EASY BREAD ROLLS

Easy bread rolls image

Bake these simple white bread rolls for sandwiches, burger buns or to dunk in soup. Using only a handful of ingredients, bread-making has never been so easy

Provided by Barney Desmazery

Categories     Side dish, Snack

Time 1h

Yield Makes 8

Number Of Ingredients 5

500g strong white bread flour , plus extra for dusting
7g sachet fast action yeast
1 tsp white caster sugar
2 tsp fine salt
1 tsp sunflower oil , plus extra for the work surface and bowl

Steps:

  • Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
  • Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
  • Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
  • Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

Bread Machine Crusty French Bread image

This fabulous French bread recipe is mixed in the bread machine and then baked to crusty perfection in the oven.

Provided by Diana Rattray

Categories     Dinner     Lunch     Side Dish     Bread

Time 3h55m

Number Of Ingredients 11

1 1/2 cups room temperature water
1 tablespoon vegetable oil (or olive oil ; plus more for baking)
2 tablespoons dry milk
2 cups all-purpose flour
2 cups bread flour
2 teaspoons sugar
2 teaspoons salt
2 teaspoons active dry yeast
2 tablespoons medium-grind cornmeal (for baking)
1 egg white
1 tablespoon cold water

Steps:

  • Gather the ingredients.
  • Add the room temperature water, oil, dry milk, all-purpose flour, bread flour, sugar, salt, and yeast to the bread machine according to your manufacturer's preferred order.
  • Use the French bread setting on your machine but remove the dough after the last kneading cycle before the baking cycle begins. Or use the dough cycle, punch down the dough to let air escape, let it rise again (45 minutes to 1 hour), knead lightly, and let it rise again (another 45 minutes to 1 hour) before forming into loaves.
  • Spray or lightly oil a large cookie sheet and sprinkle with the cornmeal.
  • To form the loaves, transfer the dough (it will be soft) to a lightly floured board. Sprinkle with a little all-purpose flour.
  • Cut the dough into 2 portions and roll each portion into a rectangle about 12 to 15 inches wide (add more flour as needed).
  • Starting at the long end, roll up the dough, pinching the seams well. Repeat with the next roll.
  • Place the loaves on the prepared cookie sheet; cover with a clean dishtowel and let rise another hour.
  • While the loaves are rising, preheat the oven to 400 F. Place a pie plate on the lower rack of the oven and add about 1 inch of boiling water. Place the pan with the dough on the middle rack and bake the bread for 15 minutes.
  • Lower the heat to 350 F and bake for another 25 minutes until golden brown.
  • About 5 minutes before the loaves are done, mix the egg white with the cold water in a small bowl and brush the loaves with the egg wash .
  • Once baked, remove from the oven and let cool.
  • Serve and enjoy.

  • Place water, yeast and flour in bread machine pan and select the "dough" cycle. Allow to mix about 5 minutes using small spatula to carefully push flour stuck in the corners into the mixing area. Unplug machine and let stand at room temperature over night or about 8 hours. Do not leave over 16 hours.
  • Restart dough cycle. Check dough after 5-10 minutes of mixing. If necessary, add additional flour 1 tablespoon at a time to form a smooth but slightly tacky ball or water if dough is too dry and bounces against the sides.
  • When dough cycle ends, allow dough to continue to rise in machine for at least 30 minutes (or more if ambient temperature is cool) until double in size. If you are new to bread machines, see Six Bread Machine Tips for Beginners for more help with this step.

EASY, CRUSTY BREAD MACHINE SANDWICH ROLLS
easy-crusty-bread-machine-sandwich-rolls image
This is a family favorite roll recipe, right up there with sourdough rolls. There aren’t too many ingredients and the dough rises beautifully, especially with the help of the bread machine. And of course a bread machine just makes life easy. And they are so versatile! Make them as instructed as sandwich rolls…

  • Add all ingredients (except the cornmeal) to the bucket of a bread machine in the order recommended by the manufacturer. Select the DOUGH cycle and press start. Watch the dough for the first few minutes of mixing, adding more water if it is dry and crumbly, and more flour if it is too sticky. The dough should be smooth and slightly sticky to the touch but should completely clear the sides and bottom of the bread machine bucket. Allow the cycle to finish.
  • Prepare a baking sheet with parchment paper and dust cornmeal on top. Remove the dough when the machine beeps and cut into eighths with a sharp knife. (It is easiest to divide into half, then quarters, etc.). Gently shape into rolls by pulling down the bottoms of the dough to smooth out the tops.
  • Dust flour on top of the rolls and rub in. Place the rolls on the baking sheet and cover with heavily greased plastic wrap. Place the baking sheet in a warm place for the rolls to rise, until they are very puffy, about 45 minutes. Towards the end of the rising time, preheat your oven to 425° with a rimmed metal baking sheet on a lower rack.
  • When the oven is hot, pour 1 cup of water on the baking sheet to create steam. Immediately place the rolls inside. Bake for 15-19 minutes until golden brown. Remove and cool on a wire rack. Serve warm as dinner rolls or slice when cool for sandwiches. Eat within 2 days or freeze.

CRUSTY EUROPEAN-STYLE HARD ROLLS | KING ARTHUR BAKING

From kingarthurbaking.com
  • To make the starter: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Mix the starter ingredients together until smooth, cover, and let rest at room temperature overnight.
  • Combine all of the dough ingredients and mix and knead them together — by hand, mixer or bread machine — until you've made a soft, somewhat smooth dough; it should be cohesive, but the surface may still be a bit rough.
  • Allow the dough to rise, covered, for 3 hours, gently deflating it and turning it over after 1 hour, and again after 2 hours.
  • Turn the dough out onto a lightly greased work surface. Divide it into 12 pieces, shape the pieces into balls, and firm them up by rolling them under your lightly cupped fingers.
  • Place the rolls on a parchment-lined baking sheet, cover them, and let them rise for 1 to 2 hours, until they're puffy, though not doubled in size. They'll flatten out a bit as they rise; that's OK.
  • Cover the rolls, and refrigerate them for 2 to 3 hours. Towards the end of the rolls' chill, preheat the oven to 425°F.
  • Whisk together the egg white and water until frothy. Remove the rolls from the refrigerator, and brush them with the wash; you won't use it all up. Again, don't be discouraged if the rolls seem a bit flat; they'll pick up when they hit the oven's heat.
  • Bake the rolls for 20 to 25 minutes, until they're a deep golden brown. Remove them from the oven, and cool on a rack. Or, for best crunch, open the oven door, and allow the rolls to cool in the turned-off, open-door oven.
