EASY MOJITOS
It's hard to find mojitos at any of the restaurants in the small town I'm stationed in, and when I tried to make my own using club soda, they never seemed to turn out right. Using lemon-lime soda also cuts down on the amount of sugar usually used.

- Place mint leaves, lime slice, and sugar in bottom of a glass and muddle with a spoon until mint is crushed. Fill glass with ice cubes. Pour rum and soda over the ice; stir.

CUBAN MOJITOS
A Real Cuban Mojito Recipe straight from my trip to Cuba. Learn the secret ingredient in these famous Cuban cocktails and what makes them authentic!

- In each glass: add 2 teaspoons of white cane sugar and the juice of half a lime. In Cuba, they don't place the lime into the glass, just the lime juice!
- Place one long mint stem into each glass and simply muddle (push down and twist) the bottom of the stem only NOT THE MINT LEAVES into the sugar and lime juice. Two reasons for this: one you don't get a strong bitter taste when you over-muddle the leaves, and they stay pretty and green not brown and bruised. This tip came from the bartenders we met on our trip in Cuba and was confirmed with my good friend Abel who is a Cuban travel guide, and trust me, he knows a thing or two about mojitos!
- Next, add 1 shot white rum, 3 drops aromatic bitters.
- Add few ice cubes, in Cuba they don't add lots of ice because it is not commonly used, top with a splash of sparkling water, add mint garnish, mix, and sip away!

CUBAN MOJITO
Steps:
- In 4 highball glasses, add 4 mint leaves, 4 pieces of lime, and 2 teaspoons sugar to each glass. Muddle in the bottom of the glass using a muddler or a wooden spoon. Add ice to each glass, top with the seltzer water, and stir. Add 1-ounce rum to each glass, if desired.
CUBAN MOJITOS
My DH and I had these for the first time while in Puerta Rico. Be sure to make fresh and not use a bottled mix. Addictive!

- Add rum, lime juice and finish with a splash of club soda. Add ice and serve.

- Place the mint leaves into a long mojito glass (often called a "collins" glass) and squeeze the juice from a cut lime over it. You'll want about two ounces of lime juice, so it may not require all of the juice from a single lime.
- Add the powdered sugar, then gently smash the mint into the lime juice and sugar with a muddler (a long wooden device *pictured on the website*, though you can also use the back of a fork or spoon if one isn't available).
- Add ice (preferably crushed) then add the rum and stir, and top off with the club soda (you can also stir the club soda in as per your taste). Garnish with a mint sprig.
THE CUBAN MOJITO
This is the recipe straight from Cuba! A great summertime/anytime drink! A real pick-me-up! I like mine with 1 fresh lime wedge. It will only take about a minute or 2.

Steps:
- Add sugar and lime juice into a tall glass and stir.
- Add mint sprigs and muddle a few seconds (even a wooden dowel will work if you don't have a pestle).
- If you want a fresh lime wedge add now and crush the wedge with the pestle.
- Add ice cubes.
- Pour in the rum.
- Add about 6 dashes of bitters.
- Pour in the club soda (watch, the soda will fizz over the top if you're not carefull).
- Stir with a straw or swizzle stick. A straw might be preferable to keep from sucking up the mint leaves that float at the top.
- Stir as needed when drinking.

- By the Glass: Place sugar in a food processor and pulse until it reaches a super-fine but not powdery consistency then add it to the bottom of the glass. Gently press together the limes & sugar. Bruise the mint leaves by clapping them between your palms, rub them on the rim of the glass and drop them in. Next, half fill the glass with crushed ice, add the rum & stir. Top up with crushed ice, a splash of soda and a sprig of mint.
- By the Pitcher: Make a simple syrup by heating sugar and water until completely dissolved. Set aside to cool. Into the pitcher add fresh mint and bruise it with a wooden spoon or rubber spatula so it becomes fragrant releasing its essential oils. Next, add lime juice and rum. Add simple syrup and stir to combine. Pour drink mix over ice filling the glass 2/3 full and then topping with club soda, soda water, or lemon-lime soda.
