2 tablespoons chopped fresh sage leaves or 2 tablespoons dried sage leaves
2 garlic cloves, finely chopped
1 pound Brussels sprouts, cut in half
1 pound parsnip, peeled and cut into 2-inch pieces
1/2 pound baby-cut carrot, if desired
1 medium butternut squash, peeled, seeded and cut into 1-inch pieces (2 pounds)

Steps:

  • Heat oven to 375°F. Melt butter in 1-quart saucepan over medium heat. Stir in sage and garlic; remove from heat.
  • Place remaining ingredients in ungreased large roasting pan. Pour butter mixture over vegetables; stir to coat.
  • Cover and bake 25 to 35 minutes, stirring occasionally, until vegetables are crisp-tender.

4 beets, peeled and cut into 3/4-inch cubes
2 new potatoes, peeled and cut into 3/4-inch cubes
2 parsnips, peeled and cut into 3/4-inch cubes
2 turnips, peeled and cut into 3/4-inch cubes
1 rutabaga, peeled and cut into 3/4-inch cubes
2 tablespoons olive oil
salt and ground black pepper to taste
⅓ cup vegetable broth
2 tablespoons balsamic vinegar
1 pinch Italian seasoning, or to taste
1 (4 ounce) package goat cheese, crumbled

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Spray a baking sheet with cooking spray.
  • Toss beets, potatoes, parsnips, turnips, and rutabaga with olive oil, salt, and pepper in a large bowl.
  • Spread seasoned vegetables over prepared baking dish.
  • Roast vegetables in the preheated oven until beets are easily pierced with a fork, about 40 minutes.
  • Stir vegetable broth, balsamic vinegar, and Italian seasoning together in a small bowl.
  • Pour broth mixture over vegetables and continue roasting until liquid has evaporated, about 10 minutes more.
  • Transfer roasted vegetables to a bowl and toss with goat cheese.

A colourful and hearty vegetarian supper dish for autumn - made in one roasting tin, from Roz Denny

Number Of Ingredients 7

1 large butternut squash (about 600-700g/1lb 5oz - 1lb 9oz in weight)
1 medium red onion
6 tbsp olive oil
1 large sprig fresh sage
1 large courgette
1 tbsp balsamic or sherry vinegar
100g Lancashire cheese

Steps:

  • Preheat the oven to fan180C/conventional 200C/ gas 6. Using a sharp knife, cut the squash in half and scoop out the seeds. Cut the halves into smaller pieces so you can peel them more easily. Chop the flesh into big bite-sized pieces - they don't have to be neat.
  • Halve the onion and trim the root end leaving a little on to hold the segments together. Peel and then cut each half into four wedges. Scatter the squash and onion in a large roasting tin so they have plenty of room to roast, drizzle over 5 tbsp of the oil and toss together. Strip the sage leaves from the stem and roughly chop - you should have about 2 tbsps. Scatter over the vegetables and season. Roast for 20 minutes, stirring once halfway through.
  • Meanwhile, slice the courgette thickly and toss with the remaining oil. Remove the roasting tin from the oven and push the partly cooked squash and onion to the side. Put the courgette slices flat on the base and season. Roast for a further 10 minutes, until all the vegetables are tender.
  • Remove tin from the oven, sprinkle the vinegar over the vegetables and toss. Crumble over the Lancashire cheese. Toss lightly so the cheese melts a little and serve.

2 medium unpeeled Yukon gold or red potatoes
1 medium red onion
1 large dark-orange sweet potato or yam (about 1/2 lb)
1 clove garlic or 1/8 teaspoon garlic powder
Cooking spray for greasing pan
1 lb ready-to-eat baby-cut carrots
2 tablespoons olive or vegetable oil
1 tablespoon chopped fresh or 1 teaspoon dried sage leaves

1/2 teaspoon salt

Steps:

  • Wash the squash. Using a chef's knife, carefully cut off the bottom and stem ends of the squash. Cut the narrow part (neck) from the rounded bottom part of the squash; cut the rounded bottom in half. Using a spoon, scoop out the seeds and fibers from the bottom halves and discard. Using a sharp vegetable peeler, remove the peel from the neck and 2 bottom halves. Cut squash into 1-inch pieces.
  • Scrub the potatoes thoroughly with a vegetable brush and water to remove any dirt, but do not peel. Cut each potato into eighths. Peel the onion; cut into 16 wedges and separate pieces. Peel the sweet potato and cut into 1-inch pieces. Peel and finely chop the garlic.
  • Heat the oven to 425°F. Spray a 15x10x1-inch pan with the cooking spray. Place the squash, potatoes, onion, sweet potato and carrots in the pan. Pour the oil over the vegetables. Sprinkle with the garlic, sage, rosemary and salt. Stir to coat vegetables.
  • Roast uncovered 35 to 45 minutes, stirring occasionally, until vegetables are crisp-tender when pierced with a fork.

1 pound shallots (about 24), peeled and trimmed
5 tablespoons olive oil
1 bay leaf
1/4 teaspoon dried thyme, crumbled

fresh thyme sprigs for garnish if desired

Steps:

  • In a bowl toss together the potatoes, quartered, the shallots, 4 tablespoons of the oil, the bay leaf, the dried thyme, the garlic, and salt and pepper to taste. Spread the vegetables in an oiled large roasting pan and roast them in the middle of a preheated 375°F. oven, shaking the pan every 5 to 10 minutes, for 25 minutes. The best roasted vegetable recipe ever - originally from British chef Nigella Lawson's TV show. Original recipe called for halloumi cheese, but as I have trouble finding it I use any salty cheese - goat feta is wonderful; your suggestions welcomed. Have served it at many dinner parties to rave reviews, but simple enough for a weeknight. Use a large (9x11) pan - it makes a deceptively large amount. Great reheated the next day or in pitas for lunch. Warning - once you try it, you'll get cravings. Goes great with any grilled or roasted meat or serve it as a vegetarian meal.

1 large sweet potato
1 -2 large red potatoes
1 red onion
1 yellow bell pepper
1 red bell pepper
1/2 head garlic (several cloves)
4 tablespoons olive oil (I try to use slightly less, but if you don't use enough, the veggies can be too dry.)
black pepper
125 g feta cheese, crumbled (or other salty cheese such as jarlsberg, halloumi)

Steps:

  • Preheat oven to 400 degrees.
  • Peel and cut the sweet potato into 2 inch cubes and put it in the pan. (Add each ingredient to the pan as you go.).
  • Cut the red potato(es) into slightly smaller cubes 1-1/2 cubes (because they are denser than the sweet potato so they need to be smaller to cook in the same amount of time).
  • Cut the red onion in the middle, then cut each half into 4-6 segments, discarding the dry outer skin. (the onion should still stay together in large chunks and will still have the end bit on).
  • Cut peppers into 1 inch chunks (discard seeds and stem).
  • Separate the cloves of garlic but no need to remove the skin.
  • Add the oil and mix everything together with your hands (it's fun).
  • Season with pepper, but no salt (it will make the dish watery).
  • Cook for 45-55 minutes until vegetables are cooked through and the tinged with brown.
  • Top with cheese and broil 5 minutes or so until brown.
  • (If you want to omit the cheese, you can add a bit of coarse salt before serving.).
  • Serve it right out of the pan at the table. Couldn't be easier or more delicious!
