BLT CATFISH SANDWICHES

A classic gets a rockin' new twist with lemon-grilled catfish and tangy chili sauce instead of mayo. I love to serve these sandwiches with sweet red pepper strips and grilled potato wedges. They're always a huge hit! -Mary Ann Dell, Phoenixville, Pennsylvania

Number Of Ingredients 12

2 tablespoons chili sauce
2 tablespoons ketchup
1/4 teaspoon hot pepper sauce
4 tablespoons lemon juice, divided
4 catfish fillets (6 ounces each)
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon salt
8 slices whole wheat bread, toasted
8 cooked bacon strips
4 lettuce leaves
4 thin slices tomato
4 slices red onion

Steps:

  • In a small bowl, combine the chili sauce, ketchup, pepper sauce and 2 tablespoons lemon juice; set aside., Drizzle remaining lemon juice over fillets; sprinkle with lemon-pepper and salt. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack., Grill catfish, covered, over medium-hot heat or broil 4 in. from the heat for 3-5 minutes on each side or until fish flakes easily with a fork., Layer four slices of toast with catfish, bacon, lettuce, tomato and onion. Spread sauce mixture over remaining toast slices; place on top.

This is a yummy and easy sandwich to prepare- and if you love catfish you will like this recipe. ;which I found in The Best of the Best in Nevada Cookbook. This would have been one of my dad's favorite's as he was an avid fisherman.

FISH PREP:
1 large egg,beaten
1/4 teaspoon(s) salt
1 pinch(es) cayenne pepper
1/2 cup(s) all purpose flour,seasoned with salt and pepper
1/2 cup(s) cornmeal
1 pound(s) catfish fillets(4 oz. each)
4 - soft hoagie rolls, split
1/2 cup(s) shredded or 4 lettuce leaves
1 large ripe tomato, sliced thin
4 slice(s) red onion thinly sliced
8 slice(s) or more crispy cooked bacon
- vegetable or canola oil for frying fish
SAUCE:
1/3 cup(s) mayonnaise, not salad dressing
1 1/2 tablespoon(s) sweet pickle relish
2 teaspoon(s) bottled capers, drained and diced
1 1/2 teaspoon(s) dijon mustard
1 1/2 tablespoon(s) fresh lemon juice
1 1/2 tablespoon(s) cocktail sauce
1 teaspoon(s) lemon zest
- salt and pepper to taste
directions - combine all sauce ingredients and chill covered for 1 hour.

Steps:

  • Beat eggs with salt and cayenne, Place flour, cornmeal and egg mixture in 3 separate shallow bowl. Dredge catfish in flour; shake off excess. Then in egg mixture, and then in the cornmeal.
  • Heat 1 inch of oil in electric skillet to 375^. Fry fish 2 to 4 minutes on each side or until it is done inside and crispy golden on the outside. Drain on paper towels.
  • Assembly: On each bottom 1/2 of roll, layer lettuce, tomatoes, onion 2 slices of bacon, fish and top with cocktail sauce. Serve with fries or chips.

2 leaves lettuce
2 slices tomato
2 slices bread, toasted
1 tablespoon mayonnaise

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.
