This Taco Chili is a super easy freezer meal - just throw in the Crockpot when ready! Perfect over corn chips or rice.

1 lb cooked ground beef
1 medium onion (, chopped)
1 can corn (, drained)
8 oz can tomato sauce
2 (14) oz cans diced tomatoes
1 small can green chilies
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • Place all the ingredients in a freezer bag, stir well, and freeze until ready.
  • Place in Crockpot and cook on high for 1 hour.
  • Cook on low for 4-6 hours.
  • Serve with shredded cheese, cilantro, chopped green onions, corn chips, or your favorite toppings!

2 pounds ground beef
1 can (15 ounces) black beans
1 can (16 ounces) kidney beans
1 can (15 ounces) pinto beans
1 can (14 ounces) hominy
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 envelope ranch salad dressing mix
1 envelope taco seasoning
1/2 teaspoon pepper
1 can (4 ounces) chopped green chiles
2 cans (14-1/2 ounces each) diced tomatoes, undrained
Optional toppings: corn chips, sour cream and shredded cheddar cheese

Steps:

  • In a large skillet, cook and crumble beef over medium-high heat until no longer pink, 8-10 minutes. Using a slotted spoon, transfer beef to a 5-qt. slow cooker., Rinse and drain beans and hominy. Add to beef, along with canned tomatoes and green chilies, tomato sauce, onion, the dressing and seasoning mixes and pepper. Puree green chilies and remaining diced tomatoes in a covered blender until smooth; stir into beef mixture., Cook, covered, on low until flavors are blended, 6-8 hours. Serve with toppings as desired., Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

olive oil spray
2 pounds lean ground beef
1 medium yellow onion (diced)
3 cloves garlic (minced)
kosher salt (to taste)
4 tablespoons taco seasoning
1 (15 ounce) can pinto beans (rinsed and drained)
1 (15 ounce) can black beans (rinsed and drained)
1 (28 ounce) can crushed fire-roasted tomatoes
3/4 cup frozen sweet corn (or fresh)
2 (4 ounce) cans diced green chiles
1 roma tomato (seeded and diced)
1/2 large red bell pepper (diced)
1/2 large orange bell pepper (diced)
1/2 small red onion
2 tablespoons minced fresh cilantro
1/4 teaspoon kosher salt
1/2 lime (juiced)

Steps:

  • In a large, deep-sided skillet, spray with olive oil. Add in the ground beef, onion and garlic with a pinch of kosher salt and heat over medium. Use a wooden spatula to break up the beef and cook until browned and no longer pink.
  • Drain the fat from the pan and add in taco seasoning, stir to combine and then transfer the beef/onion mixture to your slow cooker.
  • Add in the beans, chiles, corn, crushed tomatoes. Stir to incorporate all of the ingredients.
  • Cook on high for 3 to 4 hours, or low for 6 hours.
  • Serve in bowls topped with greek yogurt or sour cream, shredded cheese, pepper pico, black olives, green onions and corn chips.
  • Add the tomato, peppers, red onion, cilantro, salt and lime juice into the bowl. Add minced jalapeño for some heat.
  • Toss to combine. Cover and refrigerate until ready to serve.

1 1/2-2 lbs lean ground beef
1 medium onion, chopped
1 1/4 ounces taco seasoning
28 ounces diced tomatoes
10 ounces diced tomatoes with green chilies
16 ounces pinto beans, rinsed and drained
15 ounces pinto beans in chili sauce
1 cup frozen whole kernel corn
shredded cheese (mozzarella, monterey jack or ceddar)
slightly crushed tortilla chips

Steps:

  • In a large skillet, cook ground beef and onion, one-half at a time, till meat is browned and onion is tender.
  • Drain off fat.
  • Transfer to a 3 1/2-quart to 5-quart crockery cooker.
  • Stir in dry taco seasoning, diced tomatoes, diced tomatoes with green chilies, pinto beans, chili beans in chili sauce, and corn.
  • Cover.
  • Cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
  • Sprinkle each serving with some cheese and chips.
