SALISBURY STEAK
Salisbury steak is actually named after one J.H. Salisbury, an English physician who prescribed beef back in the nineteenth century the way some doctors dose out Lipitor today. Although the classic is baked, my version is braised and served in a pan sauce enriched with my secret weapon: milk powder. This recipe first appeared in EveryDayCook. Photo by Lynne Calamia

Steps:
- Whisk the flour and milk powder together in a small bowl.
- Divide the beef into 4 oval patties approximately 3 by 4 inches. Season both sides with the salt and dredge in the flour mixture. Set on a wire rack to rest at room temp.This is to keep the surface of the meat as dry as possible.
- Heat a large heavy saute pan over medium-high heat and saute the diced onion in 2 teaspoons of the clarified butter. When the onion is brown and soft, invite the mushrooms to the pan and cook until the mushrooms brown and reduce by half.
- Transfer the mushroom mixture to a plate and add the remaining 1 tablespoon clarified butter to the pan. Once melted, add the patties and cook for 4 minutes on the first side.
- Meanwhile, whisk together the milk, red wine, and beef flavor packet in a separate bowl.
- Flip the patties and cook for 2 minutes on the second side. Add the mushroom mixture back to the pan, distributing it evenly around the beef patties.
- Pour in the milk mixture, cover, reduce the heat to medium, and simmer for 10 minutes to thicken the sauce.
COUNTRY STYLE STEAK

- Preheat the oven to 300 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Dredge in the flour again and set aside.
- Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil. Return the steaks to the pot and make sure they are all submerged in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

- Place oven rack in lower middle position and preheat to 250°F Meanwhile, stir together flour, salt, and black pepper on a large plate. Dredge both sides of each cube steak in flour mixture, shaking off excess.
- Add one tablespoon each of oil and butter to Dutch oven and place over medium high heat. When oil is shimmering, add two cube steaks. Cook until golden brown, about four minutes on each side. Remove cube steaks to a plate and set aside. Repeat with remaining two cube steaks, adding more oil and butter if necessary.
- Carefully pour out any fat left in Dutch oven, then add remaining butter and oil. Turn heat to medium-high, and when oil shimmers, add onion, garlic, and mushrooms. Cook, stirring frequently, until onion is caramelized, about three minutes. Add wine. Using wooden spatula, scrape up any browned bits from bottom of pan.
- Add Worcestershire sauce, mustard, and stock. Stir well, then add cube steaks, nestling them into sauce as much as possible. Cover dutch oven and place on lower-middle rack of oven. Cook until very tender, about 25 minutes. Serve with mashed potatoes.

CHEF JOHN'S SALISBURY STEAK
When I was a kid, we didn't have smartphones or the internet, all we had was a TV. But we didn't care because as we watched, we got to enjoy a little something called a "TV dinner." The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

Steps:
- Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
- Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.
- While the meat is resting, melt 2 tablespoons butter in a large nonstick pan over high heat; add mushrooms, onions, and a pinch of salt. Saute, stirring occasionally, until very nicely browned, 5 to 8 minutes. Reduce heat to medium and add flour. Cook and stir for 3 minutes.
- Stir in ketchup, Worcestershire sauce, and beef broth; increase heat to high. Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
- Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
- Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.
