Steps:
- Preheat oven to 350 degrees F.
- Cream together the butter, sugar and vanilla. Beat the eggs slightly; then add to the butter mixture and mix well. Sift flour, salt and baking soda; then add slowly to the moist ingredients and mix thoroughly. Mix in the toffee bits, oatmeal, coconut and nuts.
- Drop dough by the teaspoonful onto an ungreased baking sheet and bake for 15 minutes.

- Layer one cup biscuit mix, brown sugar, salt, vanilla powder and remaining biscuit mix on top.

- Creating the Gift in a Jar:
- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the flour, salt, baking soda, chocolate chips, brown sugar and then toffee bits - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
- Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
- CHOCOLATE CHUNK TOFFEE COOKIES GIFT TAG:.
- Additional ingredients to be added by the recipient: 1/2 cup butter, softened, 1 egg and 1 tsp vanilla extract.
- COOKIE INSTRUCTIONS:
- Preheat oven to 375.
- In a large bowl, blend the butter, egg and vanilla extract.
- Add the contents of the jar, and stir until well mixed.
- Drop the dough by heaping teaspoonfuls onto an ungreased baking sheet, spacing the cookies about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are light brown in color.

CRUNCHY TOFFEE BUCKEYES

Steps:
- Combine the peanut butter, vanilla and salt in a large bowl. Beat with an electric mixer, adding about 1/2 cup confectioners' sugar at a time, until all the sugar is incorporated and the mixture is stiff and dry to the touch. Mix the toffee by hand.
- Roll the mixture into 1-inch balls (about 32) and place on plates. Insert a toothpick into the center of each ball and freeze until firm, 1 hour.
- Once the balls are frozen, put the chopped chocolate in a small, heat-safe bowl. Set the bowl over a saucepan filled with 1/2 inch of barely simmering water (make sure the bottom of the bowl does not touch the water) and heat, stirring, until melted. Remove the balls from the freezer and, one at a time, dip them in the chocolate, leaving a small round of peanut butter still visible. Let the excess chocolate drip off before returning the balls to the plate. Refrigerate until ready to serve. Remove the toothpick before serving.
COUNTRY OATMEAL COOKIE IN A JAR
My boyfriend and I made 2 dozen of these jars as Christmas gifts this year, and they were a big hit. You can substitute raisins for chocolate chips, but the chocolate makes for a nice change.

- Using a 1 quart or 1 liter jar, layer in the ingredients in the order given. Pack down the jar after each addition. Put the lid on, and cover with an 8 inch circle of fabric. Secure the fabric over the lid using a rubber band, then cover the rubber band by tying a nice piece of ribbon or raffia around the lid. Attach a tag to the ribbon with the following instructions:
- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, cream together 3/4 cup of softened butter, with 2 eggs and 1 teaspoon of vanilla. Add the entire contents of the jar, and mix by hand until combined. Drop dough by heaping spoonfuls onto an unprepared cookie sheet. Bake for 12 to 15 minutes in the preheated oven.

I played with a King Arthur flour recipe and got these crunchy buttery delights. Yum! You can use all whole wheat flour if you don't have barley flour but the barely flour gives it a milder taste. To ensure crunchiness, be sure to bake these cookies thoroughly; they should be golden brown all over, without any hint of softness in the center. They also stay rounded and don't spread much.

- Preheat oven to 350°F Lightly grease 2 baking sheets.
- Beat the butter, oil sugars, vanilla, salt and instant coffee in a large bowl until smooth.
- Beat in the vinegar, egg, baking soda and baking powder until well combined.
- Stir in the flours until well combined.
- Stir in the chocolate chips, toffee bits and pecans, if desired. *The dough wil appear oily.
- Scoop out 1 inch balls and place on baking sheets. They don't need to be spaced far apart because they don't spread much. *I tried flattening some but didn't like them as much.
- Bake 14-16 minutes, reversing trays half way through, until golden brown all over with no hint of softness in the center.
- Remove from oven and allow cookies to cool 5 minutes on baking sheets before transferring to racks or paper bags to cool completely.
