Enjoy a new take on a veggie casserole using Fiber One® original bran cereal for the crunchy topping.

1 bag (24 oz) frozen broccoli & three cheese sauce
1/4 cup coarsely chopped drained roasted red bell peppers (from 7-oz jar)
3/4 cup Fiber One™ original bran cereal
2 tablespoons grated Parmesan cheese
1/2 teaspoon Italian seasoning
1 tablespoon olive or vegetable oil

Steps:

  • Heat oven to 350°F. In ungreased 8-inch square microwavable dish or 2-quart microwavable casserole, place broccoli & cheese sauce. Microwave on High 7 to 8 minutes or until cheese is melted and mixture is very hot; stir well. Stir in roasted peppers.
  • Place cereal in resealable food-storage plastic bag; seal bag and slightly crush with rolling pin or meat mallet (or slightly crush in food processor). In small bowl, mix crushed cereal and remaining ingredients until blended. Sprinkle over broccoli mixture in casserole.
  • Bake 20 to 25 minutes or until broccoli is crisp-tender and topping is crisp.

2 tablespoons onion soup mix
1/2 cup water chestnut, chopped
1/4 cup butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Put broccoli in the bottom of a casserole dish.
  • Cover with the soup mix and the water chestnuts.
  • Pour the melted butter all over making sure to get it over the dry soup really well.
  • Bake at 350 for 25-30 minutes.

1 cup water
1/2 teaspoon salt
1 cup instant rice
1/4 cup butter
1/4 cup chopped onion
1/4 cup chopped celery
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
3 cups frozen chopped broccoli, thawed
1/2 cup diced process cheese (Velveeta)

Steps:

  • Bring water and salt to a boil. Add rice; cover and remove from heat. Let sit for 5 minutes. Melt butter in skillet; saute onion and celery until tender. In large bowl, combine rice, celery and onion with remaining ingredients. Pour into a greased 1-1/2-qt. casserole. Bake at 350° for 1 hour.

1 (16 ounce) package frozen broccoli, thawed
2 tablespoons butter
¼ teaspoon salt
2 tablespoons all-purpose flour
2 cups milk
1 (8 ounce) package cream cheese, cubed
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 4 to 6 minutes; drain.
  • Melt butter in a large saucepan over medium heat. Stir in salt, flour, and milk. Cook, stirring constantly, until thick and bubbly. Stir in cream cheese until melted. Remove from heat, and stir in broccoli.
  • Sprinkle 1/2 cup of crushed crackers over the bottom of a 1 1/2 quart casserole dish. Slowly pour the broccoli mixture into the dish, and top with remaining crushed crackers.

4 cups boiling water
1 1/3 cups milk
2 tablespoons butter
1 1/2 teaspoons Dijon mustard
1 bag (12 oz) frozen broccoli, cooked as directed on bag
3 cups cheese-flavored crackers, crushed

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Make potatoes as directed on box for stove-top directions. Stir in mustard. Add half the potatoes to baking dish, spreading evenly. Sprinkle broccoli over top. Pour remaining potatoes on top of broccoli. Sprinkle crushed crackers on top.
