VEGAN BISCUITS AND GRAVY
Flaky vegan biscuits with thick, peppery mushroom gravy! A flavorful, healthy, satisfying 30-minute vegan breakfast.

- Preheat oven to 450 degrees F (232 C) and prepare biscuits. Add to baking sheet. Place in the oven once you get to step 6 (when adding the walnuts to the gravy).
- Add butter or olive oil to a cast iron skillet or large saucepan over medium heat. Then add garlic, onion, mushrooms, and walnuts and season with a healthy pinch each salt and pepper. Cook for 3-4 minutes or until the onions are translucent. Near the end of cooking, add the herbs (optional).
- Slightly reduce heat. Add flour and whisk to coat. Cook for 1 minute.
- Then slowly whisk in broth then add almond milk 1/4 cup (120 ml) at a time, building up to desired thickness (it will continue thickening as it cooks). Season again with a pinch each salt and pepper.
- Cook until thickened, stirring frequently, over medium-low heat. Taste and adjust seasonings as needed. I go heavy on the pepper out of preference.
- Keep on low until you're ready to serve, adding more almond milk as needed if it gets too thick. (Bake biscuits for 10-15 minutes.)
- To serve, split biscuits and top with gravy. Store leftovers separately - store gravy covered in the fridge for up to 3-4 days, and store biscuits (once completely cooled) at room temperature in a tupperwear or plastic bag. Reheat in a 350-degree F (176 C) oven to keep flakiness intact.

VEGAN BREAKFAST BISCUIT GRAVY
For yummy biscuits and gravy! A good vegan comfort food for a hearty breakfast. We make this with our breakfast biscuits. Turn this into "sausage" gravy by adding Griller Crumblers or another vegan sausage/beef substitute. We usually always use crumblers with our gravy. We have a recipe for Recipe #252301 but I haven't tried using it with this gravy yet. Found this on Patricia LaVanture's cooking program. Enjoy!

Steps:
- In saucepan, bring the 1 cup water to a boil.
- Blend the remaining ingredients except vegan sausage or crumbles until creamy, adding the flour at the end of the blending time.
- Add the blended mixture to the boiling water, stirring with a whisk until mixture comes back to a boil.
- Stir in crumbles. Serve piping hot over biscuits or toast.

- Begin by making the buttermilk biscuits according to these instructions. Once the biscuits are in the oven, start making the gravy.
- Break apart the sausage into small pieces and add to a heavy bottom pan set over medium-high heat. I recommend using a cast iron skillet. Cook the sausage for 3-5 minutes, until it is brown on all sides. The time will depend on the type of vegan sausage you use.
- Slowly add the flour, stirring occasionally, until the flour is completely absorbed into the sausage. Turn the heat to medium-low and slowly add the non-dairy milk, stirring constantly. Stir for 5-10 minutes until the gravy begins to be noticeably thicker. It should clear the bottom of the skillet when stirred. Once they gravy has reached your desired thickness, remove from heat. Note: if your gravy is too thick, you can add an additional 1/4 to 1/2 cup of milk.

- Make the Tempeh Sausage Crumbles: In a medium-large pan, crumble the tempeh and add enough water to almost cover it. Over medium-high heat, simmer the tempeh until most of the water is absorbed, about 10 minutes. Add the salt, spices and brown sugar and cook over medium heat for 5 minutes, stirring frequently.
- Make the Gravy: Sprinkle the flour over the sausage crumbles, then slowly pour the non-dairy milk into the pan, stirring as you pour. Cook, stirring, until the mixture is thickened.
- Once the biscuits are done cooking, slice in half, pour a generous amount of gravy on the biscuits and serve!
