1 Tbsp. olive oil
½ sweet onion (finely diced)
2 cloves garlic (crushed)
4 cups spinach (finely chopped)
¾ cup artichoke hearts (coarsely chopped)
6 eggs (large)
½ cup almond milk (cashew or soy milk)
1 tsp salt
¼ tsp. pepper
½ cup Mozzarella cheese
¼ cup Parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • Sauté olive oil and onion in a medium-sized skillet over medium heat for 4-5 minutes.
  • Add crushed garlic and continue sautéing for 1-2 minutes.
  • Mix in chopped spinach and sauté for 2-3 minutes, or until spinach has wilted.
  • In a large bowl whisk together eggs, milk, salt, and pepper.
  • Evenly spread room temperature sautéed spinach and chopped artichokes in a 9-10 inch round pie dish that has been sprayed liberally with non-stick cooking spray.
  • Pour in egg mixture and sprinkle both cheeses on top.
  • Bake for 27-30 minutes, or until the top turns golden brown.*
  • Let crustless quiche sit for 5-10 minutes before serving and enjoy!

3 large eggs
1 cup half-and-half
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 5-ounce package baby spinach
1 cup frozen artichoke hearts, thawed and roughly chopped
1/3 cup crumbled garlic-herb goat cheese (about 2 ounces)
1 prepared 9-inch pie crust, thawed if frozen
10 grape tomatoes, halved
1 tablespoon red wine vinegar
1/2 teaspoon dijon mustard
4 cups Italian salad blend

Steps:

  • Put a baking sheet in the lower third of the oven and preheat to 425 degrees F. Whisk the eggs, half-and-half, 3/4 teaspoon salt and ¼ teaspoon pepper in a large bowl and set aside.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the spinach, artichoke hearts and 2 pinches salt. Cook, stirring, until the spinach is wilted and the skillet is dry, about 1 minute. Remove the vegetables to a plate lined with a few layers of paper towels; let cool slightly. Carefully pull up the sides of the paper towels and squeeze out most of the liquid; stir the vegetables into the egg mixture.
  • Scatter the goat cheese in the bottom of the pie crust. Pour in the egg mixture, then arrange the tomatoes cut-side up in the eggs. Season with pepper. Carefully place the quiche on the hot baking sheet and bake until set, about 30 minutes.
  • Meanwhile, whisk the vinegar and mustard in a medium bowl; whisk in the remaining 1 tablespoon olive oil until smooth. When the quiche is almost done, add the salad mix to the bowl and toss with the vinaigrette. Season with salt and pepper.
  • Cut the quiche into wedges and serve with the salad.

A crustless (yes, crustless!) quiche packed with spinach, artichoke, garlic, and melted cheese. Both gluten-free and vegetarian, this deliciously creamy quiche is healthy and perfect for any meal.

Number Of Ingredients 9

1 teaspoon olive oil
Nonstick cooking spray
2 cloves of garlic, minced
4 cups raw spinach, packed
1 (13 oz) can of artichoke hearts (about 8-10 large artichoke hearts)
4 large eggs
1 cup whole milk
1 cup cheese
¼ teaspoon salt, more to taste

Steps:

  • Preheat the oven to 350oF. Spray the 9 inch round cake pan with nonstick cooking spray.
  • Add about a teaspoon of olive oil to a medium sized skillet over medium to low heat. Allow the olive oil to heat for about a minute before adding in the minced garlic. Stir the garlic using a spatula to prevent the garlic from becoming burnt.
  • When the garlic starts to turn brown on the edges, add the spinach leaves. Cook the spinach for about a minute or two until the leaves begin to wilt. Remove the skillet from heat and drain the water.
  • Wait until the spinach has cooled, then squeeze the excess water from the spinach. Next, blot the spinach dry with a paper towel. It's important for the ingredients to be as dry as possible to prevent the quiche from becoming soggy.
  • Evenly arrange the garlic spinach mixture at the bottom of the pan.
  • Next, drain the artichoke hearts. Squeeze out all the water from the artichoke hearts. Chop them up into small pieces. Then use a paper towel to blot the artichoke dry. Place the chopped artichoke hearts over the garlic spinach mixture. Sprinkle cheese over the ingredients, and set aside for now.
  • Crack four eggs into a large bowl, and beat them with a whisk. Add in the milk and salt, and whisk to evenly incorporate. Pour the egg and milk mixture over the spinach, artichoke, and cheese.
  • Use a spatula to smooth out the surface.
  • Bake the quiche in the oven for about 45-60 minutes. Check the quiche at around 45 minutes to see if the quiche has turned a golden brown on the surface, and is firm and no liquidy, especially in the center.
  • Allow the quiche to cool for a few minutes before cutting into it.
  • Serve the quiche warm.

1/4 teaspoon pepper
1/4 teaspoon cayenne
3 eggs
1 1/2 cups milk
3/4 cup asiago cheese, grated
1/4 cup parmigiano-reggiano cheese, grated
1 pie shell

Steps:

  • Preheat oven to 375°F.
  • Sauté garlic and shallots in butter until softened, 1-2 minutes.
  • Add spinach and sauté until wilted.
  • Add chopped artichokes, pine nuts, seasonings and remove from heat.
  • Pour into a large bowl to cool.
  • Add eggs, milk and cheeses, stirring to mix everything well.
  • Add to pie shell.
  • Bake 45 minutes to 1 hour or until set.

1 cup chopped onion
1 cup sliced fresh mushrooms
1 tablespoon vegetable oil
1 package (10 ounces) frozen chopped spinach, thawed and well drained
2/3 cup finely chopped fully cooked ham
5 large eggs
3 cups shredded Muenster or Monterey Jack cheese
1/8 teaspoon pepper

Steps:

  • In a large skillet, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. 1/4 cup breadcrumbs or 2 slices bread
6 eggs or 1 1/2 cups egg substitute
2 cups grated cheddar cheese
14 ounces artichoke hearts, drained and chopped, slightly
1 small onion, chopped
4 garlic cloves, minced
1/2 teaspoon italian seasoning
salt and pepper

Steps:

  • Preheat oven to 325 degrees.
  • Saute the onion and garlic in 2 Tbsp margarine, for about 3 minutes.
  • Add the artichoke hearts, and saute briefly.
  • Add the Italian seasoning, salt, and pepper.
  • In a bowl, mix the eggs, cheese, and breadcrumbs; add sauteed veggies.
  • Spray an 8X8 pan with cooking spray, add the quiche mixture, and bake for 30 minutes.

2 tablespoons fat free sour cream
1 tablespoon salt
2 1/2 cups fat-free half-and-half
8 eggs
1 tablespoon pepper
1 pinch nutmeg
1 prepared pie crust
3/4 cup chopped spinach
3/4 cup artichoke heart
3 cups shredded part-skim mozzarella cheese
1/2 cup reduced fat parmesan cheese

Steps:

  • For the batter:
  • In a medium mixing bowl, beat together the sour cream and the salt. Add the half-and-half, eggs, pepper, and nutmeg.
  • For the crust:
  • Preheat the oven to 350 degrees F.
  • Place a pie tin on top of the pie crust and turn the crust upside down. Place this inverted pie crust in the oven to bake for approximately 10 minutes or until edges begin to lightly brown. Remove from oven and allow to cool.
  • To assemble:
  • Mix the filling ingredients together. Fill the blind baked pie shell with the filling. Slowly pour some of the batter over the top of the filling, being careful not to have the batter flow over the edges of the crust. Bake for 45 minutes until puffed and browned.
