4 tablespoons plain yogurt

1 teaspoon chopped fresh mint
1 teaspoon chopped fresh thyme
1/2 teaspoon chopped fresh rosemary
Toasted baguette slices
Assorted raw vegetables: carrots, red bell peppers, cauliflower, English cucumber, zucchini etc.

Steps:

  • Blend goat cheese, oil and yogurt in processor until smooth. Add herbs and season dip to taste with salt and pepper. Cover and refrigerate about 4 hours. Serve dip with toasted baguette slices and raw vegetables.

3/4 cup cucumber juice (see recipe)
1 small cucumber, peeled, seeded and cut into small dice
8 radishes, trimmed and cut into small dice
2 scallions, green part only, thinly sliced
1 tablespoon chopped fresh mint
1 teaspoon salt
Freshly ground pepper to taste

Steps:

  • Place the goat cheese in a medium-size mixing bowl. Gradually whisk in the cucumber juice until smooth. Stir in the diced cucumber, radishes, scallions and mint. Season with the salt and pepper. Refrigerate until cold. Use as a dip for vegetables or as a dressing for salads and sandwiches.

1 seedless cucumber, peeled, seeded, and chopped fine (about 1 1/2 cups)
8 ounces soft mild goat cheese (about 1 cup), at room temperature
1 1/2 teaspoons freshly grated lemon zest
1 1/2 teaspoons fresh lemon juice
2 teaspoons finely chopped fresh tarragon leaves
2 tablespoons finely chopped red onion
1/2 teaspoon freshly ground black pepper
Accompaniment: toasted French bread slices or crackers

Steps:

  • In a food processor purée 1/2 cup cucumber with goat cheese, zest, and lemon juice until almost smooth. In a bowl stir together cucumber mixture, remaining cucumber, tarragon, 1 tablespoon onion, and pepper. Spread may be made 2 days ahead and chilled, covered. Let spread soften and stir it before serving. Sprinkle spread with remaining tablespoon onion.
  • Serve spread with toasts or crackers.

4 tablespoons goat cheese (cream cheese)
3 tablespoons cream cheese with chives
1 teaspoon light sesame oil
1 tablespoon fresh chives, snipped
6 cherry tomatoes, chopped (I leave the seeds in for moisture, but you may deseed them, too)
1/4 cucumber, deseeded and finely diced
fresh ground pepper

Steps:

  • In a bowl stir together goats cheese and cream cheese with oil. Add cucumber, chives and tomatoes and mix well. If you have deseeded your tomatoes you might need to add a little milk to reach the desired consistency.
  • Season with pepper to taste.
  • Serve with crackers or veggies of your choice.

5 1/2 ounces soft mild goat cheese (such as Montrachet)
2 tablespoons olive oil
3 tablespoons chopped radishes
2 tablespoons chopped green onion tops
1/2 pound green beans, trimmed
1 15-ounce can baby corn, drained
1 radish bunch, tops left on
French bread baguette slices
Additional chopped radishes
Additional chopped green onion tops

Steps:

  • Blend cheese, oil and generous amount of pepper in processor until smooth. Add 3 tablespoons chopped radishes and 2 tablespoons chopped green onion tops and just blend in. Transfer to bowl. Blanch green beans in large pot of boiling salted water until crisp-tender. Drain. Rinse with cold water. Drain well and pat dry. (Dip and beans can be prepared 1 day ahead. Cover separately and refrigerate.)
  • Place dip in center of platter. Surround with green beans, corn, whole radishes and bread. Sprinkle dip with additional chopped radishes and onions.

1 tablespoon white-wine vinegar
1/4 teaspoon coarse salt
Freshly ground pepper
1/4 teaspoon sugar

1 endive, leaves separated
1 bunch radishes, halved if large

Steps:

  • Blend goat cheese, ricotta, vinegar, salt, a pinch of pepper, the sugar, and oil in a food processor or blender until smooth. Transfer dip to a serving bowl; season with pepper. Serve with endive and radishes.

Creamy Goat Cheese and Cucumber Sandwich image

A creamy goat cheese and cottage cheese blend provides satisfying and comforting flavor. I use sumac to bump up the already satisfying and comforting flavor of the creamy goat cheese and cottage cheese blend that blankets cucumbers, celery and dill. My first choice for bread is pumpernickel, but black bread or whole wheat country bread are also good.

1 ounce goat cheese
1/4 cup (1 ounce) low-fat cottage cheese
1/2 tablespoon plain low-fat yogurt (more if needed)
1/4 teaspoon sumac (to taste)
2 slices pumpernickel, black bread or whole wheat country bread
Chopped fresh dill
1/2 tender celery stick from the heart, sliced very thin on the diagonal
1/2 Persian cucumber or 1/4 European cucumber, sliced very thin on the diagonal
Salt and freshly ground pepper to taste
3 walnut halves (1 1/2 whole walnuts), finely chopped

Steps:

  • In a mini-processor (or if multiplying the recipe, in a food processor fitted with the steel blade), blend together the goat cheese, cottage cheese and yogurt until smooth. Add the sumac and mix together.
  • Spread half the cheese mixture on one slice of the bread. Sprinkle with dill. Top with a layer of thinly sliced celery. Top the celery with a layer of cucumber slices. Season if desired with salt and pepper and sprinkle on more dill. Spread the remaining cheese over the top slice of bread and sprinkle the walnuts over the cream so that they stick. Reverse the top slice onto the cucumber layer, press the sandwich gently (not too hard or the cream will ooze out), cut in half and serve.
