring 2 to 3 minutes, until lightly toasted. Set aside.
  • In another 1-quart saucepan, heat Cheese Sauce ingredients over medium-low heat, stirring constantly, until smooth.
  • On large buns, layer pulled chicken, cheese sauce, toasted bacon bread crumbs and pickled sliced jalapeño chiles.

3 medium jalapeno peppers
½ cup shredded Monterey Jack cheese
½ small onion, chopped
2 ounces cream cheese, softened
2 cloves garlic, crushed
¼ teaspoon ground cumin
4 (5 ounce) skinless, boneless chicken breast halves
cooking spray
salt to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place jalapeno peppers on a microwave-safe plate. Microwave on high power until soft but still plump, 1 to 2 minutes. Remove and discard seeds. Dice peppers.
  • Mix diced peppers, Monterey Jack cheese, onion, cream cheese, garlic, and cumin together in a bowl.
  • Make a pocket in each chicken breast, being careful not to cut through the sides or bottom, as follows: Make a vertical slice in the top center of each breast, starting about 1/2 inch in from each edge. Starting inside the vertical slit, cut horizontally into the chicken breast in both directions; this should leave you with a nice pocket.
  • Press 1/4 of the pepper-cheese mixture into each breast. Close and secure with toothpicks. Spray chicken breasts with cooking spray and season with salt.
  • Place chicken on the preheated grill with toothpicks facing upwards. Grill for 12 minutes, then turn and cook until no longer pink in the center and the juices run clear, 3 to 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove toothpicks before serving.
