CUCINA CUCINA FOCACCIA BREAD
This comes courtesy of Daniel, a chef for the Cucina Cucina restaurant chain. I asked him for the recipe for their focaccia bread and these are his directions. To infuse the olive oil, just heat some oil and chopped garlic in a saucepan for about five minutes, then let cool, strain through a cheesecloth and use.

Steps:
- Split the dough into 5 or 7 ounce balls and roll out very thin-- to 10 inches if you are using 5 ounces of dough and 13 inches for a 7 ounce ball.
- Brush with the olive oil, then spread the olives and a bit of salt over the skin.
- Sprinkle a baking sheet with cornmeal and bake for about 10 minutes in a 400 F oven or until lightly browned.
FOCACCIA CLOUD BREAD
If you're looking for an easy grain-free bread that is packed with protein, try this simple recipe for cloud bread. With the tomatoes, Parm and basil it makes a great side dish. Omit them and you have bread for deli sandwiches and hamburgers.

- Preheat an oven to 350 degrees F. Line a quarter baking sheet with nonstick foil, then generously oil the bottom and sides of the pan with oil. Set aside.
- Beat the egg whites, cream of tartar and salt in a large bowl with an electric mixer on high speed until the mixture becomes shiny and stiff peaks form, about 2 minutes. Beat together the egg yolks, garlic, cream cheese and agave nectar in a separate large bowl on medium speed until completely combined and smooth, 2 to 3 minutes (the mixture may appear broken but it will come together after a few minutes). Gently fold the egg whites into the egg yolk mixture until combined, making sure not to deflate the egg whites and keeping the mixture as light and airy as possible.
- Pour the batter into the prepared baking sheet and top with the sliced tomato. Bake, rotating the pan halfway through, until the top is deep golden brown and the bread bounces back when touched, about 20 minutes. (See Cook's Note.)
- Cool completely on a wire rack and store in an airtight container overnight. Before serving, drizzle with oil and sprinkle with flaky sea salt, the basil leaves and grated Parmesan; cut into squares.

FOCACCIA BREAD

- Place yeast, flour, salt sugar and rosemary in mixer with bread hook attachment. Make sure that salt is separated by flour. Start mixer on 1st speed to combine dry ingredients. Then, gradually add water, and then add olive oil. Stop mixer to check dough. All the flour should be incorporated. Mix more if necessary. Allow dough to rise again until it has doubled in size (about 30 to 40 minutes). Punch down dough with your hands. Roll dough out with a rolling pin so that it fits the size of the sheet pan, and is about 3/4 inch thick. Lightly oil top of dough with olive oil. Let dough rise again for about 20 minutes. Preheat oven to 425 degrees. Press dimples into dough with fingers and sprinkle with kosher salt. Bake until done (about 20 to 30 minutes or golden brown).
FOCACCIA BREAD
This is a nice focaccia recipe. I don't always put all the toppings on, and often add toppings depending on what I have around and what I'm craving.

Steps:
- In the bowl of a standing mixer fitted with a dough hook, proof the yeast by combining it with the warm water and sugar.
- Stir gently to dissolve.
- Let stand 3 minutes until foam appears.
- Turn mixer on low and slowly add the flour to the bowl.
- Dissolve salt in 2 tablespoons of water and add it to the mixture.
- Pour in 1/4 cup olive oil.
- When the dough starts to come together, increase the speed to medium.
- Stop the machine periodically to scrape the dough off the hook.
- Mix until the dough is smooth and elastic, about 10 minutes, adding flour as necessary.
- Turn the dough out onto a work surface and fold over itself a few times.
- Form the dough into a round and place in an oiled bowl, turn to coat the entire ball with oil so it doesn't form a skin.
- Cover with plastic wrap or damp towel and let rise over a gas pilot light on the stovetop or other warm place until doubled in size, about 45 minutes.
- Coat a sheet pan with a little olive oil and corn meal.
- Once the dough is doubled and domed, turn it out onto the counter.
- Roll and stretch the dough out to an oblong shape about 1/2-inch thick.
- Lay the flattened dough on the pan and cover with plastic wrap.
- Let rest for 15 minutes.
- In the meantime, coat a small saute pan with olive oil, add the onion, and cook over low heat for 15 minutes until the onions caramelize.
- Preheat oven to 400 degrees F.
- Uncover the dough and dimple with your fingertips.
- Brush the surface with more olive oil and then add caramelized onions, garlic, olives, cheese, salt, pepper, and rosemary.
- Bake on the bottom rack for 15 to 20 minutes.

HOMEMADE FOCACCIA BREAD
This focaccia bread is really yummy, and will taste great right out of the oven.

- Combine 1 cup flour, sugar, salt, and yeast. Mix well. Heat water and vegetable oil until warm, and add to yeast mixture along with the egg. Blend with an electric mixer at low speed until moistened. Beat for 2 additional minutes. Stir in 1 3/4 cup flour while beating, until dough pulls away from side of bowl.
- Knead in 3/4 cup flour on floured surface. Cover dough with a bowl, and let sit for 5 minutes. Place dough on a greased baking sheet. Roll out to 12 inch circle. Cover with greased plastic wrap and a cloth towel. Place in a warm place for 30 minutes.
- Uncover dough, and poke holes in it with a spoon handle at 1 inch intervals. Drizzle olive oil on dough, and sprinkle with crushed rosemary.
- Bake at 400 degrees F (205 degrees C) for 17 to 27 minutes, until just golden. Remove from baking sheet, and cool on rack.

FANTASTIC FOCACCIA BREAD

- In a large bowl, dissolve honey and yeast in warm water. Let stand until creamy, about 10 minutes.
- Add 1 cup flour, salt, and 3 tablespoons olive oil to the yeast mixture. Stir until combined and then work in the last cup of flour. Knead the dough until smooth, elastic, and soft, about 7 minutes. Add only enough flour to keep the dough from being sticky. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough and turn it out onto a lightly floured surface. Roll out the dough into a rectangle, about 1/2 inch thick. Place in greased 9x13 inch pan or baking sheet. Cover and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
- Poke dimples in the bread and drizzle 1 tablespoon of the olive oil on top. Bake at 400 degrees for 15 minutes.

- To make focaccia, first gently combine the flour with the semolina. Dissolve the yeast in 3/4 cup water at room temperature. Combine the flour with 2 tsp sugar, then begin kneading together, adding the yeast and water mixture a little at a time; next, add the milk, 1/4 cup oil, and finally 2 tsp fine salt.
- Form into a ball, then transfer to a bowl, cover with a moist towel, and set aside to rise for at least 1 hour.
- Grease a rectangular baking tray with an oil and water emulsion. Stretch out the dough over the tray, press down with your fingers to form small indentations, then grease the surface with more oil and water emulsion. Cover with a moist towel and set aside for 30 minutes to rise.
- Sprinkle with coarse salt, brush with more emulsion if necessary, then bake for 20-25 minutes at 320°F.
